Thin Armenian lavash is a universal flatbread, the arrival of which in our kitchens has made the preparation of many favorite dishes much easier. With a slight movement of our hands we bake pies, prepare achma, pizza , make delicious rolls and other snacks. It’s not for nothing that such dishes are called lazy – they are quick and enjoyable to prepare. Today we’ll make lazy chebureks with minced meat in a frying pan from lavash and enjoy the cooking process and excellent taste.

Despite the unusual replacement of dough with lavash, the pasties will turn out crispy and fluffy, as expected, and their filling will be juicy and tasty. But there are some subtleties in preparing snacks, and you need to know them.

Lazy pasties from lavash - recipe

Using lavash will allow us, busy housewives, to save a lot of time, since it will save us from fiddling with the dough. Use any minced meat, in different proportions, there will be no exact instructions here. Take round cakes, but if you take traditional, rectangular ones, you will have to cut them, or make pasties of an unusual shape.

Take for 4 pies:

  • Round lavash – 4 pcs.
  • Minced meat (beef 70% + pork 30%) – 500 gr.
  • Onion, onion – 1 pc.
  • Green onions - a few feathers.
  • Water – 100 ml.
  • Egg – 2 pcs. (for minced meat and grease).
  • Mixture of peppers, salt to taste.
  • Oil – 150 ml.

Lavash pasties are one of my family's favorites. I also love them because they are very easy to prepare. There is no need to knead the dough, mold it, and then spend half a day cleaning the kitchen from flour. For me, this is another very successful culinary find!

Chebureks made from lavash turn out to be as tender, crispy and very juicy as those made from dough. The main thing is to prepare the minced meat correctly and apply it in a layer that is not too thick, but not too thin.

You also need to be careful with vegetable oil and pour just enough of it into the frying pan so that the pasties fry and do not float in it.

The recipe I offer is, well, very simple. You will need:

  • 500 gr. minced meat (250 g pork + 250 g chicken);
  • 2 onions;
  • 0.5 glasses of water;
  • 1 protein;
  • salt pepper.

Finely chop the onion or pass through a meat grinder. Add it to the minced meat. Mix everything well, salt, pepper and add 50-80 g. cold water for juiciness. If you take lean meat, then you can add a piece of lard, twisted in a meat grinder.

Cut out circles of the desired diameter from the pita bread. To do this, you can take a plate or a large mug.

Beat the egg white and brush the edges of the circles with it to help them stick together better.

Place a thin layer of minced meat on one side of the pita bread and smooth it out. Cover with the other side and press the edges thoroughly with your fingers. In general, you do it exactly as if you were making pasties from dough.

Place in a frying pan heated with oil. Fry on both sides for 3-4 minutes until golden brown and crispy.

Place the finished pasties on a paper towel to absorb excess fat.

Don't want to bother cutting out circles? Then there is an even simpler way.

Cut the pita bread into squares.

Salt and pepper the minced meat, add chopped onion and a little water. Mix well. Place it on a square, in a corner.

Beat the egg and brush the edges of the cheburek with it. We connect them and press them well with our fingers.

Fry as usual and eat this beauty in the heat!

How to cook lazy pasties

Chop the onion into the smallest cube you can.

Chop the green onions in the same way.

Place in a bowl with minced meat. Add water, beat in one egg. Pepper and season the minced meat with salt. If desired, green feathers can be replaced with dill or parsley. Mix the contents thoroughly, distributing the onions evenly throughout the meat.

Unwrap the tortilla. Whisk the remaining egg in a small bowl. Lubricate the surface of the workpiece.

Place some of the filling on the edge of the tortilla. Distribute evenly, taking up half of the pita bread, leaving the edges free.

Fold the tortilla over the filling. Tape the edges securely. Let sit for a couple of minutes until the edges set.

Then brush the egg along the edges one more time so that they are firmly fixed as much as possible, otherwise during frying you will lose the very valuable juice from the chebureks. To do this, slightly lift the edge of the cake again, grease it and firmly connect it again.

Lavash has a thin dough, so it breaks quickly if you put filling in it. I advise you to make semi-finished products not all at once, but one by one. We molded the semi-finished product, fried it, then proceed to form the next one. Otherwise, the cheburek will not turn out juicy, and too much oil will be absorbed.

Pour oil into a frying pan and heat it well. Lay out the workpiece. Fry on the underside.

Turn over and continue frying the semi-finished product until the desired golden brown crust appears.

First transfer the finished products onto a paper napkin. Then, when excess oil is absorbed, place on a plate.

So, put the thawed minced meat (homemade or store-bought - it doesn’t matter) into a bowl.

Add onion, chopped into small pieces. Add salt and desired spices to your taste (you can use ground red or black pepper). Stir, the filling for lazy chebureks is ready.

We cut a sheet of thin Armenian lavash with culinary scissors into quadrangles, the edges of which need to be slightly rounded.

Place the meat filling on one side of the pita bread, distributing it with a fork.

Lubricate the edges of the pita bread with cold water and press it to form a cheburek.

All that remains is to fry our lazy pasties in heated vegetable oil on each side.

It is recommended to place the delicious crispy pasties from the frying pan on paper napkins to remove excess fat.
