: I have never cooked sweet soups, although my husband spent a long time trying to persuade me to try it. Finally, his persuasion had an effect, and I made up my mind. I took the simplest recipe, “like in kindergarten.” First of all, wash and soak the rice in water.
While the rice is soaking, take the raisins - I have a spoonful of dark and white - wash them and pour them into the pan.
We also rinse the dried apricots and prunes.
Cut into small pieces.
Pour all the dried fruits into a saucepan and add about 1 liter of water.
Let's add rice.
And put it on medium heat.
When it starts to boil, reduce the heat and add sugar to taste.
Cook the dried fruits and rice until soft.
Mix starch with water, I shook it in a bottle.
Pour into the soup and let it boil.
I added a little vanilla at the end for flavor, but it’s not for everyone.
Serve with sour cream or just as is.

On hot days
Let's start with the menu for kids. Fruit soup is a great way to introduce your child to new foods. At an earlier age, you should carefully choose the ingredients so that you don’t have to look for a remedy for food allergies in pharmacies.
Many mothers begin to notice a decrease in appetite in their babies with the onset of hot summer days. Pediatricians recommend preparing lighter meals for children and not waiting for empty plates. However, not a single active toddler will refuse such a delicacy as fruit. In the absence of fresh ingredients, dried fruits are also perfect, so we will present two versions of the dish.
Rice + fresh fruit
In summer and autumn, feel free to go to the nearest market for fruit or to your own garden.
To prepare jelly rice soup you will need:
- 2 liters of water;
- 1 kg of fresh fruit (pears, apples, grapes, cherries, apricots, cherries or peaches);
- 50 g sugar;
- 3 tbsp. l. starch;
If you are cooking, pay special attention to the processing of all components. Berries and fruits must be thoroughly washed and all twigs and seeds removed, and then cut into small pieces.
We put the ingredients into a pan of boiling water and cook for 10-15 minutes. This method of preparation will help not to lose all the vitamins. We dilute the starch in a small amount of water and add it to the soup. The liquid must be poured in a thin stream and stirred at the same time to avoid the appearance of lumps. Rice is cooked separately.
When serving, pour some rice into a plate and pour in the soup. You can decorate the dish with a mountain of whipped cream or offer your little gourmet a sponge cake.
Dried fruit soup with casserole
Required ingredients for soup:
- purified water – 1 l;
- granulated sugar – 4 tbsp. l.;
- dried fruits – 150 g;
- sour cream – ¼ cup;
- potato starch - 1 tbsp. l.
Required ingredients for the casserole:
- cottage cheese – 250 g;
- semolina – 1 tbsp. l.;
- egg – 1 pc.;
- sugar and salt - to taste.
First, rinse the dried fruits under running water and soak for one hour. Then put the dried fruits into a saucepan, cover with purified water and boil for about twenty minutes. Then add granulated sugar and continue cooking for another five minutes.
Separately, dilute the starch in a small amount of water and, constantly stirring the soup, pour in the starch in a thin stream.
Stir and let the soup come to a boil.
While the soup is cooking, you can prepare the cottage cheese casserole. Grind the cottage cheese through a sieve and mix with sugar. Add semolina and salt, then beat in one egg. Bring the mixture to a homogeneous state and place in molds or in one large form.
Place the casserole in the oven and cook until golden. Now take portion plates, pour out the fruit soup and add a portion of the casserole, add a spoonful of sour cream and serve. Really delicious.
From dried fruits
You can easily prepare fruit soup in winter and spring, even before seasonal fruits appear. To do this, you just need to stock up in the summer or buy the necessary dried fruits in the store.
Ingredients:
- 2.5 liters of water;
- 500 g of dried fruits (raisins, figs, apples, dried apricots, pear);
- starch - 3 tbsp. l.;
- 2 tbsp. l. Sahara.
Dried fruits should be washed thoroughly and chopped if necessary. As in the previous recipe, boil water and only then add dried fruits. Cooking time: 30 minutes. At the last stage, add diluted starch and wait for it to thicken.
This particular recipe is reminiscent of a kindergarten kitchen, where dried fruits are often used.
In addition to rice, sweet soups can be supplemented with semolina dumplings, pasta, rolled oats and crackers. Thus, you get a fairly satisfying dish that is suitable not only as a snack, but also for a full lunch.
