Blackberry jelly
To prepare you will need:
- blackberries (300 g);
- water (0.75 l);
- gelatin (20 g);
- honey (3 teaspoons);
- sugar (to taste).
Recipe:
- The berries are washed and placed in a blender, poured with water and blended until smooth.
- Strain the resulting mass through a sieve or gauze folded in several layers.
- Gelatin is heated over low heat until dissolved.
- Add honey and mix.
- Add blackberry juice, stir, skim off foam.
- Pour the jelly into a bowl and put it in the refrigerator.
Apple pie with sea buckthorn
This aromatic pastry has a pleasant, slightly sour taste and a pronounced aroma. It has a soft structure and remains fresh for a long time. Therefore, it will arouse some interest among housewives who are wondering what can be done with sea buckthorn. To make this pie you will need:
- a glass of sour cream;
- a pair of eggs;
- a glass of sugar;
- a teaspoon of vanillin and baking powder;
- flour (how much dough will take).
To make the filling, you will have to additionally add to the above list:
- a glass of sea buckthorn;
- 4 ripe apples;
- 3 large spoons of sugar;
- ground cinnamon.
Pre-beaten eggs are combined with sugar and sour cream, not forgetting to work with a mixer. Add all the bulk ingredients to the resulting whitened mass and mix thoroughly. The finished dough is poured into an oiled mold and covered with apple slices. Place washed sea buckthorn on top and sprinkle it with sugar. All this is sent to a hot oven and baked until golden brown.
Banana-blackberry dessert
Required ingredients:
- blackberries (250 g);
- bananas (4 pieces);
- condensed milk (2 tablespoons).
Recipe:
- Cut bananas into circles and place in the freezer for 3 hours until completely frozen.
- Bananas, blackberries and condensed milk are placed in a blender.
- Grind until smooth.
- The finished dessert is transferred into glasses and served to the table.

Blackberries (or gray blackberries , Rubus caesius) are a close relative of raspberries, cloudberries, boneberries and princelings: from a scientific point of view, all types of these plants belong to the same genus - Rubus. Blackberries are sour-sweet, dark in color with a bluish tint. Its taste reminds us of the forest - even though Russian gardeners have been growing blackberries on their plots for a long time.
When studying the perfectly preserved remains of a “Harold woman” who lived in the Iron Age, found in the territory of modern Denmark, it was found that blackberries were part of her diet.
More than 370 varieties of blackberries grow in the Northern Hemisphere from the Balkans to Scandinavia, as well as in North and South America, where its seeds were brought by settlers from the Old World. For centuries, villagers have used the thorny blackberry bush to create hedges. The berries themselves have long been grown in gardens around the world in the same regions where wild blackberries grow. In the USA, blackberries are grown on an industrial scale and exported in hundreds of tons.
Blackberries are a natural “aspirin”; they have a pronounced antipyretic effect. Blackberries contain large amounts of bioflavonoids, which act as antioxidants. Blackberries are useful for colds, diseases of the intestines and digestive system.
Blackberry leaves are brewed as herbal tea. The leaves, flowers and roots of this plant have medicinal properties: they have an astringent, wound-healing, blood purifying effect (they are taken in the form of tinctures, decoctions, as well as fresh and dried).
Types and varieties
In addition to the widespread gray blackberry, several other wild plants of the genus Rubus grow in Russia, which are also commonly called blackberries (their berries are really similar in taste and appearance). These are Caucasian blackberry (Rubus caucasicus), bloody blackberry (Rubus sanguineus), long-fruited blackberry (Rubus dolichocarpus). A special type of blackberry is the bramble, also known as the Nessian blackberry (Rubus nessensis): its dark crimson or black berries are much sweeter than other types of blackberries.
How to cook
Blackberries are usually used to make desserts, sauces, jams, jelly, compotes, marmalade, syrup, juice, and candied fruits. In addition, blackberries make excellent jelly, which requires very little gelatin: the juice of the berries, slightly boiled with sugar, hardens perfectly on its own.
To prepare most blackberry delicacies, it is better to rub the berries through a fine sieve to get rid of the seeds, or, using a very powerful blender, grind them into a homogeneous mass in which the seeds can no longer be felt. From such a mass ground with a blender, after adding sugar and corn starch, a very tasty filling for pies is obtained - only the sides should be quite high, and the dough itself should be dense so that the filling does not leak out and does not burn during baking.
Blackberries can be used to make a sauce for meat dishes or add berries to meat when preparing stews or stir-fries. Blackberries go great with roasted duck breasts or a whole roasted bird.
Spices such as star anise, cloves, cinnamon and allspice are successfully combined with these berries, as well as spicy vegetables - shallots, Crimean onions, garlic and fresh ginger.
In many Balkan countries, wild blackberries are used to make excellent homemade wine - semi-dry, with a bright berry aroma. It makes for very tasty summer cupochons. To do this, you need to add ice to the wine, a little (about 15% of the total volume) sparkling water, as well as fresh berries and fruits, cut into pieces; Determine the quantity and ratio according to your own taste. Blackberry juice, wine and the berries themselves go well with watermelon. In France, blackberry liqueur is very popular, which, just like blackcurrant, is added to white wine or champagne to get the Kir or Kir Royal cocktails. Interestingly, blackberry juice turns red when combined with acids, and blue when combined with alkalis.
Blackberries can be dried, but they will not lose their taste for a long time. Blackberry leaves are brewed as herbal tea.
Season

Curd cookies with blackberries
For preparation:
- blackberry;
- cottage cheese (200 g);
- eggs (2 pieces);
- sugar (100 g);
- vanillin (1 sachet);
- flour (250 g);
- baking powder (1 sachet);
- marzipan glaze.
Recipe:
- Knead the dough from the listed products.
- Divide it into small pieces.
- Cover the baking sheet with paper and place the dough on it.
- Blackberries are placed on top.
- Bake in the oven for half an hour at 180 degrees.

