Not many people like to bake chicken in the oven: especially fillets. Typically, the meat is dry and requires a lot of sauce to correct the flavor.

I had the same thing: until I tried this dish - chicken breast with cheese, baked in the oven. Don't judge strictly: my family loves chicken pieces, but only if they are in a salad, pate or soup. And with this recipe, the whole family began to simply adore chicken fillet from the oven. It turns out to be a kind of casserole, with two types of cheese - this is the best thing that can be prepared from chicken meat. Just imagine: juicy, tender meat under a cheese crust. I only do it on holidays: it’s quite inexpensive, but your figure may suffer.

How to cook “Chicken fillet with cheese crust”

1. Cut the washed chicken breast into small pieces.

2. Mix the meat with a tablespoon of vegetable oil, salt, ground pepper and dried rosemary. Place the breast in the bottom of a baking dish.

3. Grate the hard cheese on a coarse grater.

4. Pour the cream into the bowl with the cheese and stir.

5. Place the resulting mass on top of the chicken meat in the pan in an even layer.

6. Place the mold in an oven preheated to 180-200 degrees for 20-30 minutes to form a crust.

7. Wash and chop the greens.

8. Remove the finished meat from the oven and cut. Garnish with fresh herbs and serve.

Chicken baked with divinely delicious buckwheat in a cheese crust

Ingredients:

2 cups buckwheat medium-sized chicken cheese sour cream onion garlic salt seasoning khmeli-suneli vegetable oil 1 tbsp

Preparation:

Wash the buckwheat and place it on a greased baking sheet. Sprinkle finely chopped onion and three cloves of garlic on top.


Place chicken cut into pieces on top. Sprinkle 1 teaspoon of khmeli-suneli seasoning on top. Spread sour cream on top of the chicken and pour in 1-1.5 cups of hot salted water. Sprinkle with grated cheese. Bake at 200C for an hour until golden brown.

Chicken chops are very easy to prepare. But we will complicate the task a little and prepare chicken chops in a crispy cheese crust. First you need to beat the eggs in a deep bowl.

Chicken fillet in a crispy cheese crust - it even sounds delicious, right? This dish can be prepared for both the family for dinner and for the holiday table. The chicken pieces are juicy on the inside and crispy on the outside. I give the recipe to the readers of the site “Family Notes”.

Ingredients

  • 500 g chicken fillet (breast or thigh);
  • 1 cup panko (Japanese breadcrumbs);
  • 1 finely chopped rosemary sprig, without stem;
  • 3 thyme sprigs, stem removed and finely chopped;
  • 40 g grated Parmigiano Reggiano cheese;
  • 1/4 cup wheat flour;
  • 1 large egg;
  • 3 tbsp. l. cold pressed olive oil;
  • 4 minced garlic cloves;
  • 1 finely chopped onion;
  • 800 g canned tomatoes;
  • 2 tbsp. l. tomato paste;
  • 2 tsp. dried oregano;
  • 1 tsp. salt;
  • black pepper to taste;
  • 80 g grated mozzarella cheese;
  • 450 g spaghetti;
  • finely chopped parsley leaves for garnish.

While the meat is marinating, let's start breading. Today we will use two types: breadcrumbs and regular semolina, and at the same time we will compare which breading crust will turn out to be more ruddy after frying the fillet. I use homemade breadcrumbs, but you can also use store-bought ones.

30 minutes have passed. Is the meat marinated? Great. Dredge the fillet pieces in breading on both sides.

Pour vegetable oil into a frying pan and heat well over medium heat. I have a frying pan with a thin bottom, so I will heat it for one minute.

To check if the oil is hot enough, throw a small piece of bread into the pan. The oil sizzles, which means it is well heated and ready to fry.

Place breaded chicken fillet pieces into a frying pan and fry until golden brown over medium heat for 2-3 minutes.

The frying time for each frying pan is very individual, plus you need to take into account the fact that chicken meat cooks very quickly, so it makes sense not to go far from the stove and control the degree of browning of the breading.

After about a couple of minutes, turn the fillet over and fry on the other side, and at the same time see which breading gives a more golden brown crust. Well, of course, the fillet rolled in breadcrumbs turned out more rosy and appetizing.