Compote, like in kindergarten
Reading time - 5 minutes.
Every person originally from the USSR knows that compote is an exceptionally tasty, moderately sweet drink. This taste has been ingrained in memory and consciousness since childhood. 1/4 of the level in the glass is always occupied by boiled dried fruits, the rest is the drink itself. The compote that was brewed in kindergarten is not worth trying to brew from current mixtures - both frozen and dry fruits have lost a lot in quality - the result will be a very sweet drink, and only the aroma and shade of taste will be fruity. To achieve serious fruit preservation, you need to put kilograms of such fruits in a pan. Real compote is brewed from selected dried fruits, dried without any preservatives, the concentration of which makes the drink not so much cloying as concentratedly fruity.
The rest of the compote recipe is the same as in kindergarten
, very simple.
Dried fruits are taken, preferably homemade: apples, prunes, dried apricots, raisins, pears - in equal quantities. To concentrate, like in kindergarten, you need to adhere to the following scheme: fill the pan 1/6 with dried fruits, the rest with water. If desired, sugar is added at the end, but not necessary. Fruit that has been dried should ideally be of the sweet variety, so sugar may not be needed. Cook the compote for a long time - first the pears for 15 minutes, and then all the dried fruits together for another 40-45 minutes, it is important to completely boil the fruits and ensure that their juices are completely dissolved in the water. Then the compote should be infused, covered tightly with a lid, for 5-6 hours, until completely cooled. If you have a thermos, put the compote there too, the result will be even better (in a day). For the little ones
As you know, the first complementary foods begin with porridge and one-ingredient puree. During this period, the baby has many new experiences. Fruit puree soup is one of the most common dishes for picky toddlers under the age of one year.
Ingredients:
- apple;
- three apricots;
- egg;
- 1 tbsp. l. Sahara;
- 100 ml baby yogurt (liquid, without additives) or fermented milk mixture;
- 100 ml water;
- semolina - 1 tbsp. l.
First stage
. Wash and peel the sweet fruits thoroughly, then cut into small pieces. Place apricots and apples in a saucepan, fill with cold water and cook for about 15 minutes. Soft apple slices will tell us about readiness.
Second phase
. Take only the yolk from a boiled egg and mash it with a fork. We wait until the fruits have cooled a little and grind them using a blender. Add sugar and mix everything again.
Third stage
. Place the pan on the stove and add semolina. Without ceasing to stir, cook the fruit soup for five minutes. At the end, add the yolk and yogurt, then mix everything thoroughly again.
Fish soup
To prepare we will need:
- water - two liters;
- lean fish fillet - 250 grams;
- millet - three tbsp. spoons;
- carrots - one (small size);
- onion - one piece;
- potatoes - two medium-sized pieces;
- salt.
- Wash the fillet thoroughly and cut into small pieces.
- We sort the millet and wash it. Let it cook until half cooked.
- Wash the vegetables, peel them. Cut the potatoes into wedges or cubes.
- Finely chop the carrots and onions.
- Pour the required volume of water into the pan. Bring to a boil, add salt, add half-cooked millet. After about three minutes, add the potatoes. We continue to cook over low heat (it is important that the soup continues to simmer slightly) for about seven to ten minutes.
- Add prepared fish, onions and carrots. Cook until the ingredients are ready.
- If desired, at the end of cooking the soup or already in the plate, you can add finely chopped herbs, for example, parsley.
Now you know what soup is like in kindergarten. Not all children like to eat the “first course,” so the parents’ task is to prepare a soup that will please even the most picky child. Use any of the recipes outlined in this article. You can make your own adjustments and combine components from different recipes. The main thing is to remember that for children the soup is prepared without frying; the vegetables are sautéed or added raw. Also, do not forget that soup for children is not allowed to be prepared with the first broth. After the meat is cooked, change the water and cook the soup in the second broth.
“Milkshake” on a plate
When the heat outside is unbearably hot, children's fruit soup is best served cold. Our next recipe belongs to the “quickie” category, because its preparation will take just a few minutes.
Ingredients:
- low-fat kefir or drinking yogurt without additives - 200 ml;
- 2 tbsp. l. lemon juice;
- ripe banana;
- honey - 1 tsp;
- fruits or berries with juicy pulp.
