- Garlic – 1 clove
- Spices, salt - to taste
For the sauce:
- Olive oil – 80 ml
- Lemon juice – 3 tbsp. l
- Ready mustard – 1.5 tsp
- Egg yolks (boiled) – 2 pcs.
- Garlic – 1 clove
- Salt, pepper - to taste
Preparation:
- Wash the chicken fillet and cut into cubes. Salt and sprinkle with your favorite spices. Set aside.
- Cut off the crust from the bread and cut the flesh into cubes. Place in a greased frying pan and quickly fry. You can lightly add salt and squeeze a clove of garlic so that the croutons acquire a light garlic aroma.

- Eggs – 3 pcs.
- Olive oil – 180 ml
- Parmesan cheese – 70 g
- Romaine lettuce leaves - 150 g
- Lemon juice – 1 tbsp. l.
- Garlic – 2 cloves
- Mustard – 1 tsp.
- Anchovies in oil – 2-3 fillets
- Loaf – 150 g
- Cherry tomatoes – 6-8 pcs.
Cooking method:
1. For the sauce, take 3 egg yolks and add 1 full teaspoon of mustard to them, pour in lemon juice. Let's start whisking everything up.
2. While whipping, begin to slowly pour in olive oil. The consistency of the mixture should be similar to thick, heavy cream.
The more oil we add, the thicker our sauce will become.
3. Rub about 50 g of parmesan into the egg-butter mixture and mix everything again.
4. Next, take garlic and anchovies, these ingredients must be finely chopped, one might even say, turned into a paste. Add everything to the sauce and mix.
5. Cut the loaf into medium cubes and place in a heated, dry frying pan. When a crust begins to form, pour just a little olive oil and grate literally 10 grams of Parmesan. Continue drying the crackers until they brown.
6. To ensure that the chicken is juicy and fried quickly, take the fillet and cut it in half lengthwise. Then we salt the meat, pepper it and pour a drop of oil on it, do this on both sides.
7. Place the fillet in a hot frying pan and fry it on each side for 2-3 minutes. Then remove the chicken from the heat and let it cool.
It is not recommended to turn the meat frequently, as this may cause all the juices to escape from it.
8. Chop the lettuce leaves into large pieces and place them in a bowl. We put cherry tomatoes there, cut in half.
