Recipe 1. Green beans in a frying pan with cauliflower

Ingredients:

  • 250 grams of green beans;
  • 250 grams of cauliflower;
  • 1 large tomato;
  • ½ teaspoon salt;

  • water - 50-100 ml.

Cooking:

1. Cut the tomato into small slices. If using fresh cabbage and beans, trim the tails off the beans.

But eating legumes is very often associated with unpleasant consequences in the form of bloating. But in fact, the cause of increased gas formation is not the beans themselves, but their improper preparation. Beans contain complex sugars that complicate the digestion process and cause discomfort. Therefore, when cooking beans, you should not skip the preparatory stage - soaking. In addition to the breakdown of oligosaccharides, this method helps to cope with other difficulties:

  • cooking time is significantly reduced;
  • harmful substances contained in the bean shell pass into the water;
  • the shell does not burst when cooked;
  • the beans cook evenly;
  • Enzymes are activated that promote better digestion;
  • vitamins and minerals are preserved, which disintegrate if cooked for too long.

Cold soaking method


Soaking beans before cooking can be done using a cold or hot method. With cold soaking, the process takes longer, but allows you to retain maximum nutrients.

The soaking procedure includes several simple steps:

  1. The beans must be sorted, getting rid of all damaged and unripe seeds.
  2. Wash under running water.
  3. Pour in enough cold water, taking into account that the beans swell very much and double in size. If some beans float to the top, it is better to remove them; they will still not be cooked.
  4. Leave for 10-12 hours for swelling.
  5. During this time, it is recommended to change the water several times.

The water in which the beans were soaked must be drained and then the seeds must be washed again.

Hot soaking method


This method can be used when there is no time for long soaking. However, it is worth considering that with quick soaking, the beans do not fully reveal their taste, and when cooked, the skin may crack.

Before cooking beans using the hot soaking method, you must:

  1. Sort the beans and rinse under running water.
  2. Place the bean seeds in a saucepan and add hot water in a ratio of 1:5.
  3. Bring to a boil over high heat and simmer for a couple of minutes.
  4. Leave covered for at least 1 hour.
  5. Drain the water and use the beans for further cooking.

Adding 1 teaspoon of baking soda during the soaking process will significantly reduce the cooking time.

Recipe 3. Green beans with mushrooms.

Ingredients:

  • 350 grams of green beans;
  • 350 grams of champignons or other mushrooms;
  • ½ small onion;
  • vegetable oil - 1-2 tablespoons.

Cooking process:

One of the most popular dishes with worldwide fame is bean soup. Depending on the region of residence and national characteristics, different nationalities prepare their own version of bean soup. Recipes may differ in the degree of spiciness, the amount of spices and the composition of ingredients. In any version, bean soup will be tasty and healthy.

Bean soup recipe

Before you prepare bean soup, you need to stock up on the following ingredients:

  • white beans – 180 g;
  • onions – 2 pcs.;
  • carrots – 2 pcs.;
  • parsley root – 1 pc.;
  • clove seeds – 2 pcs.;
  • potatoes – 220 g;
  • vegetable oil – 30 ml;
  • black peppercorns – 8 pcs.;
  • salt - to taste;
  • spices (ground black pepper, coriander, thyme) - to taste;
  • bay leaf – 1 pc.;
  • parsley - 1 bunch.

Step-by-step preparation:

  1. The beans should be sorted, washed and soaked in cold water for 12 hours.

  2. After the beans have swollen well, the water must be drained and the beans rinsed again. After this, pour fresh water over the bean seeds and boil until tender. Along with the beans, add parsley roots, carrots, and an onion stuffed with clove seeds to the pan. When cooking beans, foam may form that must be skimmed off.
  3. When the beans are cooked, remove the vegetables and drain the water.

  4. Saute finely chopped onion in a frying pan, then add chopped carrots and simmer for 5 minutes.

  5. Cut the potatoes, put them in boiling water and cook for 20 minutes.

  6. Then add beans, sautéed vegetables, salt and spices. Cook the soup for another 10 minutes.

  • medium tomatoes - 2-3 pieces;

  • spices to taste;

  • 100 ml water.

How to cook:

1. If you use fresh green beans, they need to be cleaned of tails and rough parts and chopped.

Ingredients:

  • 250 g mussels;
  • 300 g green beans (frozen);
  • 1 red salad onion;
  • 1 tbsp each lemon juice and soy sauce;
  • 1-2 cloves of garlic;
  • a little salt and ground black pepper;
  • 2-3 tbsp. olive oil;
  • 1 tbsp. sesame seeds;

  • Thaw the seafood and beans, peel the sweet onion and cut into half rings.
  • We thoroughly wash each mussel to remove foreign impurities (sand, algae, shell fragments and other debris), and place it on a layer of paper towels to dry.
  • Fry the red onion in hot oil until soft.
