The most delicious baked goods are the ones you made yourself, but I don’t bake them myself, my wife does it, and that makes the baked goods even tastier. When there is time, my wife bakes something delicious, most often kefir muffins in the oven - the children simply adore them.

Of course, the recipe for these cupcakes was compiled from several: there were a lot of experiments when preparing them, so I don’t even remember how we came to our ideal one.

The basis of the recipe was given to the wife by her godmother, the wife changed something, added something, and our simple kefir muffins were born.

From the outside, of course, it was interesting to watch her creativity, although it was a pity for the wasted products. But, in principle, I was not very sad about this, because if nothing worked out at all, then the dish was fed to animals or dogs, because we run our own farmstead.

Having collected several recipes, leaving the most necessary and inventing something of our own, we got a simple and inexpensive recipe. All the ingredients can be found in any simple store, but since we live in the village, we have some of our own products: kefir, for example.

Kefir muffins recipe with berries

Product Set

Products for 12 servings:

  • baking powder two teaspoons;
  • low-fat kefir 250 g;
  • egg 1 piece;
  • blueberries 220 g (can be replaced with cherries, cherries, currants, etc.);
  • flour 270 g;
  • a pinch of salt;
  • soft butter 100g;
  • sugar 200 g;

Recipe

  1. Preheat the oven to 180 - 200 degrees.
  2. Beat butter and sugar in a bowl with a mixer until smooth. Add kefir egg and a pinch of salt. Beat everything well.
  3. In a separate container, mix baking powder and flour. Pour the liquid dough base into the flour, stirring quickly and well.
  4. Wash the berries, dry on a paper towel and add to the finished dough.
  5. Place the dough in paper molds greased with vegetable oil. Place in a hot oven for twenty minutes. Check the readiness of the products before removing them from the oven.
  6. Serve with tea or coffee, topped with condensed milk.

Kefir muffins recipe with chocolate and dried apricots

Product Set

Products for 6 servings:

  • sugar 1 glass;
  • egg 2 pieces;
  • kefir 1 glass;
  • a pinch of salt;
  • one and a half cups flour;
  • soft butter 125 g;
  • dried apricots 4 pieces;
  • thirty grams of chocolate;
  • zest of one orange.

Recipe

  1. Preheat the oven to 200 degrees. Prepare paper muffin cups.
  2. Beat soft butter, sugar and eggs well with a mixer. Add kefir. Beat everything well.
  3. In a separate container, mix flour with baking powder and salt.
  4. Finely chop the chocolate bar into pieces, mix with chopped orange zest (the uppermost orange layer of the orange peel without white fibers). Chop the dried apricots.
  5. Add chocolate, dried apricots and orange zest to one container to quickly incorporate these additional ingredients when kneading the dough. When baking muffins, it is recommended to place the finished dough in the oven as quickly as possible so that the products turn out tender and soft.
  6. Add the mixture of eggs, sugar and kefir to the flour with baking powder and quickly mix until smooth. Add toppings – dried apricots, zest and chocolate. Pour the creamy dough into the molds, filling them 1/3 full. Place in a hot oven for 20 - 30 minutes.
  7. Serve cool with tea, milk, coffee or fruit juice.

Option with berry filling

Let's prepare:

• butter; • sugar; • kefir; • flour; • eggs; • fresh berries; • baking powder.

Preparation consists of:

1. Grind 100 g of butter with 100 g of sugar and 2 eggs. 2. Mix 200 ml of kefir with the ready-made white mixture. 3. Add 260 g of flour and 5 g of baking powder. At the end we add the berries to the dough. The ideal option is black currant. We determine their quantity by eye and taste. Muffins should be baked at 190°C for about 25 minutes.

Products for 10 servings:

  • baking powder 1 teaspoon;
  • butter 100 g;
  • kefir 100 ml;
  • milk 125 ml;
  • white chocolate 100 g;
  • egg 1 piece;

  • sugar 100 g;
  • flour 300 g;
  • vanilla sugar 1 teaspoon;
  • roasted peanuts.

