Traditional cherry pie - basic baking rules

When you gather the whole family around the table, you always want to surprise and delight your household with something special, for example, you can prepare a wonderful dessert with a tasty and simple filling - cherry pie.

This summer berry is widely used by housewives in the kitchen - it is used to make compotes, preserves and jams, and used as a base for tinctures or liqueurs. Cherries are also indispensable during baking, because they make a delicious filling for pies and rolls.

Preparing a dessert like a simple cherry pie won't take much of your time. In less than an hour, this miracle will be on your table, the aroma of which will quickly spread throughout the house, inviting your loved ones for tea. How to prepare such a dessert?

In this case, we choose the simplest dough, which should not stand for several hours in a cold place. Its ingredients are traditional - flour, sand, eggs, and optionally kefir, butter or sour cream.

It is better to choose well-ripened and juicy berries for baking. They need to be prepared - rinse well, remove the seeds and let dry.

Lovers of exquisite tastes and aromas can use additives such as cinnamon, lemon juice or liqueur; cherries go well with them.

So, a traditional and incredibly tasty cherry pie is prepared as follows, we need:

  • 0.5 kg baking flour;
  • 400 g of cherries, from which the pits have already been removed;
  • 1 cup granulated sugar;
  • 200 g (glass) sour cream;
  • 4 eggs;
  • 1 tsp baking powder;
  • 1 pack vanilla sugar;
  • salt on the tip of a teaspoon.

Prepare cherry pie step by step:

  1. Mix 3 eggs with a sprinkle of prepared sugar (half a glass) and beat thoroughly with a mixer or by hand;
  2. Pour vanilla sugar, salt, baking powder into the resulting mass, add sour cream, beat everything again;
  3. the next step is adding flour. This must be done gradually so that no lumps form; in this case, the workpiece will turn out light and airy;
  4. prepare the mold - grease it with oil, place two-thirds of the resulting dough on the bottom;
  5. Place half of the prepared, well-dried berries on it in a neat layer (this is important so that the baked goods do not get soggy). Sprinkle them with half of the remaining sugar;
  6. Roll out the remaining dough well with a rolling pin and place it on top of the cherries. The edges of the bottom and top layers must be pinched;
  7. Beat the egg with the remaining sugar and generously brush the top of the pie with the resulting mass.

The mold with the raw pie is placed in an oven preheated to 200°C, baking time is 40 minutes. To prevent the cherry pie from sticking to the pan, experienced housewives place special baking paper on the bottom.

A simple recipe for cherry pie with kefir in the oven in a hurry

The first number in our program will be a simple kefir pie. But despite the ease of preparation, it is eaten almost instantly. After all, it is also chocolate. My kids look forward to baking it every time. An undoubted advantage of such baking is also the speed of preparation.

Ingredients for Chocolate Cherry Pie:

  • flour - 350 gr.;
  • egg - 3 pcs.;
  • kefir - 200 ml;
  • sugar - 250 gr.;
  • soda - 1/2 tsp;
  • cocoa powder - 1 tbsp. with a slide;
  • vanilla - to taste;
  • cherries - to taste.

How to make a simple cherry pie with kefir:

First, you should light the oven and prepare a baking dish (pre-grease it with vegetable or butter). Yes, and we remove the pits from the cherries if you don’t want to get rid of them while eating the pie. :))

Then pour kefir into a large mug and throw in soda. Mix well and leave until bubbles appear.

Beat the eggs with sugar until they increase in volume. I usually beat just the eggs themselves for 3-4 minutes, and then add sugar and beat everything together for another 4 minutes. I think this makes the pie more fluffy.

Now add kefir, vanillin, cocoa to the mixture and mix everything well. Then pour in the sifted flour (read why to sift flour here) and mix everything well and quickly again. It turns out to be a runny dough.

Pour the dough into the mold and place the cherries on top. The amount of cherries depends on your preference. My little one loves it when there are a lot of berries in the pie.