Cake with blackberries and sour cream
It’s not difficult to make a cake with blackberries; we all know the simple technology of decorating cakes with berries.
It is much more difficult to come up with a spectacular neighbor for blackberries, because dark berries are quite capricious. They can ruin the snow-white top of the cake with streaks of juice that looks like ink. Or you can simply make the cake gloomy and unappetizing if you don’t think through the composition. Fortunately, our new chef Anna Bilenko managed to create almost a masterpiece out of ordinary sponge cake and blackberries! However, judge for yourself. Next is the text and photo of the author. Many of us love summer not only for the holiday season, vacations by the sea, country gatherings, but also for the harvest of fruits and berries. Today I want to share with you a recipe for a very tasty, but at the same time very easy to prepare blackberry cake. It looks elegant and very festive. I prepared it for my youngest daughter's birthday. The kids were simply delighted, and the adults also happily ate a piece.
Of course, if a big holiday is planned, the portion can be doubled or even tripled. In principle, any berry is suitable for this cake. The main thing is that it is fresh and intact, because we will use it specifically to decorate the top. To make the cream bright, you can tint it with the juice of the same berry or food coloring. For aroma and pleasant sourness, I used lemon. This fruit is sold in supermarkets all year round, so you won’t have any problems finding it. We will prepare the cake layers in a slow cooker, so the baking process will go smoothly and quickly.

Ingredients
For the cakes:
- eggs - 5 large or 6 small;
- sugar - 1 glass;
- flour - 1.5 cups;
- baking powder - 1 tsp;
- lemon - 1 pc.
Ingredients for cream:
- sour cream - 1 glass;
- sugar or powdered sugar 1.5 tbsp;
- food coloring on the tip of a knife or berry juice - 2 tbsp.
For decoration:
- blackberries - 15-17 pcs, more is possible.
Preparation
Prepare all the necessary ingredients needed to make blackberry cake in a slow cooker.
Separate the whites from the yolks. Beat the whites with a mixer, first at low speed, and then increase the speed. When the whites turn into a stable foam, add sugar one spoon at a time and continue beating.
Turn on the multicooker in the “Baking” mode so that the bowl begins to warm up, then the dough will rise better. Now add the yolks to the whites and sugar. Mix with a mixer.
After this, also gradually add flour mixed with baking powder.
Now you need to wash the lemon, dry it with a towel and grate the zest on a fine grater.
Squeeze the juice of half a lemon into the dough.
Grease a warm multicooker bowl with a piece of butter or margarine. Carefully pour the dough into it. Close the multicooker lid and bake the crust. Since the multicooker was turned on in advance, the remaining time, of course, is not enough for cooking. When the signal about the end of the program sounds, turn the multicooker back to the “Baking” mode. Usually the set time (50 minutes) is not enough to bake the cake, so the period of time that remains after the bowl has warmed up is just the right addition. And one more important point! When baking a biscuit, do not open the multicooker lid. Otherwise the cake may settle.
While the cake is baking, prepare the cream. If you use sour cream from the store, first beat it with a mixer, and then gradually add sugar or powdered sugar. If the sour cream is homemade, immediately add sugar or powder to it, and then whisk, otherwise it may turn into butter.
Add the juice of the second half of a lemon to the finished cream. Place two spoons of cream in a separate bowl.
Add berry juice or food coloring to the remaining cream. Stir. Place both types of cream in the refrigerator.
Remove the finished cake from the multicooker bowl and let it cool. Then cut into two equal parts.
Grease the first cake with colored cream, spreading it well with a spatula.
Cover with the second cake layer. Coat the sides with colored cream as well. Apply pink cream to the top, and then place a spoonful of white cream in the middle and spread it around a little to create a spiral pattern. Also, using white cream, apply white drops around the circumference of the top cake. The sides of the cake can be sprinkled with crushed cookies or grated chocolate.
Place a blackberry on top of each white cream blob. Also decorate the center with blackberries.
Now put the cake in the refrigerator for a couple of hours - and when your guests arrive you will have a delicious dessert ready. Look how cute the cake turned out!
You just want to cut off a piece and enjoy it. And berries come in very handy here!

- Sort the fruits well, get rid of the stalks, and remove any damaged berries.
- Rinse. To do this, fill a large container with water, place the berries in a colander and dip it in a bowl of water. If you rinse blackberries under the tap, they will become wrinkled.
- After the procedure, place the fruits in an enamel container. Add sugar. For 1 kg of blackberries there are 800 g of sugar.
- Place the container on high gas. When the mixture boils, stir it.
- When the mixture begins to simmer evenly, turn the heat to low.
- Bring until thickened, stirring occasionally. The process will take about 3 hours.
