Cupcake "Marble"

Marble cake is perhaps one of the most beautiful varieties of this popular type of baking. In addition to taste, its beauty includes its beauty: when cut, it looks very impressive.

I made marble cake according to my favorite recipe - with sour cream.

Ingredients:

  • Cocoa powder (4 tbsp cupcake; 4 tbsp for frosting) - 8 tbsp. l.
  • Wheat flour / Flour - 2 cups.
  • Baking powder - 2 tsp.
  • Sour cream (+ 3-4 tbsp for glaze) - 500 g
  • Chicken egg - 4 pcs
  • Sugar (+ 3-4 tbsp for glaze) - 2 cups.
  • Vanillin - 1 tsp.

Recipe:

Beat eggs with sugar in a bowl until white.

Add sour cream, flour, baking powder. Mix everything.

Divide the dough into 2 parts. Add cocoa to one part of the dough and mix. In the second - vanillin (if vanillin or vanilla extract is dark in color, it is better to add it along with cocoa to the dark part of the dough).

Place the first part of the dough in a form covered with parchment paper, then, on top, the second part of the dough (you can divide the dough into 2 parts, like cakes). Use a silicone spatula to make a couple of circular movements, up and down (do not stir too much, otherwise the dough will be a uniform color). The dough should mix in beautiful patterns.

Place in an oven preheated to 180-200 degrees and bake until done (the cake should rise and turn golden). Remove the cake from the pan and, while still hot, brush with glaze (mix sugar, sour cream and cocoa until smooth). Let cool. This recipe can also be prepared in a slow cooker. The mold must be greased, place the dough in the same order in the multicooker bowl and set the “Baking” mode for 50 minutes. Then take it out, brush it with glaze and let it cool.

You can decorate with cream, confectionery sprinkles, etc. Bon appetit!!!

How to make marble cake:

Soak cocoa powder in hot water. Leave for 10-15 minutes so that the cocoa is saturated with moisture (this will allow the chocolate flavor to become stronger in the dough).

Beat the eggs with a mixer at high speed.

When the egg foam appears, begin to add sugar in a thin stream. We do not stop the mixer - let the sand immediately mix into the egg mixture and not settle to the bottom.

Beating eggs and sugar well is the key to an airy, tender cake. Try to saturate the egg-sugar mixture with air as much as possible.

Compare the first photo and the one below: the egg mixture has become much lighter, thicker, I can’t even believe that there are yolks there. Sometimes you get the feeling that there are only whites in the bowl, it seems so light.

The power of my mixer is 350 W, I beat at maximum speed for 8-10 minutes to achieve the desired result.

Pour vegetable oil (110 ml) into the dough. Mix.

In a separate container, mix flour (160 g). This is a full (heaped) faceted glass with a volume of 250 ml.

Add baking powder to the dough (1 heaped teaspoon).

Now thoroughly mix the baking powder into the flour. The better we distribute it in the flour mixture, the more homogeneous the dough will be.

Sift the dry mixture again.

Add flour in parts to the main dough. Another sure sign that the eggs and sugar are beaten correctly is when the flour does not “sink”, but is held on the surface.

Using a spatula, gently lift the dough from bottom to top, stirring in the flour. We do not use a mixer at this stage! We need to retain the accumulated air in the dough so that the dough is fluffy and tender.

Now divide the dough into two parts. You can distribute the dough by weight, or you can do it by eye.

To one part we add cocoa, which we brewed with water.

We will add orange juice and zest to the other, light part. Using a fine grater, carefully remove the zest.

Squeeze the juice from the orange slice by hand (2-3 tablespoons of juice).

Add the peeled zest. Try to remove only the top layer, because the white “cotton” layer of the orange is very bitter.

Grease the mold with oil and sprinkle with flour.

The diameter of my mold is 24 cm. This is a special silicone mold for baking cupcakes. The hole in the middle allows hot air to pass through and thoroughly bake the cake. You can bake this cake recipe in any shape, such as a brick loaf or a regular round cake pan.

First pour the light dough into the mold.

Then carefully spoon in the dark chocolate batter using a spoon. You can, of course, not be careful, but pour it all out at once. This fact is not of particular importance; it all depends on whether you want thin, elegant patterns, or agree to a chaotic alternation of black and white layers. I usually spread it out with a spoon, then take a wooden skewer or toothpick in my hands and make streaks by hand to get a beautiful pattern.

The oven should be well preheated before you place the marble cake in the oven. I set it to heat up as soon as I start beating the dough. Set the heating to 175°C, and bake at the same temperature. The chocolate orange cake takes 35-40 minutes to bake depending on the power of your oven. Check the readiness of the baked goods with a wooden stick; if it comes out of the dough dry, the cake is ready.

Sprinkle the chocolate cake with powdered sugar through a strainer. You will get a smooth, beautiful snow-covered surface on a dark dough. It is better to leave the cake on a wire rack until it cools completely (so that the bottom is in good contact with the air and the cake does not get wet).

The cut of the cupcake inside turns out to be very beautiful: the light dough, combining with white, forms either clear patterns, as, for example, in the following photo:

Sometimes thin and graceful stains, as in the photo below. Every piece of marble cake is a surprise. I'm always interested in cutting it open and seeing what's inside.

The orange and chocolate layers complement each other perfectly. Chocolate and orange are a classic; this combination cannot be a loser.