Recipe

  1. Prepare the oven for baking by preheating it to 200 degrees;

  • salt - a pinch
  • powdered sugar - for sprinkling

Don't forget: all the ingredients for muffins are always brought to room temperature!

We will prepare it like this:

  1. First of all, preheat the oven to 180º. If your molds are not made of silicone, then you need to grease them with oil or line them with paper capsules.
  2. Melt the butter over low heat and leave to cool.
  3. In a deep bowl, whisk together the eggs and sugar. Add pre-melted and now cooled butter to them and mix lightly again.
  4. Now the next step is kefir - the temperature of which must be brought to room temperature in advance - add it and mix again with a whisk.
  5. Sift the flour, baking powder and salt into a separate container and mix all the dry ingredients together.
  6. Gradually, in several additions, add the dry mixture into the liquid mixture, stirring thoroughly each time with a whisk or just a spoon. As a result, we will get a rather liquid mass, close in consistency to sour cream.
  7. Pour the dough into silicone molds (or those that you currently have on hand) and put them in an oven already heated to 180 degrees for 30-35 minutes.
  8. When baked, “correct” muffins rise above the pan like a cap and crack appetizingly on top.
  9. All you have to do is cool the finished cupcakes, remove them from the molds and add the finishing touch by sprinkling them with powdered sugar.

Voila! Making them seems to be even faster than learning a recipe.

Let's prepare for 100 g of ham:

• a glass of 200 ml of kefir; • egg; • 50 g butter (if butter, then melted); • 205 g flour; • 1/2 tsp. soda, salt; • 1 tsp. Sahara; • 50 g cheese; • 2 tsp. sesame; • pepper, dill, Provençal herbs, thyme. Baking time: 40 minutes at 180°C

Knead the dough for kefir muffins with ham:

1. Add soda to kefir - this carries out the process of quenching it. 2. Break an egg into them. 3. Add oil. Stir in salt, sugar and other spices. 4. Stir in flour. 5. Next, add ham and cheese to the dough. They must be finely chopped - otherwise the muffins will not rise. 6. Fill the baking dish 2/3 full, sprinkle with sesame seeds if desired. All that remains is to bake and you can serve the muffins with ham and cheese on the table.

And don’t forget to sift it to avoid unpleasant lumps in the finished baked goods.

Muffins with apples or currants

For lovers of sourness in baked goods

also expanse - for example, dried cranberries or cherries are perfect for muffin dough according to the basic recipe. I suggest you pay attention to the following options.

  1. Firstly, a win-win combination of apples and cinnamon. Everything here is down to elementary simple. We cut sour apples (or any that you like in fillings or just have on hand) into small cubes, add cinnamon to them, mix and add to the dough made according to the basic recipe at the very end. 1 apple will be enough.
  2. The second filling option for cupcakes, which will give them an amazing smell, taste and color, is black currant. Take whatever you have, fresh or frozen. Let's add a little currants to the finished dough and get a new, simple, but very special dessert.

Banana muffins

And these cupcakes are a real joy for children, and no less joy for mothers, since you can use already overripe and completely ugly dark bananas. Please note that we no longer need kefir here.

  • bananas - 3 pcs. (this is about 400 gr.)
  • butter - 100 gr.
  • granulated sugar - 150 gr.
  • eggs - 2 pcs.
  • flour - 250 gr.
  • baking powder - 2 tsp.

Preparation:

  1. Preheat the oven to 180º and line the muffin tin with paper capsules.
  2. Mash the bananas with a fork into “porridge”.
  3. Beat the butter, softened to room temperature, with sugar until fluffy, and then add the banana puree and mix well. It is more convenient to use a mixer for this recipe.
  4. Add eggs one at a time, beating until smooth after each.
  5. Now add the flour sifted with baking powder and mix lightly with a spatula. When the dry ingredients combine with the “wet” ones, pour the dough into the molds.
  6. Bake banana muffins in a preheated oven for 15-20 minutes. Carefully monitor their readiness so as not to dry out the cupcakes.