Using a blender, mix banana and kefir (natural yogurt). Add honey and lemon juice and beat well again. pour into a plate and decorate with chopped fruits, berries and your favorite breakfast cereals.
The child will certainly be interested in the colorful ingredients, and the mother will not worry about an empty stomach, because such a soup is quite filling and healthy.

For those with a sweet tooth
Depending on the amount of sugar, fruit soup can easily be classified as a dietary dish. However, our next recipe is for those who do not deny themselves sweets.
It will take you about thirty minutes to prepare a delicious chocolate grapefruit soup.
Ingredients:
- dark chocolate - 150 g;
- grapefruit;
- 1 tbsp. l. Sahara;

We only need the pulp from the grapefruit, so wash it thoroughly and remove the thick peel and all films.
Melt small pieces of chocolate in a water bath. Heat the cream separately and add it to the chocolate in a saucepan along with the sugar. Stir the soup until all ingredients are completely combined and pour into a plate. Place grapefruit pulp in the middle and sprinkle with a mixture of cocoa and cinnamon.

This is an easy-to-prepare dietary summer soup or fruit cold soup, in which you can use any berries and fruits available, which is very convenient. Also, instead of rice, you can take pasta, dumplings, lazy dumplings, and other cereals. In a word, the recipe is universal and with any option you get an unusual and tasty soup.
The soup is especially good in summer: during the fresh fruit season, cold soup on a hot day will be a lifesaver. However, in colder times of the year it is also appropriate: it can be prepared from dried fruits, frozen berries or fruits, or combine both options and eat the soup warm or hot.

The soup is prepared without meat and turns out light and low in calories. This is a dietary recipe. Children really like this unusual sweet soup.
Sweet dried fruit soup
Using various dried fruits, currently offered by retail chains in a wide range, you can prepare a delicious vitamin-rich sweet soup from dried fruits. This unusual soup is interesting both as a dessert and as a separate dish, and children will definitely like this dish. We choose dried fruits carefully, “correct” ones (that is, not treated with unhealthy chemicals), which do not shine and look rather inconspicuous.
Since we are not preparing compote, but soup, we will need some ingredients besides the dried fruits and water.
Sweet rice soup made from a mixture of dried fruits
Ingredients:
- raisins – about 100 g;
- dried apricots – about 150 g;
- prunes – about 200 g;
- figs – about 100 g;
- peach – about 100 g;
- rice - about 150 g;
- barberry;
- saffron;
- vanilla.
Preparation
Wash the rice and boil in enough water for 9-16 minutes (depending on the type of rice). Salt the excess water; if you want, you can also rinse the rice with boiled water.
Steam the prunes with boiling water in a separate container. When it swells, add salt to the water and remove the seeds; you can cut each plum into 2 parts.
Pour boiling water over the remaining dried fruits and add salt after 8-15 minutes. This is done to remove unhealthy chemical additives (possibly) present on dried fruits, used by unscrupulous manufacturers and trading structures to improve the appearance and increase the shelf life of dried fruits. Dried apricots can also be cut into pieces, but not too finely.
Place prunes, barberries and other washed dried fruits in a saucepan (or better yet, in a ceramic container) and pour 0.7-1 liters of boiling water and cover with a lid. You can also cook in a thermos. Let the soup steep for at least 4 hours. If we start boiling, we will inevitably lose vitamins. If you don’t want to wait, simmer the soup in a water bath for 20-40 minutes. Add cooked rice, season the soup with saffron and vanilla. If you want it sweeter, add a couple of spoons of natural honey. Serve warm or cold with unleavened crackers.
This soup can be served with natural milk cream separately.
You can, in some way, modify the recipe and prepare a sweet soup from dried fruits with milk. In this version, we prepare everything in the same way as in the previous recipe (see above), only after washing the dried fruits with hot water, pour them with hot milk and infuse. Of course, to prepare such dishes you can use not only the dried fruits listed in the recipe, but also others.
Summer soup
Ingredients:
- berries, fruits (any) – 0.5 kg.,
- water – 1 l.,
- sugar – 1-3 tbsp. (or to taste)
- starch – 2 tbsp.,
- rice - 0.5 cups,
- cream or sour cream optional
Preparation:
1. Wash the rice, add water and cook until tender, then place in a colander and let the water drain.
2. While the rice is cooking, put the water for the soup on the fire and wait until it boils. We prepare berries and fruits: wash and cut them if you use apples, pears, peaches, etc.
