Proper kneading is another secret of making real pizza. First, yeast is dissolved in warm water. Add a little sugar and flour. Stir thoroughly and leave alone for 10 minutes.
As soon as the yeast begins to sparkle, pour flour into the dough in parts and cast a spell over the dough. “They conjure” is the right word, because you need to knead the pizza dough only with your hands, putting your soul into the process. The work lasts at least 8 minutes. At the end, add olive oil and knead for 10 minutes.
After kneading, the yeast dough is placed in a warm place, covering the bowl with a towel. Ideally, it should rest for several hours. Although no one follows this rule at home. However, you still need to start baking only after 1.5 hours.
The dough is kneaded to get rid of the smell of yeast and the formation of flat cakes begins. For regular baking, use a rolling pin. But not in the case of pizza.
The base for this dish is made only with your hands, stretching and leveling the dough to shape and thickness with your palms. The thinner the cake, the better, more evenly and quickly it will bake.