3. Add kefir and mix. My kefir is not fatty. It’s better when the kefir is more sour, then the muffins will turn out more tender.

4. First sift the flour and add it all at once. Place baking soda quenched with vinegar on top of the flour and mix with a whisk into a homogeneous mass.

5. Take cocoa powder and put it in the dough. Use cocoa powder, only the one you are confident in, with the highest content of cocoa beans, not the opinion of 80%.

6. Mix well with a whisk. The dough will be thick, a little thicker than homemade sour cream.

7. The silicone mold does not need to be lubricated with anything; the dough will not stick to it. Using a spoon, spoon the dough up to half the level of the molds. Take a teaspoon of Nutella and put it in the dough. Cover with chocolate dough. Do not fill the pan to the brim with batter, as the cupcakes will rise a lot during baking. Place in a preheated oven to bake for 30 minutes at 180C. The readiness of the cupcakes can be seen by the cracks that form during baking.

Place the dough in the molds in an oven preheated to 200ºC for 25-30 minutes, then reduce the baking temperature to 180ºC and 10 minutes before ready - to 160ºC. Ingredients:

250 g flour, 250 ml kefir, 250 g semolina, 250 g sugar, 3 eggs, 100 g butter, 1 packet of vanillin, 1 packet of baking powder.

Preparation:

Pour semolina into warm kefir and mix well. Separately, beat eggs with sugar and add to kefir. Stirring constantly, carefully add the flour, and at the very end add baking powder and warm butter. Mix the dough well and add cinnamon or ginger if desired. Then pour into molds and place in an oven preheated to 190ºC and bake for 30 to 40 minutes.

Kefir muffins with orange zest

Ingredients:

1 stack kefir, 2 cups. flour, 2 eggs, 1 tsp. soda, 1 cup. powdered sugar, 100-150 g butter or margarine, 3 tsp. orange zest.

Preparation:

Mix the eggs with powdered sugar with a mixer or whisk until smooth, then add kefir, mix everything again, then add melted margarine or butter, then flour and soda. Add the orange zest at the very end. Mix everything and pour into prepared molds or one large mold and place in an oven preheated to 180ºC for 20-25 minutes. Finished cupcakes can be decorated with powdered sugar and a mint leaf can be added on top.

Kefir cupcakes “Marble”

Ingredients:

3 stacks flour, 1 cup. kefir, 2 eggs, 1 cup. sugar, 200 g butter margarine, 1 tsp. soda, 2-3 tbsp. cocoa, 1 packet of vanilla sugar, salt - on the tip of a knife.

Preparation:

Add eggs, sugar, vanilla sugar, salt and soda to kefir. Melt the margarine and add to the dough. While stirring, gradually add flour. Divide the dough into two parts, add cocoa to one of them. Grease muffin tins and pour light and dark batter into each one alternately. Preheat the oven to 180ºC. Place the baking sheet with the muffins at the very top of the oven and bake until done. Be sure to check readiness with a match or toothpick. Sprinkle the finished cupcakes with powdered sugar.

Ingredients:

2 stacks flour, 1 cup. kefir, 1 cup. sugar, 150 g cottage cheese, 180 g butter, 1 packet of vanillin, 1 packet of baking powder.

Preparation:

Mix sugar with kefir, add cottage cheese, then add flour and baking powder, pour in melted butter and beat well until smooth. Let the finished dough stand in a warm place for 5 minutes. Pour the dough into greased molds and place in the oven preheated to 220ºC, immediately reduce the temperature to 190ºC and bake until done. Readiness can be determined with a match; if the match is dry after piercing, it means the baked goods are ready. Remove the finished muffins from the molds while they are warm.

