  • Ice water - about 8 tablespoons
  • Salt - a pinch
  • Butter – 180 grams (frozen)
  • Pumpkin puree – 600 grams
  • Condensed milk – 360 grams
  • Ground cinnamon - teaspoon
  • Eggs – 4 pieces
  • Ground ginger - to taste
  • Ground cloves - to taste
  • Nutmeg - to taste

1. To prepare 600 grams of puree you will need 900 grams of peeled pumpkin. We cut it into small cubes.

8. Lay parchment or foil on top of the dough and place a weight on it in the form of peas or beans so that the base under the pie does not rise in the oven. Heat the oven to 180 degrees. Bake for 12 minutes. Then remove the weight, foil and bake for another 8 minutes.

  • Lemon juice - 1 teaspoon.
  • Ice water - 6 tbsp. spoons
  • Pumpkin puree - 300 gr. or 4 tbsp. heaped spoons.
  • Condensed milk - 200 gr.
  • Chicken egg - 2 pcs.
  • Salt - 1/4 teaspoon.
  • Ground cinnamon - 1/4 teaspoon.
  • Nutmeg (ground) - 1/4 teaspoon.
  • Dried ground ginger - 1/4 teaspoon.
  • Ground cardamom - 1/4 teaspoon.
  • Pumpkin seeds, cinnamon sticks - to taste, to decorate the pie

Cooking method:

  1. Salt the flour and add cold butter. Chop the mixture with a knife.
  2. Add ice water and lemon juice to the mixture.
  3. There is no need to knead the dough, form a ball. Make sure the butter doesn't melt too much. If this happens, cool it in the freezer.
  4. Roll out the cold dough. Form a large circle so that there is enough dough for the pie with sides.
  5. Place the dough in the mold, cover with cling film and refrigerate for an hour.
