Mannik with kefir - 3 delicious classic recipes

Tips and Tricks

  1. Many manna recipes do not contain salt. But it is precisely this that will make the taste of the crumb rich and full, so you can safely add a small pinch to the dough.
  2. If the semolina gathers in lumps and cobwebs are visible in the grain, then most likely there are bugs in it. In the old days, such grains were fried in the sun or dried in the oven. It's better not to do this and just throw away the product.
  3. If you need to replace the ripper with soda, then do not forget to extinguish it. The easiest way is to pour the powder into sour kefir, which is used to prepare manna.
  4. If the cake does not want to jump out of the multicooker container, then there is no need to rush. Let it stand in it for a while, get damp, and then it will pop out more easily. But next time you will need to better lubricate the bowl or cover the bottom with an oiled piece of parchment.
  5. If dried fruits are added to the manna: raisins, dried apricots, prunes, then you can pre-soak them in warm water. This technique will increase the amount of filling and make the manna more juicy and tasty.

Manna is prepared on kefir without eggs in a miracle saucepan - a device called a multicooker. It’s easy to make, and the lack of eggs is not at all an obstacle to obtaining a fluffy structure, because the composition includes a baking powder, which gives the cake the desired consistency. If you need to cope with the task quickly, this recipe will come in handy, because the pie, being very tasty, takes a relatively short time to bake.

Ingredients:

  • kefir, wheat flour, semolina - a glass each;
  • sugar – 250 g;
  • vegetable oil – 0.5 tbsp.;
  • soda – 1 tsp;
  • vanillin - to taste.

Cooking method:

  1. The first step is to soak the semolina in liquid (in our case it is kefir). Shake the mixture and then set aside for 30 minutes (the semolina should swell to make the cake very tender later).
  2. After 30 minutes, add regular sugar along with vanilla to the prepared mixture. Mix well while adding vegetable oil. Finally add the flour sifted through a sieve.
  3. Add baking soda, then stir again. Using a pastry brush, grease the mold with oil; all that remains is to lay out the finished dough. The pie is baked in a slow cooker for 40 minutes, after which it is cooled and served.

Recipe for Mannik with kefir in a slow cooker

Ingredients:

  • 1 glass of fresh kefir or yogurt (the higher the fat content, the better)
  • 2 cups semolina
  • 1 cup of sugar
  • 4 eggs
  • 5 tbsp. sifted wheat flour
  • 2 packets of vanilla sugar
  • 1 packet of ready-made baking powder (not soda!)
  • 70 g butter for dough
  • 30 g butter for greasing the bowl
  • candied fruits, pieces of dried fruit or raisins - optional

Cooking step by step:

It all starts with kefir and semolina. Prepare kefir in advance - it should be at room temperature or even slightly warm (put it in some warm place for half an hour, avoiding direct heat). As soon as it warms up enough, add baking powder and semolina, mix thoroughly and leave there, in a warm place without drafts.

Now we have to wait. Wait until the semolina swells well and the baking powder dissolves. It would be good to mix the base for the future manna from time to time and show a little patience - after all, if you rush and mix all the ingredients at once, the cake will most likely turn out to be quite tough. But that's not what you want, is it?

Therefore, we are waiting. And to brighten up the hardships of waiting, let’s prepare the remaining ingredients.

1. Wash the eggs with warm water, separate the yolks from the whites, beat the yolks or simply grind them with sugar, beat the whites in a separate bowl into a strong fluffy foam.

2. Melt the butter, preferably in a water bath. If you plan to add dried fruits, raisins, candied fruits to the manna, prepare them, wash them and pour boiling water over them for a few minutes, then dry them.

3. Are all the components for further preparation of manna ready? We begin to slowly add them to the dough: first the whipped whites, then vanilla sugar and yolk-sugar mass, then candied fruits and melted butter, and the final chord is a little flour. It is needed to hold the ingredients together (in other words, to prevent the manna from becoming too crumbly).

4. Mix everything very thoroughly, make sure that the dough is more or less homogeneous, without lumps. Grease the multicooker bowl with butter (do not skimp on butter, you can take more than the above thirty grams), pour the dough into the bowl, close the multicooker lid and turn on the “Baking” program for 1 hour.

