Ingredients:

  • 250 ml boiled water;
  • 2 eggs;
  • 6 g salt;
  • approximately 250 g of flour (check the consistency of the dough);
  • 4 small onions;
  • 2 carrots;
  • 700 g minced beef and lard;
  • 2 g ground black pepper;
  • 50 ml oil for frying;
  • garlic clove;
  • 15 g fresh herbs;
  • 50 ml sour cream.

Cooking steps.

  1. The dough is being prepared. Pour 120 ml of water into a capacious cup, add eggs, salt, and shake. Add sifted flour. First, stir the mass with a whisk, then knead with your hands. The dough should be elastic and tight. If it sticks to your hands, you need to add more flour.
  2. The dough wrapped in cling film is placed in the refrigerator for 40–60 minutes to mature.
  3. Grind 2 onions in a meat grinder or fine grater. Minced meat is peppered, salted and combined with onions.
  4. The dough is divided into 3 equal pieces. One part is rolled out with a rolling pin into a cake 3 mm thick. Spread a third of the minced meat on it in an even layer and roll it into a roll, constantly pinching the edges.
  5. The resulting roll is cut into small identical pieces.
  6. Do the same with the remaining dough and minced meat.
  7. Peel and chop the remaining onions, carrots, and garlic. Vegetables are fried in oil in a frying pan.
  8. Separately mix chopped herbs and sour cream. Combine with fried vegetables.
  9. Place semi-finished rosettes in a deep frying pan. Pour in the remaining water. The top of the roses is covered with a sour cream and vegetable mixture.
  10. The dish is cooked covered for 13 minutes. Serve directly in the pan.

Pan recipe

Lazy dumplings in a frying pan are prepared very quickly and without much hassle.
This is a delicious meat dish with the addition of vegetables that does not require much time. For the test you will need:

  • flour - 3 cups;
  • eggs - 3 pieces;
  • water (warm) - 1 glass;
  • salt - ½ teaspoon.

For minced meat you will need:

  • any meat - 500 g;
  • onion - 1 large head;
  • salt, spices - to taste.

For the vegetable pillow you will need:

  • onion - 1 large head or 2 small ones;
  • carrots - 2 medium pieces;
  • garlic - 2 cloves (or more if you like it spicier);
  • vegetable oil - for frying vegetables.

For the sauce you will need:

  • sour cream - 150 g;
  • water - half a glass;
  • khmeli-suneli - to taste.

Preparation

  1. Dissolve the egg and salt in warm water. Pour into the sifted flour and mix thoroughly, gradually adding more flour to the “liquid center”. Knead the dough and set it aside to “proof”, covered with a towel or wrapped in a plastic bag, for about half an hour.
  2. Grate the carrots and chop the onion (you can also just chop the carrots if you don’t like grated ones), simmer them together in a frying pan for about 4 minutes. At the very end, add finely chopped garlic.
  3. Grind the meat and onion in a meat grinder or blender (or chop it by hand, this will make the minced meat more textured), add salt and seasonings. It is better to take freshly ground spices - this way they will give more aroma and taste to the dish. Mix well until the salt is completely dissolved and evenly distributed.
  4. Roll out the dough into one large layer no more than 1 mm thick. Place the minced meat on it in a thin layer, leveling with a fork.
  5. Carefully roll the roll, avoiding any air bubbles under the dough. Pinch the edges of the resulting roll.
  6. Cut with a sharp knife into small pieces - rolls 2-3 cm thick.
  7. Spread about a third of the vegetables on the bottom of the pan and place the dumplings on top, cut side up. Place so that the rolls do not touch (you can place vegetables between them). Cover everything on top with the remaining vegetable pillow. When placing the rolls on a vegetable bed, do not forget to pinch the bottom cuts so that the juice does not leak out and the dumplings do not lose their taste.
  8. Prepare the sauce: mix sour cream with water and khmeli-suneli (if you don’t like this seasoning, you can use black pepper, paprika or anything else to your taste). Pour mixture over dumplings. If desired, you can put butter on each roll.
  9. Cook for about 30 minutes, covered, over low heat.

Serve the dish hot, garnished with herbs and fresh vegetables. You can serve sour cream, hot sauce, garlic sour cream sauce, etc. with lazy dumplings.

Classic recipe in the oven

This recipe allows you to prepare a meal for a large family without spending a lot of time at the stove.

Ingredients:

  • 600 g flour;
  • egg;
  • 550 ml water;
  • 10 g salt;
  • 50 ml sunflower oil;
  • 300 g chicken fillet;
  • 400 g pork with lard;
  • 3 onions;
  • 1 sweet pepper;
  • 3 g ground black pepper;
  • 60 g tomato paste;
  • 3 garlic cloves;
  • 5 g sugar;
  • 40 ml sour cream.

Cooking steps.

