Ingredients

  • sugar - 150 g;
  • butter - 150 g;
  • eggs - 2 pcs.;
  • salt - a pinch;
  • baking powder - 12 g;
  • flour - 250 g;
  • cinnamon - a pinch;
  • apples - 3 pcs.;
  • lemon - 1/2 pcs.

Cooking process

Take the butter out in advance and let it sit for a while at room temperature until it softens. Add sugar to a bowl with soft butter.

Cream butter and sugar using a mixer (beat for 3 minutes).

Add eggs one at a time, beating the butter mixture with a mixer each time until smooth.

After adding all the eggs the mixture will be fluffy.

Add flour, baking powder, cinnamon and salt into the resulting fluffy mass.

Mix the dough with a spoon. It will be thick, sticky and viscous.

Peel apples, remove seeds. Cut the apples into small cubes, add lemon juice and stir.

Place apples into dough.

Mix apples with dough. There are quite a lot of apples in this muffin recipe (approximately 1:1 ratio of apples to dough).

Place the dough in each mold (I previously put a paper liner in each muffin tin, but you can, of course, cook without them), filling 1/3 of the volume. Bake apple muffins in a preheated oven for about 30 minutes at 200 degrees.

The finished cupcakes will be slightly golden in color. From the specified amount of products I got 20 apple muffins.

Technology:

  2. Then pour milk into the mixture and stir.

Preparation:

1. If they are dry, prepare raisins in advance. Soak very hard raisins overnight; you can use rum, cognac or liqueur instead of water. Soft raisins simply need to be washed well, dried, and can be blotted with a paper towel. Roll in flour.

2. Melt butter with honey and sugar in a water bath. Cool until warm.

3. Add spices and soda to the flour (do not extinguish!), mix well with a whisk.

4. Combine kefir with eggs and mix.

5. Knead the dough: add a little flour to the melted honey and butter, mix, then add the eggs with kefir, then the rest of the flour. Knead the dough to the consistency of thick sour cream. It does not pour, but falls from the spoon.

If the dough turns out to be thicker, add 50-100 grams of kefir or water.

6. Wash the apples, remove the skin, cut into 4 parts, cut out the core. Cut into small cubes and pieces. Sprinkle with lemon juice, stir so that all the pieces are moistened with juice. Lightly roll in flour, 1 tablespoon of flour from the total amount will be enough.

7. Add apples and raisins to the dough, mix.

8. Place the dough in the mold. It should be approximately two-thirds full.

I have a silicone cake pan. It's too big, so it's half full.

Bake in an oven preheated to 180 degrees for about 60 minutes. Check for doneness with a match or wooden barbecue stick.

9. Serve cooled with tea or coffee. The cupcake is very tender and moderately sweet. If the sweetness is not enough, you can sprinkle the cupcake with powdered sugar or cover it with icing, preferably white.

Hello, dear friends! After our get-togethers with Charlotte, I still had apples, but I wanted something new.

Then a friend gave me new silicone cupcake molds, so why not try it out?! So I decided to combine business with pleasure and make muffins with apples.

I baked it twice, that is, there will be two options. The first option is an experiment, and the recipe is new to me, but here I also decided to mix one third of wheat flour with corn flour. I’ll say right away that I didn’t like it. The cornmeal added significant weight to the muffins.

That is, this is a case where I tried a recipe and didn’t really like it. I realized that I did something wrong and am sharing my experience with you.

So, for muffins with apples you will need

  • Wheat flour – 300 grams
  • Cane sugar – 100-150 grams (depending on the acidity of the apples)
  • Milk – 100-120 ml
  • Egg - one
  • Vegetable oil – 50 ml
  • Apples – 2-3 pieces (depending on size)
  • Baking powder – 1 teaspoon
  • Cinnamon – 1 teaspoon
  • Salt - a pinch
  • Cupcake tins – 6 pieces

In my photo, in addition to regular flour, you see a glass of corn flour, but I repeat, I would not recommend mixing, take regular flour.

You can use regular sugar, and next time I won’t add cinnamon either. These are the amendments I would recommend making to this recipe.

How to make apple muffins

We start, as usual, with apples, since this is the longest. Peel and cut into small pieces. You can also grate it, but I like it in pieces.

My apples were sour, I decided to add two tablespoons of sugar. Look at your apples. If you add cinnamon, then add it to the apples too.

Sift the flour and mix with baking powder, sugar and cinnamon. That is, mix the dry ingredients.

Mix the egg well with vegetable oil and milk.

Then mix the dry ingredients with the liquid ones and add the apples. The dough turns out quite thick.

Place the dough in molds and place in the oven, preheated to 180 degrees for 20-25 minutes.

As always, check readiness with a wooden toothpick.
