A simple recipe for making delicious eggless zucchini pancakes

We will need:

  • Zucchini – 400 gr.
  • Wheat flour – 3 tablespoons
  • Onion – 1 small head
  • Garlic – 1 clove
  • Sunflower oil – 25 ml.
  • Dry spices - to taste
  • Dill - to taste
  • Salt - to taste

Preparation:

  1. For pancakes, you should take small, young zucchini with thin skin, which is not at all necessary to peel
  2. Wash the vegetable thoroughly under running water. Cut off the edges and grate the vegetable on a fine grater.
  3. Place the resulting vegetable pulp into a bowl and season with salt. Mix well so that the salt is evenly distributed throughout the mixture. Set aside and wait for the juice to release.
  4. After 15-20 minutes, thoroughly squeeze out the released moisture. Try to get rid of excess liquid. Since if there is a lot of it, the mass will take in a lot of flour and these will not be zucchini pancakes at all
  5. Peel the garlic and onions and rinse under running water. Pass the garlic through a press. Chop the onion in any convenient way, the main thing is that it is as fine as possible. You can grind it on a grater, beat it with a blender until it turns into a paste, or finely chop it with a sharp knife.
  6. Add onion and garlic to the zucchini, add dry spices and salt to taste. Don’t forget that we’ve already lightly seasoned the zucchini.
  7. Rinse the dill, blot off excess moisture and chop finely. Add to the dough, mix well
  8. The flour must be sifted so that it is saturated with oxygen. Add a little at a time, mixing well each time. As a result, you should get a thick consistency.
  9. Pour sunflower oil into a frying pan, place on medium heat and heat through
  10. Spoon the pancakes into the oil and fry on both sides until golden brown.

How to cook “Zucchini pancakes with cottage cheese”

Prepare ingredients for pancakes. Mash the cottage cheese with a fork so that there are no large lumps. Wash the zucchini and cut off the tail. Peel the garlic.

We use young zucchini with thin skin, which does not need to be peeled, you just need to cut off the edges. Grate the vegetable on a fine grater. Add a little salt and let stand to release the juice.


Then squeeze the vegetable well in your hands and transfer it to a clean bowl. Add semolina, season with pepper, mix. Then break the egg. Stir and let stand for at least 10 minutes, during which time the semolina will swell well. If you don’t have any time at all, you can start frying right away.

The most delicious zucchini pancakes with potatoes, flour and onions

Everyone knows about the delicious recipe for potato pancakes, but I wanted something unusual. The thought came, why not combine two recipes, zucchini pancakes and potato pancakes. And this is what I got, a very tasty and satisfying dish. Now try it, you will be delighted, just like me

We will need:

  • Onion – 1 pc.
  • Potatoes – 3 pcs.
  • Flour – 2 tablespoons
  • Eggs – 2 pcs.
  • Zucchini – 1 pc.
  • Starch – 1 tablespoon
  • Salt – 1 tsp
  • Sunflower oil – 2 tablespoons

Preparation:

We will need:

  • Zucchini - 2 pcs.
  • Breadcrumbs – 200 gr.
  • Eggs – 1 pc.
  • Bell pepper – 1 pc.
  • Onion – 1 pc.
  • Hard cheese – 50 gr.
  • Salt, spices - to taste
  • Mayonnaise – 1 tablespoon

Preparation:

Wash the zucchini, chop it into a coarse grater, squeeze it well in your hands, we don’t need excess moisture.

Peel the pepper from seeds, cut out the white veins, and cut into small cubes.

Grind hard cheese on a fine grater. Wash and chop the green onion feathers.

Mix all ingredients together, add salt and spices, mayonnaise, knead until smooth. We wet our hands in water and form our pancakes, place them on a baking sheet covered with parchment.
