The whole process comes down to the formation of a simple filling, because the dough is used that has already been prepared in advance or purchased. We bring to your attention the option of a quick, but at the same time appetizing and satisfying baked goods with cheese, which can be used either as an independent dish or as an addition to the main meal.

Ingredients:

  • cheese - 350-400 g;
  • puff pastry (yeast) - 300 g;
  • egg yolk (for greasing the dough) - 1 pc.;
  • sour cream or mayonnaise - 4-5 tbsp. spoons

How to cook:

Since we are using ready-made dough, we start with the filling. Grate the entire portion of cheese on a coarse grater. In this case, any cheese is suitable for the pie, the main thing is that it is not too salty.

Transfer the cheese mass into a convenient bowl, add sour cream/mayonnaise and mix thoroughly. The filling should become a uniform and plastic mixture. If the mass turns out to be crumbly and dry, add a little more sour cream or mayonnaise.


Lightly rub a mold with a diameter of 20-22 cm with butter or cover it with parchment. Let's start the test. It is better to remove it from the freezer in the evening, leaving it in the refrigerator overnight. Using this method, the puff base becomes as “pliable” as possible, simplifying the cooking process. Roll out the defrosted dough into a thin flat cake and distribute it over the pan, leaving a border on the sides.


Place the cheese filling on the layered base of the future pie. Distribute in an even layer without gaps.


Fold the sides of the dough to the filling and coat with raw yolk mixed with 1 tbsp. spoon of water to form a golden brown crust.

Preparing a quick pie with herbs is divided into two stages: preparing the dough and filling. First, let's look at the test.

Ingredients:

  • about 1 cup of flour (you may need less);
  • 1 glass of low-fat kefir;
  • quicklime soda (one-third of a teaspoon);
  • about 3 tablespoons of vegetable oil.

Cooking method:

  1. Pour kefir into a deep bowl.
  2. Gradually add flour, stirring constantly.
  3. You want to knead a soft dough, so add flour until you achieve the desired result.
  4. In the middle of the kneading, do not forget to add soda.
  5. When the dough is ready, continue kneading it for about 7 minutes. It should turn out smooth for you.
  6. During final kneading, add vegetable oil.
  7. Cover the finished dough with a towel and set aside for about 20 minutes.

For filling:

  • about 300 grams of cheese;
  • 1 egg;
  • greens (urop, parsley);
  • 2 cloves of garlic (optional);
  • butter.

You can choose the cheese for the filling that you like best. It can be Adyghe cheese, feta cheese or mozzarella. Some housewives make a mix of cheeses, and then the dish turns out even tastier and juicier.

Cooking method:

  1. Take the cheese and mash it or grate it on a coarse grater.
  2. Beat the egg into the cheese and mix everything thoroughly.
  3. Add finely chopped herbs and garlic.

It is not necessary to salt the pie, since the cheese itself is salty.

Grate the hard cheese into a separate plate. Whether you grate it coarsely or finely doesn’t really matter, so choose for yourself how to do it. Mash the cheese or feta with a fork, beat one egg into the same bowl, stir and add grated cheese with chopped herbs, and then mix again. You shouldn’t add salt to the filling; the cheeses already contain salt, so you can simply over-salt and ruin the pie. Cut the sheets of finished dough into strips about 10 cm wide (if necessary, roll out the dough a little with a rolling pin). Preparation

It is necessary to heat the water; this is done because in a warm environment the yeast will start working faster and, accordingly, your dough will rise faster. But you should not heat the water above 35-40 degrees, otherwise you will get the opposite effect, since the yeast in hotter water will simply die.

Be sure to sift the flour in advance; this procedure will also save you from many troubles, such as lumps in the dough and small debris accidentally falling into it. Combine flour with yeast, salt and sugar, then mix well with your hands. But then you can add the egg, and then sour cream, these two ingredients will make your dough much tastier and more tender. After you have brought the consistency of the dough to perfect homogeneity, you need to carefully add warm water in small doses and, of course, continue to knead. And after kneading the dough again until it is completely homogeneous, you can add the next ingredient, namely vegetable oil, and now do not knead the dough, but rub it with your hands, thus getting rid of all the formed lumps. Now place the formed ball of filling on the circle of dough and, lifting the edges of the dough, pinch it at the top, just as if you were making khinkali. Knead the resulting pie, place another board on top, turn it over and knead it again with your hands. After which the pie is cooked in 7-10 minutes in an oven preheated to maximum.

Quick baked goods from puff pastry with suluguni cheese

Ingredients:

  • puff pastry – 0.2 kg;
  • suluguni cheese – 150 g;
  • cilantro;
  • parsley;
  • chard;
  • dill;
  • green garlic;
  • green onions;
  • wild garlic;
  • spinach;
  • egg – 1 pc.;
  • vegetable oil – 60 g;
  • salt;
  • pepper;

The composition of the greens mix, of course, can be changed at will, adjusting it to your taste. It must be chopped, but not very finely; before chopping, be sure to remove the stems from the chard.   • Garlic - 2 cloves;
  • Pine nuts – 20 g;
  • Olive oil - 80 ml.

Without rolling out or defrosting, cut the layers of dough into a circle shape - you need two layers. Set aside to melt. Grind the basil in a blender. Add, then chop garlic, pine nuts and Parmesan cheese. Combine all ingredients together, add olive oil, mix thoroughly. Add salt to taste.

Cut tomatoes and mozzarella into thin equal slices. On each of the (melted) circles, place overlapping circles of tomatoes and mozzarella. Bake each layer on the prepared baking sheet for 20 minutes. Apply basil sauce generously to one of the hot cooked circles and cover with a second layer.