5. During this time, the manna will be well baked on 3 sides, but the top will remain pale and even slightly moist. To correct this annoying issue, carefully remove the cake using the steaming basket, turn it over and place it back into the bowl in the slow cooker, pale side down.

6. Close the lid and turn on the “Bake” program for another 15-20 minutes (the exact time depends on how crispy you want the crust to be).

That's all. Take the finished manna out of the multicooker and enjoy! You can sprinkle it with powdered sugar, coat it with jam or jam, or even divide it into 2 improvised cake layers, spread it with cream and make a delicious homemade cake from manna.

Bon appetit!

Mannik with milk: unusually tender dough

Many people also like to bake with milk - this method of making semolina pie is just as good. So, it will require:

  • Semolina – 200 g;
  • Milk – 250 ml;
  • Granulated sugar – 250 g;
  • Butter – 50 g;
  • Eggs – 3 pieces;
  • Baking powder – 1.5 teaspoons.

Milk for making semolina pie should be at room temperature. Therefore, if it is chilled, you should reheat it.

The eggs must be beaten together; this can be done using a mixer. Then you need to add heated milk to them and mix again.

In a large container, mix sugar and semolina. Then all you have to do is carefully and slowly begin to pour the mixture of milk and eggs into the dry ingredients, while stirring the mixture. This way, you can achieve a perfectly smooth dough without the formation of dry lumps. You also need to stir in the baking powder at the end. The result should be left for a while until the cereal begins to swell.

The butter should be melted using a water bath. Using it, you can lubricate the entire surface of the multicooker bowl to avoid burning. Then you can distribute the dough of the future manna in a multicooker, setting it to the appropriate cooking mode - “Baking”. Time until the pie is ready is about 40 minutes.

You should wait until it cools down before you take it out. When serving, you can decorate the pie with melted chocolate, condensed milk, as well as berries or nuts.

Pie Decoration

Separately, I would like to say about decorating the manna. After all, thanks to your imagination, you can turn a quick semolina pie into an extraordinary, incomparable dessert. In my recipes I only mentioned powdered sugar. Decorating a pie with it is very quick and convenient. To make it look more interesting, make a stencil like the one in this picture or your own version

But there are many more ways to decorate a manna. It can be grated chocolate, sugar or chocolate glaze.

To prepare a universal soft and delicate glaze, take 3 tablespoons of sour cream, cocoa and sugar in equal parts. Mix in a saucepan, heat, stirring (but do not boil). Then cool and spread over the surface of the pie. Condensed milk is also perfect in combination with fruits (kiwi, oranges and bananas). You can decorate with custard, and on top with patterns of confectionery sprinkles or candied fruits. It also works great with whipped cream and berries, like here.

Manna preparation options

Now, I think you understand how easy it is to make manna in a slow cooker and how long it will take. This simple pie can be prepared with kefir, sour cream, yogurt, snowball, yogurt or milk. All the main ingredients (semolina, sugar, flour, one of the dairy products) are taken in equal parts, add eggs, knead the dough.

You can add nuts and dried fruits, berries, jam or marmalade, chocolate, coconut, poppy seeds, and condensed milk to the dough. Anything you want. Mannik can be baked with or without the addition of wheat flour. It's a matter of taste. I love it this way and that way.

Ancient recipes for semolina pie say that semolina must be soaked in milk or a fermented milk product for half an hour. This way the pie dough becomes softer and softer. Try to do this half an hour before the start of cooking, and then all that remains is to mix all the components of the manna (usually this takes at most 5 minutes). Although you don’t have to do this if you don’t have enough time.

Without the manipulation of soaking, it also turns out quite tasty. The multicooker will take care of all the hassle with baking. It will create the optimal temperature regime, and your pie will be ready in an hour. However, if you don’t turn the pie over to the other side 20 minutes before the end of baking, the top will turn out a little pale. This pallor can be corrected by decorating the manna with one of the decoration methods that you like.

Step 1: prepare semolina.

Pour the semolina into a small bowl and fill it with kefir. Using a tablespoon, mix everything thoroughly until smooth and leave aside for a while. Thanks to this process, the cereal will swell and the manna will turn out great.

Step 2: prepare the flour.