2 stacks flour, 1 cup. kefir, 3 eggs, 1 cup. sugar, 1 bar of dark chocolate. 1 tbsp. cocoa powder, 2 tsp. baking powder, vanillin - to taste.

Preparation:

Mix eggs with sugar, add kefir and mix. Add baking powder, vanillin to the flour and, stirring constantly, pour the flour into the egg-kefir mixture. Knead the dough to a consistency similar to thick sour cream. Place half of the dough in molds greased with vegetable oil, and add cocoa to the second half of the dough and mix well. Place a surprise in each mold - a piece of chocolate. Place a layer of chocolate dough on top of the chocolate and place in an oven preheated to 180ºC for 25-30 minutes. Let the finished cupcakes cool slightly in the pans.

Cupcakes with raisins with chocolate glaze

Ingredients:

800 g flour, 400 ml kefir, 4 eggs, 400 g sugar, 200 g raisins, 40 ml milk, 70 g chocolate, 2 bags (20 g) vanilla sugar, 2 tsp. soda, 2 tbsp. table vinegar, coconut flakes - to taste.

Preparation:

Beat eggs with sugar, add vanilla sugar, kefir and vinegar. While stirring, gradually add flour and soda, add raisins and knead the dough. Grease muffin tins with vegetable oil or margarine and fill them halfway with dough. Bake the cupcakes at 180ºC for 20-25 minutes. Place the finished cupcakes on napkins and start preparing the glaze. Melt the chocolate with milk in a water bath. Stir until smooth and dip the cupcakes, tops down, into the prepared frosting and remove. Once the chocolate has set on the cupcakes, sprinkle the coconut on top.

Ingredients:

3-3.5 stacks. flour, 500 ml kefir, 200 g margarine, 1 cup. semolina, 1 cup. walnuts, 2 eggs, 2 cups. sugar, 1 tsp. soda, 1 tsp. table vinegar.

Preparation:

Pour kefir and vinegar over the semolina and let it swell while the remaining ingredients are prepared. Melt the margarine over low heat, add sugar, stir and beat in the eggs. Pour in kefir and semolina. Stir and add chopped nuts. While stirring, add flour and soda. The dough should look like pancakes. Pour it into greased molds and place in an oven preheated to 180ºC for 20-30 minutes.

Kefir muffins with prunes

Ingredients:

3 stacks flour, 1.5 cups. kefir, 3 eggs, 1.5 cups. sugar, 30 g prunes, 1 tsp. baking soda.

Preparation:

Break the eggs into a deep bowl, add sugar and beat with a mixer. Then pour in kefir, add flour, add soda and beat again until smooth. Spoon the batter into the silicone molds, filling the molds less than halfway. Then add pieces of prunes and place the muffins in an oven preheated to 190ºC for 20-30 minutes.

Ingredients:

1 stack kefir, 2 cups. flour, 2 eggs, 100-120 g of any jam, 2 tbsp. sugar, 2 tbsp. breadcrumbs, 1 packet of baking powder.

Preparation:

Mix kefir with sugar and jam, add eggs to this mixture, then flour with baking powder and mix until smooth. Sprinkle the mold or molds with breadcrumbs and pour in the dough. Place the molds with the dough in the oven, preheated to 190ºC, and bake until done. Decorate the finished cupcakes with nuts and honey or lemon balm leaves.

Honey cupcakes

Ingredients:

2 stacks flour, 1 cup. kefir, 1 cup. sugar, 3 eggs, 100 g butter, 1 tbsp. honey, 1 tbsp. vanillin, 2 tsp. baking powder.

Preparation:

Beat eggs with sugar and vanilla. Melt the butter and add it along with kefir to the beaten eggs, stir and add flour with baking powder. Knead the dough as thick as sour cream. Add honey, mix and pour (about ⅔ of the mold) the finished dough into greased molds. Place the cupcakes in an oven preheated to 190ºC for 15-20 minutes.