  1. Minced meat is prepared from meat and two onions using a meat grinder. It is salted, peppered, mixed with sour cream and whipped.
  2. They make choux pastry: it turns out to be more elastic and can be easily rolled out into a thin layer. Boil 250 ml of water. Separately combine the egg, salt, sifted flour, 20 ml of oil. Add boiling water. Stir the dough with a fork, and when it cools down, use your hands.
  3. The dough is covered with cling film and left on the table.
  4. To prepare the dumpling filling, chop and fry the onion, pepper, and garlic in oil. Add tomato, salt, sugar, black pepper.
  5. A small portion of the dough is rolled out thinly. The minced meat is spread over the entire surface of the resulting flatbread. Roll it up (loosely).
  6. The roll is cut into pieces 5 cm long. Each piece is pressed down a little with your hands on one side so that on the other it opens, resembling a rose.
  7. Place the semi-finished products in a deep baking tray so that there is space between them. The void is filled with fried vegetables: this will prevent the dumplings from sticking together. Pour boiling water, cover with foil and place in the oven, preheated to 180 degrees. Cook for 35 minutes.
  8. Lazy dumplings in the oven are ready when they take on a nice golden hue. If there is still water in the pan, you can remove the foil and keep the dish in the oven for a few more minutes.

Lazy dumplings in a frying pan with sour cream are ready! Can be served for a family lunch or dinner.

It turns out that lazy dumplings can be made not only in a frying pan or boiled in a pan, but also cooked in the oven. This is exactly the recipe I want to present to you now.

What you will need:

  • flour – 400 grams,
  • egg – 2 pcs,
  • water – 100 ml,
  • salt.
  • minced meat (any to taste) – 450 grams,
  • onions – 2 heads,
  • garlic - clove,
  • ground black pepper,
  • carrots – 1 piece,
  • green onion,
  • sour cream,
  • dill.

This recipe also uses a large number of different spices. But here it’s up to your taste and who likes what you like best.

How to cook

First, let's knead the dough. Do it in a way that is convenient for you. The most ordinary dumplings will do. Then wrap it in a towel or put it in a plastic bag. And let it lie for about 30 minutes. This will make it more elastic. This will allow it to roll out better.

While the dough is lying, we will make minced meat. To do this, finely chop the onion.

Chop the garlic. If desired, add parsley to the meat. Stir, add salt, and chop if desired.

Since we will be making our lazy dumplings in the oven, we will need a dressing. To do this, cut the onion into half rings and grate the carrots. Fry everything in a frying pan in oil.

Roll out the dough on a floured surface. This must be done so that it is thin. Then lazy dumplings will taste better.

Place minced meat on a layer of dough. This must be done in a thin and even layer.

Roll everything up into a roll.

Cut it into small pieces, about 5 cm long. Pinch the lower part of such a piece, and straighten the upper part in the shape of a rose.

Place the finished pieces in a baking dish, which must be greased with oil.

Place the frying from the frying pan on top. Sprinkle with pepper and bay leaf. Fill with water, which must first be salted. It should almost completely cover the dumplings.

Place the form with dumplings in the oven for 40 minutes.

Place the finished lazy dumplings on a serving dish and serve hot with sour cream.

Sometimes you don’t want to cook even the most delicious food. But the children and husband always want to eat. How to find a way out of such an unpleasant situation? It turns out that lazy dumplings will save us here again. But now from lavash.

What you will need:

  • lavash - 2 sheets,
  • minced meat - 450 g,
  • egg - 1 piece,
  • milk - 1/3 cup,
  • onion - 1 piece,
  • large carrots - 1 piece,
  • tomato paste - 1 tbsp,
  • cream or sour cream - 150 ml,
  • salt - to taste or 1/2 tsp,
  • spices are my favorite.

It’s better to take the thinnest lavash you can find. The thick version is not suitable for making lazy dumplings at all.

How to cook

Soak the loaf crumb in milk. Leave aside for 20 minutes.

Combine the minced meat with the egg and loaf, you can add all the milk. Be sure to add salt and pepper and also set aside for now.

Now lavash. It needs to be unfolded on the table. Coat the surface of the pita bread well with minced meat. If you will use 2 sheets, then the filling must be divided into 2 halves.

While the pita bread is soaking, you can peel and finely chop the onion. Place it in a frying pan and fry in oil.

Wash the carrots, peel them, grate them and add them to the onions in the pan. Simmer everything together for about 15 minutes.

While the frying is being prepared, cut the pita bread. This must be done so that each piece is about 3 cm wide.

We place each piece of future lazy dumplings in a frying pan, directly on the vegetables.

Now let's prepare the sauce. In a bowl, mix sour cream, tomato paste, salt and ground black pepper. Mix everything with a fork. If you wish, you can add a crushed clove of garlic and even mustard. If the sauce seems thick, add a little water.

Pour this sauce over the dumplings, cover with a lid and simmer over low heat. Cooking time is about 30 minutes. At the same time, make sure that the liquid does not completely boil away, otherwise the dish will simply burn.