To make the cake tender and tasty, be sure to sift the flour. To do this, pour the components into a sieve in small portions. Now carefully sift the flour over a medium bowl and leave it alone for now. Thanks to this process, there will be no lumps in the dough, and the component itself will become light and airy, as it will be saturated with oxygen.

Step 3: Prepare the butter.

Place the butter on a cutting board and, using a knife, cut the piece into two parts weighing 100 and 20 grams. Transfer the latter to a clean saucer and leave aside to reach room temperature. Grind the first piece into cubes and transfer it to a Turk. Place the container on low heat and, constantly stirring with a tablespoon, bring it to a liquid state. Immediately after this, remove the Turk from the stove and let the component cool to a warm state.

Step 4: prepare the egg-sugar mixture.

Using a knife, break the shells of the eggs, and pour the yolks and whites into a deep bowl. Add sugar here and, using a mixer, beat the ingredients until a homogeneous mass is formed. All is ready!

Step 5: prepare manna with kefir in a slow cooker.

Pour the egg-sugar mixture into a clean medium bowl. Pour melted warm butter here, and also lay out the swollen semolina. Using a tablespoon, mix everything thoroughly until smooth. Now carefully add the sifted flour and baking powder into the bowl. We continue to mix everything with available equipment until we get a thin dough. Grease the bottom and walls of the multicooker pan with soft butter. After this, pour the dough here and level the surface with a tablespoon. Close the appliance with a lid, set the “Baking” mode and cook the pie for 65 minutes. After the allotted time has passed, a corresponding signal will sound, which will warn us that the manna has already browned. Therefore, we completely turn off the multicooker, open the lid and take out the baked goods from there using the steaming basket. At the end, place the pie on a flat serving dish and let it stand for a while to cool slightly.

Step 6: serve manna with kefir in a slow cooker.

Before serving to the dessert table, cut the pie into portions using a knife. But we treat our children and friends to such a delicious and aromatic manna along with tea, coffee, juice, compote or just mineral sweet water. Bon appetit to everyone!

Tips for the recipe:

– to prepare delicious manna, use only the highest grade and finely ground flour. As for semolina, choose cereals only from trusted brands and without lumps in the packaging;

– in order to soak semolina, you can use kefir of any fat content. If you want the manna to turn out “wet”, then choose a dairy product of at least 3.2%;

– before serving, the pie can be decorated with powdered sugar, berries or pieces of fruit;

– there is also a special cream for manna. To prepare it, based on the ingredients indicated in the recipe, you will need 400 grams of sour cream and 200 grams of powdered sugar. All this is whipped in a deep bowl until a thick dense foam or peaks form (depending on the fat content of the first ingredient). Now you can cut the pie lengthwise into 2-3 parts and coat each circle with sour cream

Attention: for maximum pleasure, it is best to let the baked goods sit for at least two hours

The recipe for manna with yogurt in a slow cooker is simple. A huge advantage of such a homemade dish will be the ability to choose the flavors of yogurt: the pie can be made either blueberry or orange, for example. Yogurt gives it a pleasant lactic-sour fruity taste, which is very good for baking. Therefore, the following describes a diagram of how to prepare a yogurt pie at home.

  • any yogurt - 1 tbsp;
  • semolina – 1 tbsp.;

  3. Using a whisk, mix eggs, sugar, butter and baking soda. Then pour the resulting mixture into the semolina. Pass the flour through a sieve and add it there. Mix everything well.

How to bake manna with kefir in a slow cooker

In fact, there is nothing complicated about preparing manna with kefir in a slow cooker. If you follow the step-by-step recipe with photos below, then everything will work out perfectly: the baked goods will turn out very tasty, tender and crumbly, reminiscent of an excellent sponge cake.

We start preparing the pie, as always, by preparing all the necessary ingredients.

  1. If all the necessary products are available, then you can begin preparing the dough without unnecessary delay. First you need to take a large and deep container in which it will be convenient to knead the dough for our future pie. You need to pour all the semolina into the selected bowl.

  1. Next, you will need to fill the semolina with kefir (you can use a fermented milk product with any fat content; this does not fundamentally affect the taste of the finished baked goods). The resulting mass must be thoroughly mixed with a culinary spatula or spoon, after which the mixture must be left for about 20 minutes. During this time, the semolina will stick to most of the kefir and swell. In addition, this technique allows you to achieve friability and tenderness, avoiding the presence of grains in the dough.

