Pies with onions and eggs: a classic recipe
We bring to your attention a classic, proven recipe that makes the dish incredibly tasty!
Dough ingredients
- Milk – 250 ml
- Egg - 1 pc.
- Sugar - 3 tbsp
- Pressed yeast - 1 pack (dry - 2 heaped tsp)
- Butter - 50 g
- Flour - 3.5 tbsp. (or a little more, depending on how the dough takes it)
- Salt - a pinch
Filling ingredients
- Eggs - 6-7 pcs.
- Green onion - 600 - 700 g
- Vegetable oil - 3 tbsp
- Ghee - 3 tbsp
- Salt, pepper - to taste
Making pies with onions and eggs
Any dish made from yeast dough is not a quick task, so let’s tackle it first.
Place the dough
Beat the egg with sugar, pour in warm (not hot!) milk, add 4-5 tbsp. flour, mix until smooth and add yeast.
Stir again and, covering the dishes, set aside for 15-20 minutes so that the dough rises.
Kneadable dough
In the meantime, melt the butter and when the dough has risen, add warm but not boiling oil again - otherwise the yeast will die and the dough will not rise, add the rest of the flour, add salt and knead.
If necessary, add a little more flour to make the dough elastic, but not sticky to your hands.
We transfer it to a deep bowl or pan, greasing it with vegetable oil beforehand - thanks to this, the dough will not stick to the walls and will easily move away from them.
Cover with a clean towel and leave for an hour in a warm place to rise.
After 40-50 minutes we check - if the yeast is working well and the dough has increased in volume, knead it and leave again.
We will repeat this procedure again in about half an hour. After the second kneading, you can start making pies.
Preparing the filling for egg pies
While the dough is rising, let's prepare the filling:
- Boil the eggs hard - to do this, keep them on the fire for at least 20 minutes after boiling.
- Then cool, fill with cold water and clean. For pies, it is better to chop them with a knife rather than shred them with a fork - this way they will taste better.
- We wash the onion and let it drain on a towel to avoid excess moisture. Then finely chop it and place it in a hot frying pan with vegetable oil.
- Add melted butter for flavor, leave for literally 5-6 minutes, stirring continuously and, without waiting for the onion to darken, remove from the heat - this is necessary so that the sharpness does not disappear.
Combine the chopped eggs with the onion, mix, add salt and leave to cool.
Cutting yeast dough
Now let's start cutting the dough: grease our hands with oil so that it does not stick and also prepare a baking sheet or cutting board - be sure to apply a thin layer of oil.
To separate a piece of dough for each pie, it is better not to use a knife, but to do it directly with your hands - the piece should be spherical in shape.
We make at least 10-15 such balls. - this is necessary so that while the last ones are leaving, the first ones are already ready. The dough that we start making without proofing will definitely burst and rise not so well during baking.
How to make pies
We straighten the piece that was separated first on the board, put 1.5-2 tsp of filling into it. depending on the size and give the pie an elongated, neat shape.
When all the pies are ready, you can start frying from the very first ones. If you definitely want baked ones, then let them stand for 10 minutes, covered with a napkin, then brush them with yolk or beaten egg for shine using a pastry brush, and send them to bake at 180°C for 25-30 minutes.

Pies with green onions and eggs from yeast dough on kefir

Egg pies recipe: secrets of success
As you can see, there is nothing complicated in preparing pies with onions and eggs, but there are still some subtleties that should be taken into account.
Dough
If it doesn’t rise well or doesn’t rise at all, don’t despair! We just put it in the oven, setting it to the minimum temperature, usually 50°C.
In this case, the cooking time will increase by 1.5 - 2 times, but we keep it there until we see the result.
Filling
For it, you can use not only a mixture of oils: ghee and vegetable, but also butter. In this case, it will turn out even more juicy and aromatic.
You need to add at least 50-60 g of oil to the amount of ingredients indicated in the recipe.
Pies with egg and onion in 2 hours
Pies are made with a variety of fillings - meat, potatoes, apples, apricots and even pineapples. Some of the most delicious pies are with eggs and onions. I will share my recipe for this dish.
Ingredients:
- milk - 200 - 300 ml;
- vegetable oil - 100 - 200 ml;
- eggs - 4 - 5 pcs.;
- butter - 100 g;
- flour - 1 kg;
- dry yeast - 20 g;
- green onions - 2 - 3 bunches.
Knead the dough
I pour a mound of flour on the table and make a small hole in the top. I pour 1 glass of warm water into it and break 1 egg. You can beat in 2 eggs, then the dough will be more sticky and stable. To make the dough more fluffy, I add a little butter.

I mix all the ingredients and get a pastry dough. I add yeast at the rate of 20 g per 1 kg of flour to make the dough rise - this will take 1 - 2 hours. The yeast must be dry so that there is no specific “yeasty” taste.

Boil 3 eggs and cut them into small pieces. I cut the green onions into the same small pieces. Mix eggs and onions.
Bake pies
I roll out the dough and divide it into equal parts the size of my palm. I add the filling. In order for the pies to bake evenly and have a beautiful and even shape, you need to try to ensure that the dough adheres to the filling as tightly as possible.
Place the pies on a baking sheet and bake in the oven for about 60 minutes.
To prevent the dough from sticking, you need to sprinkle a little flour on the table.
Cooking lazy pies with eggs and green onions in 10 minutes
You know, there are people who like to “tinker” with yeast dough, knead, sculpt, fry. And everything works out well for them. They even say about themselves that they are “friendly with yeast dough.” Agree, to prepare baked goods, you need to have time. No matter how it sounds, such things cannot be accomplished in two minutes.
If you don’t have much time, but you need to feed your family a hearty breakfast or lunch. Or you want something “tasty” for tea, this recipe is definitely for you. I suggest making lazy pies, all with the same filling.
What do you need:
- Flour _ 230 gr.
- Kefir (fat) _ 250 ml.
- Egg _ 1 pc.
- Sugar _ 1 tsp.
- Soda _ 1 tsp.
- Black pepper
- Salt
- Green onion 40-50 gr.
- Eggs (boiled) 2 pcs.
- Rast. oil for frying.
Pour kefir into a bowl, take it at room temperature. Beat in one chicken egg, add salt, sugar, a pinch of ground black pepper, and mix everything with a whisk.
The flour needs to be sifted, it is better to do this several times. Sift the flour once into a dry and clean bowl, and sift it into the dough a second time. We sift through portions, not all at once. And sift the soda together with the flour.
Wash the onion, chop, boil the eggs and cut into cubes. Mix everything into a bowl with dough.
Mix everything well and leave for 10 minutes. Pour vegetable oil into a heated frying pan and put it on fire. You need to fry over medium heat so that everything inside is cooked and nothing is raw.
Spread the lazy pies with a tablespoon.
To prevent the dough from sticking to the spoon, each time we lower it into a glass of cold water. This will allow the dough not to stick to the spoon and to come off well.
Turn over and be sure to cover with a lid so that the dough is not raw inside. Fry covered over low heat for about 5-7 minutes.
Place in a bowl and place on a paper towel to remove excess fat. After cooling, the pancakes remain just as fluffy. On the second day they do not get stale, they are just as soft.