This is such a delicious fan we got. As many as six pieces of chicken fillet in different breadings from one chicken breast. In our impromptu browning competition, the breadcrumbed fillet won. But fillet breaded with semolina is not far behind. Anyone who uses it regularly knows that it is very tasty and has a funny crunch. And browning the semolina breading is very simple; just add some finely ground spices, such as turmeric or sweet paprika.

Place the fillet on a beautiful dish and serve for dinner, and at the same time remember the whole cooking process:

  • We cut the chicken breast into fillets, cut out the bone, separate the small fillet, and remove the skin if desired. We divide each piece of breast into slices (thinner pieces of fillet).
  • We marinate the fillet in soy sauce, spices, and adding a tablespoon of vegetable oil.
  • Roll both sides in breading and fry in vegetable oil until golden brown for 1-2 minutes. The exact frying time depends on the quality of the pan.
  • Breaded chicken fillet is ready! Place on a large platter and serve.

• It is recommended to take chicken chilled. When thawing, frozen fillet loses a lot of moisture and dishes made from such meat turn out dry.

• Chicken fillet for cooking in cheese is cut into pieces of various sizes and sizes; the cutting method depends on the specific recipe chosen. Large pieces of chicken are beaten with a culinary hammer to soften its fibers and give the slices the desired shape. Often the meat is ground in a meat grinder and products already formed from minced chicken are fried in cheese.

• For both baking and frying, it is best to use fatty hard cheeses. They melt well and cover the products with an appetizing crust. The cheese is crushed with a grater; the size of the cheese shavings can vary - from the smallest to the largest. Cheese is rarely used on its own; in most cases it is mixed with a certain type of dry breading or liquid batter ingredients. In this case, cheese is added instead of flour. Sometimes ready-made hot dishes are sprinkled lightly with cheese. In this case, the cheese does not form a fried crust, but melts and becomes viscous.

• Nuggets, chops are prepared from chicken fillet in cheese, or a whole fillet with cheese is baked in the oven. Dishes are served with both fresh vegetables and side dishes, which you select yourself. The most successful are mashed potatoes and boiled rice.

Chicken fillet in a cheese crust can be quickly and easily prepared in the oven. It will retain the juiciness on the inside, and the outside will have a beautiful golden hue.

We combine some breadcrumbs and coarsely grated cheese; you can add herbs or a mixture of spices to make it more piquant. Wash the chicken fillet and cut into strips. Beat a little for softness. Beat the egg with a fork. Pour some flour into a separate plate. Roll the chop in flour (you can add salt to it, by the way), then add the meat to the egg mixture. Shake it off a little and add it to the cheese and breadcrumbs.

Heat a frying pan with vegetable or olive oil (you can fry the garlic a little in it or add a sprig of rosemary/thyme). As soon as the oil is well heated, place the breast in a fur coat and fry until golden brown on all sides. Serve with boiled potatoes and vegetable salad. If the chops are being prepared for guests, they can be fried and reheated in the oven before serving.

Chicken fillet in cheese – “Cheese breaded chops”

Ingredients:

• chicken breast – 400 gr.;

• “Russian” cheese – 200 gr.;

• 100 gr. flour, premium or first grade;

• two eggs.

Cooking method:

1. Grate the cheese with a coarse grater, pour flour into a small bowl and mix it with salt and pepper, beat the eggs separately.

2. Cut the dried meat perpendicular to the fibers into oblong pieces of centimeter thickness and lightly beat.

3. First roll the chicken slices in flour, then dip in the egg and roll again, but in cheese shavings.

4. Without delay, place the pieces of meat into well-heated oil in a frying pan and fry. As soon as the bottom “sticks” well and takes on a golden color, turn it over to the other side.

Ingredients for open chicken and potato pie

  • 2 tbsp. flour;
  • 3 chicken eggs;
  • 1\2 tsp. salt;
  • 200 ml sour cream;
  • 1 tsp. baking powder;
  • 300 g chicken fillet;
  • 3 potatoes;
  • 1 onion;
  • 100 g butter;
  • 120 g hard cheese.