Serve hot on portion plates with fresh herbs.

If you want to make lazy pita dumplings in the oven, then instead of the stove, you need to place the frying pan in the oven and bake the future dumplings there for about 40 minutes. In this case, the recipe and dressing for them will be exactly the same as described just above.

At the very end of cooking, you can sprinkle the dish with cheese. and then it will be covered with a fragrant and tasty crust. But this is strictly not for everyone.

Lazy dumplings

There is a strong public opinion that dumplings are the food of students, lonely bachelors, and they are also cooked by housewives who are lazy before cooking. Most often, this is the case, and for lazy housewives there is a good recipe to rehabilitate themselves in the eyes of the public.

The dough for lazy dumplings is prepared in the same way as for “labor-intensive” dumplings. Break 2 eggs into a 300-gram cup, beat them, add half a teaspoon of salt and fill the cup with cold water to the top. Pour the resulting mixture into a large container in which the dough will be kneaded. Theoretically, you will need 3.5 cups of sifted flour. Add flour to the liquid gradually, kneading the dough. Then transfer it to a work surface and knead it thoroughly so that it does not stick to your hands and is not too tight or “clogged.” Place the dough in a bag and let it rest for 25-30 minutes so that the gluten in the flour softens and the dough becomes elastic.

The filling for lazy dumplings is prepared from one or different types of meat: pork and beef, pork and chicken, pork or beef separately. But the most delicious minced meat comes from a mixture of different types of meat! Pass half a kilogram of meat together with 2 onions through a meat grinder twice. Add salt, pepper and 20 ml of water to the minced meat, mix everything.

Take the dough out of the bag, knead it and divide it into 3 parts. Roll each into a rectangle, its width is no more than 20-22 cm, the length is arbitrary, the thickness is 2-3 mm. The minced meat is also divided into 3 parts. Grease the entire surface of the dough with a thin, even layer of minced meat and roll along the wide side in the form of a roll, which should be cut into 3-centimeter pieces with a sharp knife. Prepare the remaining two portions in the same way. Pour about 1-1.5 cm of boiling water into a deep, preheated frying pan, and carefully place the dumplings end-to-end into the boiling water. Place all the dumplings tightly, pour boiling water to a level less than 1 cm from the top edge of the dumplings, add salt to the water. Cover the pan with a lid and cook the dumplings for no more than 3 minutes over low heat. Then transfer the finished dumplings to a bowl and pour in melted butter. Add sour cream, mayonnaise, herbs to taste already in plates.

Lazy dumplings can be frozen just like regular dumplings. Place the cut pieces of dumpling roll in a layer in one dumpling in the freezer, layer them with parchment or cling film. Cook frozen lazy dumplings in the same way as freshly prepared ones - in a deep frying pan, in boiling salted water, as described above, only more time should be spent (to defrost frozen dumplings and bring them to readiness).

Another way to prepare such lazy dumplings is to place the dumplings in a small amount of boiling water, and pour in not boiling water, but onions, carrots, tomatoes sauteed in butter (all of this, of course, should be salted, add sugar, pepper, spices) and cook in vegetable mixture for 5 minutes. These dumplings are served in the container in which the dish was prepared. Dumplings are laid out on plates along with vegetables.

  3. Gradually add flour to the puree, stirring all the time. The dough should be airy.
  4. Roll out the prepared mass into sausages and then cut them into equal slices.
  5. Lazy dumplings with potatoes are boiled in salted water or fried in oil.

If you need a small batch of lazy dumplings, you can easily make them in the slow cooker.

  • water - 80 ml;
  • egg - 1 piece;
  • flour - 230 g;
  • salt - ¼ teaspoon.

For the filling you will need:

  • any minced meat - 350 g;
  • onion - 1 head;
  • salt and spices - to taste;
  • greenery.

Preparation

  1. Add warm (but not hot) water, salt and egg to the sifted flour. Mix everything carefully, gradually increasing the thickness of the dough by adding flour.
  2. Knead the dough until elastic and leave it under a towel or film for about 30 minutes.
  3. Prepare the filling: pass the meat and onions through a meat grinder or grind in a blender. Add salt, spices and some herbs.

In a slow cooker, lazy dumplings can be cooked in several ways - at the request of the housewife and depending on the model of the device.

  1. On the “Baking” mode for 30 minutes - place the dumplings in a bowl, add water so that it almost covers the dumplings and cook for 30 minutes (if the dumplings are large, increase the cooking time).
  2. “Steam” - place the products on a steaming dish, pour 2 glasses of water into the bowl and cook for 25-30 minutes.
  3. “Stewing” - place a bed of fried vegetables on the bottom of the bowl, place dumplings on top and cover with the remaining vegetables. Simmer for 40–50 minutes (in a pressure cooker, when cooking under pressure, simmering will take about 20 minutes from the moment it warms up).

You can serve lazy dumplings with herbs, sour cream (preferably chilled) or hot sauce.
