- mayonnaise and salt - according to preference.
Preparation:
- First you need to prepare the vegetables. Boil them until tender and put them in the cold for several hours so that they do not stick to each other after rubbing. Then peel them from skins and all excess and pass through a fine grater. It is advisable to squeeze beets and carrots.
- Chop the onion as finely as possible. Cut the fish into small squares and mix with chopped onion. Boil the eggs until hard, remove the shells and pass through a fine grater.
- Place cling film on a work surface and place the chopped beets on it. Add salt as desired and smooth.
- Layer carrots, potatoes and eggs over the beets. All these layers can be seasoned with salt and mayonnaise to taste. Place chopped fish and onions in the center of the appetizer.
- Carefully wrap the salad into a roll, squeezing the edges. Refrigerate for several hours, and if possible, overnight.
- When serving, decorate and cut into portions.
Advice!
You should not lubricate the beet layer with mayonnaise so that the roll holds its shape.

Preparation:
- First, boil or bake all the vegetables in their skins.
- Pickle the onion. For this, prepare a marinade of water, vinegar, salt and sugar and mix until smooth. Chop the vegetable and immerse it in the liquid.
- Grind the remaining vegetables using a fine grater. It is desirable that they resemble mashed potatoes as much as possible.
- Place lavash on a work surface. Cut the second one into two halves.

Regarding salt, you don’t need to add it here, especially if your fish is too salty.
Step 14. Well, when all the layers are assembled, it’s time to wrap the salad. We do this from the “step” side and very tightly. At the same time, watch the bottom pita bread so that it does not crack.
It’s very convenient when you have cling film. In addition to the fact that it will help you roll the roll neatly, you also won’t have to disturb it by putting it in a bag. However, at the time of the recipe I did not have film, so I had to make do with improvised means.
Step 15. Next we need to let our “Herring under a fur coat” soak. To do this, divide the resulting roll into 2-3 parts and place it in a plastic bag or cling film. Just do it tightly so that condensation does not form in the bag.
