  • 1 beet;
  • 3 potatoes;
  • salt - to taste;
  • 1 fillet of salted herring;
  • ½ onion;
  • several sprigs of dill;
  • 1 teaspoon lemon juice;
  • 1 teaspoon olive oil;
  • a handful of sesame seeds;
  • a few sprigs of parsley.


Boil the beets and potatoes until tender. Grate the beets on a fine grater and squeeze. Dry the boiled potatoes a little and turn them into puree. Mix and salt the vegetables.

Cut the herring and onion into small cubes and mix with chopped dill. Make small cakes from vegetable puree.

Place the fish mixture in the middle of each and form strawberries, bringing the edges together.

Brush them with a mixture of lemon juice and oil. Make berry seeds from sesame seeds, and leaves from parsley.

Cooking steps:

  1. Boil carrots, beets and potatoes until tender.

  8. Distribute the beets along the entire length of the film, leaving a few centimeters at the edge empty.
  9. Add some salt to the beet ball and press it down a little with your hands.
  10. Place carrots on 2/3 of the beets. Lubricate this ball with mayonnaise.
  11. Now add the potatoes and eggs. Coat the roll with mayonnaise.
  12. Place the herring and onion in a narrow strip in the center.
  13. Now roll the beetroot roll very carefully. The film should not get inside. Securely secure the edges and transfer the dish to the refrigerator for 3-4 hours so that everything is soaked and the roll holds its shape.

From the simplest and most affordable products, you get a puff miracle - beautiful, juicy and tasty.

Initially, a dish with herring and beets appeared at the beginning of the twentieth century in Russia as a hearty snack to accompany vodka, in order to avoid rapid intoxication of customers. During times of total shortage, Herring under a fur coat migrated to the New Year and holiday tables, decorating a variety of homemade preparations, which were the main food “both for the feast and for the world.” Today, when any delights and exotic products have ceased to surprise us, we increasingly want to pamper our loved ones with a familiar and dear salad.

Of course, the choice of prepared herring fillets in stores is huge, but for a salad, barreled, fatty and fleshy herring is best suited, which you need to peel and remove the bones yourself.   • Herring – 2 pcs.
  • Beets – 2 pcs.

  • Mayonnaise – 300-400 gr.

Chop the onion and pour boiling water over it for a couple of minutes, place in a sieve, and rinse with cold water. Place half the onion, half the chopped herring and half the potatoes in an even layer on a flat dish or plate, coat thoroughly with mayonnaise, but not in a thick layer. Next, distribute half the chopped carrots, mayonnaise and repeat the layers from the very beginning, not forgetting to coat with mayonnaise.   • Boiled beets – 4-5 pcs.

  • Boiled carrots – 1-2 pcs.

  • Mayonnaise - to taste.

The salad is prepared similarly to the classic recipe; grated carrots are laid out on a layer of potatoes and smeared with mayonnaise, followed by beets. For variety, try laying out the salad in the shape of a fish, garnishing with mayonnaise and thin strips of vegetables.

Classic herring under a fur coat, but with eggs and apples


  • Herring fillet – 400 gr.
  • Beets – 3 pcs.
  • Carrots – 2 pcs.
  • Potatoes – 3 pcs.
  • Egg – 4 pcs.
  • Onions – 1 pc.
  • Apple – 2 pcs.
  • Apple vinegar – 10 gr.
  • Lemon juice – 5 gr.
  • Mayonnaise – 300-400 gr.

Chop the onion and marinate in a mixture of vinegar and lemon juice for 10 minutes. Boil vegetables and eggs, cool and peel. Place the herring as the bottom layer, onion (drain off the marinade) and potatoes, cut into cubes or grated on a coarse grater. Grease with mayonnaise. Next in order: carrots, mayonnaise, eggs, mayonnaise, grated apple, mayonnaise, beets, mayonnaise. Send the fur coat to the cold. Generously coat with mayonnaise, grate the beets, coat the entire salad with mayonnaise and put in the refrigerator overnight. Before serving, apply a pattern with mayonnaise and garnish with herbs.

Despite the strong traditions in preparing herring under a fur coat, new ingredients are constantly added to recipes - cheese, pear, quail eggs, green onions, and the herring is replaced with smoked fish or squid. The salad is often served in the form of a roll or portioned “fur coats”, all this is acceptable, the main thing is that it is tasty and you want more.

Unique in its versatility, the salad - Herring under a fur coat - is equally good during a family dinner on Wednesday and a Sunday dinner. Boiled vegetables, available all year round, and barrel herring - this is, perhaps, the whole secret of preparing your favorite dish. Carefully roll the food into a tight roll, but do not overdo it so that it does not turn out to be porridge, but the texture of the dish is visible. Place the roll in the refrigerator for several hours, serve by cutting crosswise into pieces 2-2.5 cm thick.

  • Atlantic herring – 400 gr.
  • Boiled beets – 4-5 pcs.
  • Boiled potatoes – 2-3 pcs.
  • Boiled carrots – 2 pcs.
  • Boiled eggs – 3 pcs.
  • Onions – 1-2 pcs.
  • Greens optional
  • Edible gelatin – 20 gr.
  • Mayonnaise to taste.

The originality of this type of salad lies in the consistency of the dish, which will be elastic; all components are a single whole. The secret of the recipe is that you need to mix mayonnaise with gelatin. To do this, first dilute the gelatin with water (according to the instructions on the gelatin package), leave it to swell, heat it, but do not bring it to a boil, cool it and mix it with mayonnaise. Next, cut all the prepared products into small cubes (grate on a coarse grater or a Korean carrot grater, there are many options) and mix each type with gelatin mayonnaise, even herring. You need to lay out the salad in layers in a mold (rectangular, oval, with a hole for a cake or small portion molds - the flight of fancy is not limited), paying attention to the fact that the first laid layer will be on top when serving. Place the completed form in the refrigerator until hardened.

We will need:

Step 1.

We won’t describe it in great detail, everything is the same as in the classic recipe. We start with vegetables and boil them. We also boil the eggs immediately. When ready, remove, cool and peel.

Preparing the ingredients. We clean the herring, leave only the boneless fillets, and cut the middles into pieces.

  • mayonnaise – 0.1 kg.

Cooking steps:

  1. Boil the following ingredients until tender: carrots, beets, potatoes and eggs.
