Minced fish pie recipe
If you think that savory homemade cakes won’t surprise anyone, then you’re wrong. We invite you to try a recipe that truly deserves the title of the best. Minced fish pie is not at all like other savory baked goods. It turns out so juicy and tender that you want another piece. At the same time, even someone with very little culinary experience can complete this recipe. This means that there is nothing to think about - you need to start cooking!
Ingredients
For yeast dough:
- dry yeast - 1.5 tsp;
- chicken eggs - 2 pcs.;
- butter (72.5% fat) - 100 g;
- premium flour (wheat) - 550-600 g;
- milk - 200 ml;
- granulated sugar - 1.5 tbsp. l.;
- salt - 1/2 tsp.
For vegetable and fish filling:
- fresh carrots - 1 pc.;
- onions (large) - 1 pc.;
- fish fillet - 1 kg;
- fresh parsley - 20 g;
- fresh dill - 20 g;
- sunflower oil - 20 ml;
- pepper - 1 tsp;
- salt - to taste.
To brush the snack:
- chicken egg (large) - 1 pc.
Cooking steps
Mixing the flour base
1. Warm the cow's milk a little until it is warm. You will need it to prepare the dough. Add white granulated sugar and dry yeast to warm milk. Stir the ingredients well until the sugar is completely dissolved and let the dough sit for 5 minutes.
2. Meanwhile, continue with the recipe. While the dough is rising, place the butter in a small frying pan and melt it over low heat until it becomes completely liquid. However, you shouldn’t wait for it to boil. Cool the melted butter slightly until warm. Then place it in a container with yeast and milk. Break all the chicken eggs there, add 1/2 tsp. salt.
3. Mix everything thoroughly using a regular whisk. The resulting mass must be homogeneous. Wheat flour must be sifted through a sieve. This way you will saturate it with oxygen and protect the dough from lumps. Add the sifted flour little by little to the container with the milk-egg mixture and knead.
4. Mix the dough with a whisk first, and when it becomes quite thick, you can safely work with your hands. Mix the flour base with vigorous movements until smooth. The dough turns out to be very elastic and stops sticking to the bowl and hands. When you achieve this result, form a ball from the yeast base, wrap the bowl with a napkin or kitchen towel and place in a warm place for 60 minutes. The dough should rise, increasing in volume two to three times.
Preparing fish and vegetable filling
The recipe for minced fish filling for the pie is also incredibly simple. If you manage to find ready-made minced fish, that's great. Then things will go even faster. Otherwise, you will have to sweat the fish yourself.
1. Take the fish fillet and rinse it under running water. Then place it on a napkin to dry slightly. Pass the fish fillets through a meat grinder into a separate deep bowl. Season the finished minced fish with salt and pepper. You can also add some fish seasonings to make the filling more flavorful. Mix the minced meat thoroughly with a tablespoon.
2. Peel the onions and carrots, rinse under running water, and dry with a kitchen towel to remove excess moisture. Grate the carrots on a grater with large holes, and carefully cut the onion into half rings (not very thin).
3. Place the frying pan over medium heat and heat the sunflower oil in it. Then add carrots and onions to the pan. Fry everything together until golden brown. Then remove the pan from the heat and cool the onions and carrots.
Forming the fish pie
1. Knead the risen yeast dough well with your hands. Grease the kitchen table with a small amount of vegetable oil and place the flour base on it. Then divide the dough into two unequal parts (one should be slightly larger than the other). In order not to be mistaken, refer to the photo below.
2. Line a baking tray with special baking paper. Additionally, grease the paper with sunflower oil. Roll out most of the yeast dough into a crust that will fit the size of your baking sheet. Afterwards, carefully transfer the cake into the pan and place it on baking paper.
3. Place the vegetable filling of carrots and onions on top of the yeast base.
4. Place the prepared minced fish onto the vegetable filling. Try to distribute the filling as evenly as possible so that the pie is smooth and beautiful. Rinse parsley and dill under running water, then dry with a towel. Using a kitchen knife, chop the greens. Then sprinkle the minced fish with dill and parsley.
Roll out the second part of the yeast dough into a crust in the same way and cover the filling on top. Carefully pinch the edges of the pie with your hands so that the minced meat does not come out during baking. In a small deep plate, beat one chicken egg and brush the homemade pastries with it using a brush. This will give it a beautiful shine and appetizing look.
Baking and serving
Preheat the oven to 200°C. Then place the baking sheet with the pie there for 15 minutes. After baking, you need to pierce it with a knife in several places and put it in the oven for another 25 minutes. It is necessary to pierce the appetizer so that it does not burst due to the accumulation of hot air in the dough.
Remove the finished fish pie from the oven and cool slightly directly on the baking sheet. Then cut the appetizer into pieces for convenience and serve. Don't forget to save this wonderful recipe somewhere so you can refer to it whenever you need it.
Bon appetit!