Ingredients

  • 1 ⅔ tbsp. flour
  • 1 tbsp. Sahara
  • 2 large eggs
  • 90 g butter
  • 200 g sour cream
  • 1 teaspoon baking powder
  • 1 tbsp. spoon cocoa
  • 1 tbsp. spoon of rum

Preparation

Make the cake batter. Place soft butter in a bowl, add sugar, and beat well using a mixer. Add the eggs one at a time, beating thoroughly after each.

Add sour cream and beat again with a mixer until fluffy.

Sift the flour and baking powder into the butter mixture and stir.

Pour a little less than half the dough into another bowl. Add cocoa to a smaller portion and stir.

Pour rum into the chocolate dough and mix again.

Preheat the oven to 180 degrees. Grease a rectangular mold with high edges (silicone or glass) with vegetable oil. Place some dough with cocoa.

Pour a third of the white dough on top. Fill out the form, alternating both types of dough.

Ingredients:

  • granulated sugar - 270 grams;
  • chicken eggs - 4 pieces;
  • 1st grade flour - 420 grams;
  • pasteurized milk - 230 ml;
  • slaked soda - 7 grams;
  • high-quality margarine - 235 grams;
  • cocoa powder - 3 tablespoons;
  • butter - 1 spoon.

Preparation:

  1. We begin preparing the marble cake, according to the specified recipe with photos step by step, by preparing the main dough. To do this, we need a large bowl in which the mass will be directly mixed. Four eggs are broken into it, and then one and a half glasses of granulated sugar are poured into it. Mix everything with a whisk or spoon until the sugar is completely dissolved.
  2. Then the margarine is placed in a bowl and heated in the microwave; if there is no margarine at home, then it is replaced with any butter. The finished fat mass is slightly cooled, and only then added to the mixture of eggs and sugar. You should also add cow's milk and a little slaked soda. Baking soda is extinguished with citric acid or vinegar, and lemon juice is also used. The resulting composition is thoroughly mixed.
  3. The next step is to gradually introduce flour into the mass; it is better to use a premium or first-grade product, and the flour should first be sifted through a sieve. The dough is mixed to obtain a uniform texture and then divided into three equal parts.
  4. It’s worth adding a couple of spoons of cocoa to one part; if your family loves the chocolate taste, you can add more of this product, but the mass will become thicker; it should be diluted with milk. The resulting dough is mixed well so that there are no lumps of cocoa left in the mixture. Now take a mold and grease it with oil, first pour part of the white dough into it, pour the dark mass on top, and fill everything with white dough.
  5. If you wish, you can take a long skewer and run it through the entire mass of dough. This way, the parts of the dough will be mixed and the pattern will be more interesting. The mold is placed in the oven for forty minutes, it is best to set the temperature at 180-200 degrees. The finished dessert is served with chocolate sauce, sprinkled with powdered sugar.

Marble cake with kefir

Kefir cake is the simplest homemade cake. It is good because it is prepared from ordinary ingredients that any housewife always has on hand. Today we are making marble cake.

Ingredients:

1. To prepare the recipe you will need pumpkin puree. It's quite simple to do. Cut the pumpkin into pieces, place in a baking dish to bake in the oven until done.

2. Then mash the baked and soft pumpkin in a way convenient for you to get pumpkin puree.

3. Prepare pumpkin dough. Place flour in a bowl, add baking powder, a pinch of salt and 1 tsp. orange zest. Stir.

4. In another bowl, combine the eggs and sugar until well mixed.

5. Add pumpkin puree to the egg mixture with sugar and mix.

6. Add 50 ml of refined vegetable oil to the pumpkin mass and mix again.

7. Pour the pumpkin mixture into the prepared flour with baking powder and orange zest. Mix everything with a spoon so that you get a beautiful pumpkin dough.

8. Prepare chocolate dough. To do this, place flour, baking powder, vanillin, cocoa and a pinch of salt in a cup. Mix all dry ingredients.

9. In another bowl, mix: eggs, soft butter and sour cream.

10. Now, pour the liquid egg-cream mixture into the dry cocoa mixture. Mix everything with a spoon to form a chocolate dough.

11. In the end, we ended up with two doughs: pumpkin and chocolate.

12. Use a spoon to pour one layer of dough after another. You will see how beautifully the layers will fill the rectangular silicone mold.

13. Bake the dough in the oven for 1 hour at 180 degrees C.

14. Prepare orange glaze. To do this, pour orange juice into 100 g of powdered sugar. Do not pour out all the juice at once, but do it gradually to get the desired consistency.

15. Drizzle the orange flavored frosting over the top of the marble cake.

1. Chop chocolate glaze or chocolate and melt in a water bath. Mix 200 g of butter with two types of sugar. Separate the eggs. Mix the egg whites with salt. Mix 250 g of flour, starch and baking powder with egg yolks and butter. Add orange zest and juice, mix with egg whites.

2. Divide the dough into two halves. Add 100 g of melted chocolate and milk to the first half. Secondly, liquor. Place the dough in a greased, floured Easter cake pan (about 2 liters in volume). Draw spirals using a fork. Bake in preheated oven for about 1 hour. Then let it cool and remove from the mold.

3. Using the remaining chocolate, draw stripes on the cupcake. Garnish with candied orange and lemon balm pieces.