Ingredients:

2 stacks flour, 1 cup. kefir, 1 cup. sugar, 3 eggs, 100 g butter, 10 g baking powder, 3 tbsp. candied fruits

Preparation:

Beat the eggs together with the sugar. Pour kefir into the egg-sugar mixture and stir. Melt the butter and let it cool. Then pour the cooled butter into the kefir-egg mixture and stir. Next add the flour mixed with baking powder. Lastly, stir the candied fruit into the dough. Mix well and pour the dough into greased molds. Bake the cupcakes in the oven at 180ºC for 50-60 minutes. Check the readiness of the cupcakes using a toothpick or match.

Lemon cupcakes with kefir

Ingredients:

For muffins: 350 g flour, 200 ml kefir, 200 g sugar, 180 g butter, 2 eggs, 1.5 large lemons (zest and 3 tbsp juice), ⅓ tsp. soda, ½ tsp. salt. For impregnation: 6 tbsp. sour cream 20% fat, 5 tbsp. sugar, 3 tbsp. lemon juice and a little lemon zest, citric acid - on the tip of a knife.

Preparation:

Beat soft butter until white foam, gradually adding sugar. Continue whisking for about 8 minutes. Remove the zest from the lemons and squeeze out the juice, strain it through a fine sieve. Add 1 egg to the creamed butter and sugar, beating thoroughly for 3 minutes after each. Then add the lemon zest and beat for 1 minute. Add soda to the flour and sift through a sieve into another bowl. Add salt to the sifted flour and stir with a spoon. Add 2 tbsp to the dough with eggs. flour, 2 tbsp. kefir, 1 tsp. lemon juice and start stirring, gradually adding these products in the same proportions until everything is finished. Knead the dough from bottom to top until smooth. Grease the mold or ramekins generously with butter and fill them ¾ full. Place in the oven preheated to 180ºC for 50 minutes for large cakes and 20-30 minutes for small ones. Carefully remove the finished cupcakes from the mold and leave to cool if your molds are made of silicone. If you have metal pans, be sure to let the cupcakes sit under a towel for about 15 minutes. While the cupcakes are cooling, prepare the lemon curd. To do this, beat all the ingredients for soaking into a fluffy foam and put the whipped mass in the refrigerator for 30 minutes. Then dip the top of each cupcake in the soaking, hold in it for 30 seconds, turn over and carefully place on a plate. Sprinkle the tops of the finished cupcakes with lemon zest.

Classic recipe for kefir muffins

If you need to make regular cupcakes, you can use this recipe. Here's what you'll need:

  • one glass of kefir
  • 250 grams of flour
  • two eggs
  • 100 grams of sugar
  • 80 grams butter
  • 10 grams of baking powder or slaked soda
  • a pinch of vanillin
  • strawberry jam or any other to taste

This amount of ingredients makes six or seven cupcakes - it depends on the size of the molds.

Experienced confectioners advise taking out all the ingredients that are stored in the refrigerator about half an hour before starting cooking. This way all products will be at the same temperature.

First you need to put the butter in a large bowl, then add the sugar and eggs. All products should be mashed well; for this you can use a fork or a kitchen whisk.

Then you need to gradually pour in kefir, and the mixture must be constantly stirred.

Separately mix baking powder with flour. If soda is used, it is first “quenched” with lemon juice or vinegar. Here it is better to add vanillin. Everything is mixed well, then the egg-sugar-kefir mixture is added here. The dough needs to be mixed, and if it looks like biscuit, then everything is correct.

After that, take the molds, grease them with oil, and put the dough in them. To make neat cupcakes, the pans should not be filled completely. If the dough reaches the very edge, then the cupcakes will turn out with caps and will crack - everything is individual here, who likes it and how they like it.

You can also add jam to the muffins. Half a teaspoon will be enough. Place the molds with the dough in an oven preheated to two hundred degrees. The cupcakes are baked for about thirty to thirty-five minutes.