Ingredients:
- 150 grams of mushrooms,
- 1 onion,
- 3 tablespoons olive oil,
- 100 grams of boiled rice,
- 1 small bunch of parsley,
- 250 ml milk,
- 500 g fresh salmon fillet with skin,
- 1 raw egg yolk,
- 300 grams of puff pastry,
Preheat the oven to 200°C.
I cut clean mushrooms into pieces.
I pour olive oil into the pan, add finely chopped onion, and fry for a few minutes.
Add the mushrooms, season with salt and pepper and fry, stirring frequently. I transfer everything into a bowl, mix with cooked rice and chopped parsley (1/2 bunch).
I wash and dry the salmon fillet (if there are scales on the skin, I clean them off with a knife). I place it in a saucepan, add a glass of milk, and bring it to a boil. Reduce the heat, season with freshly ground pepper, and cook for 5 minutes without a lid. I remove the fish, separate the meat from the skin, divide it into small pieces, and carefully mix it with the onion and mushroom filling. Season with salt and pepper.
In a bowl, beat the egg yolk with a small amount of water with a fork.
I cover a baking tray with baking paper. I cut the puff pastry lengthwise into two rectangles - one narrower - 11 cm, the other wider - 14 cm, but both are the same length.
I place a smaller piece of puff pastry on the baking sheet and prick it tightly with a fork. This is necessary so that steam escapes and the dough does not rise. I spread the filling, stepping back from the edge of the pie by 1-1.5 cm. I grease the edges with whipped yolk. I cover the filling with a wider piece of dough and carefully glue the edges. I brush the top with the remaining yolk and use a fork to make a pattern around the edges of the pie.
Place in the preheated oven and bake for about 30 minutes until the dough has a beautiful glossy color.
Ingredients for the dough: in the photo
I prepare yeast dough in the usual way. I have such a recipe on my website, I wrote about it when I was making pies with saury, you can see it here. If you have a bread machine, you can also quickly prepare it in it.
I cover the flour mass with film for a while, it will stand and increase by 2 times.
Ingredients for filling: in the photo
The taste of the pie depends on what the filling is, and it must turn out delicious.
I cut the fish into small pieces, add chopped onions, 0.5 tbsp fish seasoning, 0.5 tsp. ground pepper, salt to taste, Philadelphia cheese. Cover the filling with a lid and put it in the refrigerator.
The dough has increased, it has become soft and pliable, I divide it like this: 2/3 will go to the base and sides, 1/3 will be needed to cover the top. I take the mold and place the main part on the bottom.
I put the filling on top.
I roll out the top of the pie thinner and trim off the excess with scissors.
I take 1 yolk and add 2 tablespoons to it. milk, stir, brush the top layer of dough with a brush. I leave it for 15 minutes to rise, then put it in the oven preheated to 180 degrees for 25 minutes.
The pie is ready, I grease it well with butter, cover it with a towel, let it stand for 30 minutes, and then serve it.
Ingredients for the dough:
- 200 gr. wheat flour,
- 100 gr. chilled butter,
- a pinch of salt,
- 1 yolk,
- 2 tbsp. cold water.
Filling ingredients:
- 2 eggs,
- 250 gr. sour cream 20% or cream 30-35%,
- 100 gr. hard cheese,
- 300 gr. fresh salmon,
- 200 gr. broccoli,
- a pinch of salt.
I'm preparing the dough. Add butter, cut into small pieces, to the sifted flour. Together with the flour, I grind it into fine crumbs and add salt. I transfer the yolk into the flour mixture and mash well. I pour water little by little, it usually takes me 2 tbsp.
I gather the dough into a ball and divide it into 2 parts. 2/3 will be the base of the pie, 1/3 will be the sides. I wrap it in cling film and put it in the refrigerator for 30 minutes.
I'm making the filling. I remove the skin from the fish, remove the bones, cut it into small pieces, salt to taste, sprinkle with lemon juice, mix, and leave the fish to marinate.
I used frozen broccoli. Without defrosting it, I put it in boiling water, cook for 5 minutes, put it on a plate, and let it cool.
I grate the cheese on a coarse grater.
To pour, break the eggs into a bowl, beat them with a fork, add sour cream, mix well until smooth.
I take most of the dough out of the refrigerator, sprinkle it with flour, and roll it out into a large layer according to the size of the mold. I transfer the dough into the mold, roll it out along the bottom, and trim off the excess. I prick the base with a fork, put it in the oven, and bake at 200 degrees for 10-15 minutes. I leave it to cool completely.
I still have a third of the dough and trimmings left. I knead it until it is plastic, and form it into a rope of the desired shape. I spread it along the walls of the cake, pressing it against the walls of the mold to create sides 3-4 cm high.
I distribute half the salmon and the same amount of broccoli over the base. I sprinkle half the cheese, now lay out the remaining fish and cabbage. I pour the filling; if the ingredients peek out from under the filling, you can press them down a little. Top with leftover cheese.
I bake the cake for 35 minutes at 200 degrees. I put it a little higher in the oven for the last 10 minutes to brown the top.