  1. When the semolina in the preparation for the future pie increases slightly in size, you will need to add fresh chicken eggs to this composition. There is no need to separate the yolk from the white and beat them separately in this photo recipe if you follow it step by step.

  1. Then you need to melt the butter and send it to the preparation. The dough will need to be mixed thoroughly.

On a note! You can melt butter in any convenient way. Most often, a water bath is used for this. But you can do it even simpler and heat the product at low power in the microwave.

  1. Then you will need to add granulated sugar to the semolina dough.

  1. Following the classic step-by-step recipe for preparing manna with kefir in a slow cooker, next you need to sift the flour. It should also be added to the dough; you don’t have to add the dry ingredient in parts, but add the entire required volume at once.

  1. Next, you need to add baking powder into the mixture. At the same stage of preparing the baking dough, you should add vanillin to the composition.

Note! Try not to overdo it with flavoring, especially if you are using pure vanilla. If you add too much of this powder, the finished pie will be bitter, and we don’t want that at all.

So the flavoring literally on the tip of the knife will be quite sufficient.

  1. All that remains is to thoroughly mix the composition, after which you can pour it into the multicooker bowl. If you are not one hundred percent sure that the cake in the chosen container will not burn, you should first generously grease the bottom and walls of the dish with butter. Place the dough in the slow cooker. You will need to set the “Baking” mode. The timer needs to be set for 40 minutes, but you should check the readiness of the manna with a toothpick.

  1. The finished cake should be sprinkled with powdered sugar.

Ready! Enjoy your tea! As you can see, mastering such a simple recipe for manna, if you follow the recommendations with photos step by step, is a piece of cake!

Since the times of ancient Rus', the knowledge of baking manna has not been lost, which fits into different categories - this is a celebratory cake, a family pie, and a divinely tender sponge cake, depending on what you fill it with. In previous centuries, semolina in Rus' became a publicly available and widespread food product, which is varietal ground wheat.

It was added to liquid dishes as a filling, semolina dumplings and porridge were made. Later they cooked sweet Guryev porridges, made soufflés, puddings, and mousses. The advantage of semolina lies in its instant cooking and low fiber content.

Mannik on kefir without flour in a slow cooker with coconut flakes

I really like this version of manna because of its interesting (slightly loose) dough structure, which is obtained by combining semolina and the same amount of coconut flakes.

The result is a tender, bright, very juicy coconut pie. Try it, you won’t regret it. This manna recipe is one of my favorites.

Time required: 60 minutes. Servings: 10. Kitchen utensils: 2 bowls; whisk or mixer; multicooker; oven mitts; cutting board. Required Products

  • 200 grams of semolina;
  • 200 grams of coconut flakes;
  • 200 grams of kefir;
  • 150-170 grams of sugar;
  • 2 eggs;
  • a teaspoon of baking powder;
  • 120 grams of sunflower oil;
  • a teaspoon of salt;
  • powdered sugar and coconut flakes for decoration (50 grams each).

Cooking sequence

  1. Pour sugar into a bowl, beat in eggs, add kefir and salt, pour in vegetable oil, then add coconut flakes and mix well.
  2. While stirring with a broom, add semolina. Adjust the amount of semolina by eye. There should be enough of it so that the dough has the consistency of thin sour cream. Add baking powder, mix well, and our dough is ready to bake.
  3. Grease the multicooker bowl with oil and transfer the dough into the bowl.
  4. Set the baking time to 50 minutes in the “Bake” mode.

Place it back into the multicooker bowl with the other side. And place in the slow cooker for another 20 minutes until the end of baking.
  6. Remove the prepared semolina from the multicooker bowl and decorate with powdered sugar, coconut flakes and cocoa powder. Our delicious, aromatic semolina pie with coconut flakes is ready to serve. It can be served either warm or completely cooled.

The eggs must be mixed in a separate bowl by hand or using a mixer. Then you can add granulated sugar and repeat beating. Then you need to add a mixture of sour cream with semolina and flour, kneading the mixture thoroughly. At the end, it is important not to forget to stir in the baking powder.