3. Place the berry-fruit mixture into boiling water and add sugar to taste. Bring to a boil, cover the pan with a lid and turn off the heat: after 10 minutes, the berries and fruits will be ready on their own.
4. Pour the starch with a small amount of cold water and stir until smooth.
5. Turn on the heat again, bring the pan with compote to a boil and pour starch into it in a thin stream. Stirring constantly over low heat, wait for the compote to thicken a little, then turn it off and let it cool.
Recently, the quality of starch has become worse and sometimes more of it is required for cooking, so if the compote does not thicken after adding starch to it, you can add additional starch. It is better to keep the thickness level to medium: not very thick, but not liquid jelly will be just right.
Place rice on a plate and fill it with cold or warm fruit jelly; you can put a spoonful of cream or sour cream on top. Stir the contents of the plate and enjoy the delicious fruit soup. Soup can be served not only for lunch, but also for dinner, and also as a dessert.
The soup is also good with lazy dumplings instead of rice or with pasta.
Sweetish-sour in taste, this soup is very pleasant and unusual, and it’s also easy and quick to prepare. This is the most delicious diet soup recipe!
Summer is that time of year when you don’t want to overload your body with heavy and hot food. But since we know that liquid is a necessary dish in the diet, we suggest you try making cold fruit rice soup using one of the recipes below.
Dried fruit jelly soup
I offer you a recipe for sweet soup. In terms of taste and quality, this is actually jelly, but I remember from childhood how we were given such a dish in kindergarten in the form of soup and we ate it with spoons. Let's indulge in nostalgia and diversify our Lenten menu.
We take dried fruits, prunes, raisins, it would be nice to have dried apricots (I didn’t have them, unfortunately) in approximately equal proportions.
We rinse very thoroughly, soak for a while, then rinse several more times. Cut our dried fruits into strips.
Bring about 2 liters of water to a boil and throw in our “dryers”, add 1 tablespoon of sugar
Add about 300 ml of apple juice to the pan
When all our fruit mixture has boiled, prepare the starch. Dilute about 2 tablespoons of potato starch (you want it to be “jelly-like” thick) in water
Add the starch mixture to our compote soup, let it boil and turn it off
Of course, the dish is not for everyone. My family, I admit, didn’t expect it, but they didn’t even have to put the pan in the refrigerator - they ate it in the evening. Delicious when served cold. Bon appetit!

General description of the dish
To make your own cold soup from fruits and rice, you can use both fresh and frozen fruits, as well as dried fruits. Berries can also be ingredients here. All of them need to be thoroughly washed, peeled and pitted, and then cut or grated.
If in a vegetable, meat or fish soup the water in which the main ingredient was boiled is used as broth, then for a fruit soup it will be nothing more than a compote or decoction.
Today, there are a lot of recipes on how to make fruit rice soup, and you can use dairy products, juices, jelly, and even carbonated drinks as a basis. To add zest to the dish, experienced housewives prefer to add chocolate, candies that suit the taste and consistency, as well as waffles or marshmallows. The most commonly used seasonings and spices are sweet vanilla, tart cloves and cinnamon, as well as essences, that is, concentrated solutions.
Secrets of cooking a light meal
Each of them has its own characteristics and subtleties, but we will share with you those recommendations that will be useful to you in any case.
- To prepare fruit rice soup, it is best to use those products that are currently in season;
- It is recommended not to heat treat those fruits and berries that can be eaten raw. This way you can preserve maximum beneficial properties (vitamins and minerals necessary for health), as well as aroma and taste;
- As with all things, check ingredients carefully before using them in your cooking. They must be fresh, without signs of spoilage. However, slightly mashed berries and fruits are also suitable for broth, since they will need to be mashed in any case;
- Many cold rice dishes are pureed before serving. In order to achieve the most delicate and palatable consistency, cooks recommend additionally grinding the soup mass through a sieve or cheesecloth with large holes;
- The ideal temperature for serving such a dish is ten to twelve degrees. To avoid waiting a long time for it to cool, you can add ice. But this only applies to some recipes.