Chocolate cupcakes

For those who love coffee, we can recommend making chocolate muffins. The recipes are simple, in silicone molds with a photo, they are easy to implement. To make these cupcakes you will need:

  • two hundred milliliters of kefir
  • one egg
  • two hundred grams of flour
  • one hundred grams of butter
  • five tablespoons cocoa powder
  • baking powder - ten grams
  • one hundred grams of sugar
  • a pinch of vanillin

First, the flour must be combined with cocoa. Then add sugar, a pinch of vanillin and baking powder. Mix everything well and set aside.

In another container, break the egg, add butter (it should be softened) and kefir. Beat with a whisk until a slight foam forms.

Then we combine this mixture with another, where there is flour and cocoa, mix everything well. Ideally, the dough should be medium thick. Then we carefully fill the silicone molds and put them in the oven at two hundred degrees. After half an hour, we check - if the muffins are slightly cracked on top, then they can be removed from the oven. They should be served cooled for tea.

The simplest

To prepare them we will need: two glasses of kefir, a glass of sugar, a couple of eggs, 300 grams of sifted premium wheat flour, three tablespoons of vegetable oil, a little vanidin, a little baking powder for the dough. And we begin preparing muffins with kefir.

  1. Mix vanillin with flour (sift it first!), baking powder and sugar in a deep container. If desired, add grated nutmeg.
  2. In a separate bowl, beat the eggs and add kefir plus vegetable oil. Mix.
  3. Then combine both mixtures into one mass, stirring thoroughly without any lumps.
  4. Distribute the resulting thick dough into baking pans, but do not fill them to the very top.
  5. Bake at 180 degrees for 20-25 minutes. Remove the finished baked goods from the oven. It is most convenient to make kefir muffins in silicone molds. They always turn out rosy, tasty, fluffy and aromatic. They are very convenient to remove without fear of breaking their shape.

Kefir muffins with cottage cheese

Muffins with cottage cheese are also very easy to prepare, especially since the number of ingredients is minimal:

  • one egg
  • a glass of flour
  • 100 grams of cottage cheese
  • 100 grams of granulated sugar
  • 150 milliliters kefir
  • vanillin
  • baking powder
  • a pinch of salt

To prepare these muffins, you will need soft cottage cheese. It needs to be transferred to a deep container, add an egg, add sugar, baking powder, vanillin and mix. You can add a pinch of salt. While the dough is being prepared, you need to preheat the oven to 200 - 220 degrees. Then spread the dough into the molds and bake for about twenty to twenty-five minutes. The cupcakes need to be removed from the molds and cooled.

Apple and Cinnamon Muffins

Apple and cinnamon are a wonderful combination often used in desserts. This duo will make kefir muffins even more delicious, and the aroma and spiciness of the dessert will be unique. Here is the list of ingredients:

  • one big apple
  • one glass of flour
  • glass of kefir
  • two chicken eggs
  • pinch of cinnamon
  • one hundred grams of sugar
  • tablespoon sunflower oil
  • baking soda and lemon juice or vinegar

First, let's prepare the apple - it needs to be washed, dried a little and peeled. It is better to remove the peel, remove the center and seeds. Then the fruit must be cut into small thin squares. Sprinkle the apple pieces with a spoon of sugar and a pinch of cinnamon.

Then we take a container where we will knead the dough. Pour kefir, add oda on the tip of a knife, previously slaked in lemon juice. As soon as small bubbles appear, add two eggs to the mixture and mix. All dry products must be mixed in another container and mixed well. Only after this can you combine both mixtures in one bowl.

Then pour a spoonful of sunflower oil into the dough and mix everything well again. At the very end, add the apples and mix gently again.

These cupcakes are baked at 180 degrees. While the oven is heating up, fill the molds. The dessert needs to bake for about thirty minutes. To find out if the cupcakes are baked, you can pierce one with a toothpick. If there are no pieces of dough left on it and it is dry, then you can remove the baked goods from the oven.
