  • wine vinegar 6% - 1 tbsp;
  • hops-suneli - 0.5-1.5 tsp;
  • hot and black pepper, salt to taste.

Beef

Beans

  1. Peel and cut the red onion into half rings. If you don't have red, you can use regular one. Place it in a deep bowl or mug, pour in 100 g of hot boiled water and 1 tbsp. l. vinegar. Let stand for 10 minutes and drain the marinade.
  2. Cut 250 g of boiled beef into pieces and place in a deep salad bowl.
  3. Then wash, dry and chop half a bunch of cilantro, which should be sent to the meat.
  4. Now you need to take 50 g of walnuts, chop them and put them in a salad bowl. If you wish, you can toast them for a couple of minutes in a dry frying pan to get crispy nuts.
  5. Wash the bell pepper, remove the stem and seeds, cut into thin strips and add to the dish. You can use half a red and a yellow pepper to add some color to the dish.
  6. Finely chop half the chili pepper. You can omit it if you are not a fan of spicy foods. Chili also needs to be added to the salad. Open the canned red beans, place them in a sieve and allow excess liquid to drain. If you wish, you can rinse it a little. Send the beans to the salad, add pickled onions, salt, pepper, a teaspoon of khmeli-suneli and two chopped cloves of garlic.
  7. Season the salad with 30 g of olive oil and 1 tbsp. l. 6% apple or grape cider vinegar. Mix everything and can be served.
  • Using the same classic recipe, you can prepare Tbilisi salad with chicken, replacing beef with it. This dish can be combined with absolutely any type of meat, try it and get an unusual dish in your own way.
  • Do not use 9% table vinegar for salad dressing.
    With it you can ruin its entire taste. A substitute for 6% apple cider vinegar can be freshly squeezed lemon juice or wine vinegar.

Mayonnaise is practically not used in Georgia. Therefore, vegetable oils are usually used as dressings not only for this salad. They can be mixed with hops-suneli, traditional for this country. wine vinegar or ground pepper.

It is preferable to boil beans for salad yourself rather than using canned ones.

Only the most tender beef, from a young animal, is suitable for this dish. Ideally it should be a tenderloin, but some other parts can be used. We already know about the subtleties and features of choosing beef.

Variations on the theme of Tbilisi salad also exist and their taste is no worse - chicken breast or boiled tongue fits perfectly into the recipe. This cannot be called the national salad of Georgian cuisine, but its special “Georgian character” is clearly felt.

This recipe can be considered a classic - almost the same ratio and number of components was originally. There is only one difference - the color of the beans. I just didn’t have a red one on hand, but I really wanted to please my husband with one of his favorite salads.

Recipe information

Ingredients:
  • beef pulp – 400 g
  • dry beans – 100 g
  • red bell pepper – 1 pc.
  • red onion – 1 head
  • walnuts – 50 g
  • cilantro – 1 bunch
  • vegetable oil – 4 tbsp. l.
  • salt, pepper - to taste.

Cooking method

“Tbilisi” salad, the recipe with a photo of which we are now considering, is more correctly prepared from dry beans. It must first be soaked for 3-4 hours. You can do this in the evening. Beans should be sorted, discarding damaged beans. Then you need to pour it into a spacious saucepan and fill it with water. Gradually the beans will absorb water and swell. Therefore, there should be a lot of liquid. On average, 100 g of dry beans requires 2 cups of cold water.


After the beans swell, drain the water. Then add fresh drinking water to the pan with beans and put on fire. After boiling, heat should be reduced to a minimum. After 30 minutes, pour 100 ml of cold water into the pan. This will significantly reduce cooking time. Half an hour after boiling again, add salt to taste. After another 15 minutes the beans will be ready. Place in a colander to drain the liquid.


You can boil the meat at the same time as the beans. This will take 45–60 minutes. When the beef has cooled, it must be cut into small cubes.


Wash the red pepper and cut it into large slices. The white partitions and the stalk with seeds need to be separated.


The remaining pulp must be cut into strips.


Chop the red onion into half rings or quarters. If the onion is very hot, then it is better to scald it with boiling water. Otherwise, the taste will drown out everything else in the salad. Sweet Yalta is ideal, but as we already know, storing onions of this variety is a little problematic - they rarely last until spring.


Rinse fresh cilantro with cold water, dry and finely chop.


Walnuts should be heated in a dry frying pan for 2-3 minutes to better reveal their taste and aroma. Then the kernels need to be crushed.


Combine all prepared ingredients in one bowl. Add salt and pepper to taste.


Mix everything and season with vegetable oil. Leave to brew for 30 minutes.


Salad ready.

According to the rules, the traditional “Tbilisi” salad dressing also includes chopped garlic, “Khmeli-suneli” spices and wine vinegar.”

Recipe with chicken breast or tongue


This “Tbilisi” salad with red beans, chicken breast or boiled tongue will appeal more to the female half.
It tastes very similar to the classic one, but its calorie content is lower, especially if you use boiled chicken fillet.

What we need:
  • red canned or boiled beans - 200 g
  • chicken – 200 g
  • red onion - 1 large
  • bell red pepper - 1 pc.
  • walnuts - 0.5 tbsp.
  • cilantro - 1 bunch
  • garlic - 1 clove
  • khmeli-suneli - 0.5 tsp.
  • olive oil - 2-3 tbsp.
  • wine or apple cider vinegar - 1 tsp.
Process step by step:
  1. Boil the meat and cool. You can fry it in a frying pan with a minimum of oil. Cut into cubes.
  2. Fry the nuts in a frying pan until the skins begin to peel off. Cool and chop.
  3. Chop the onion into half rings, the bell pepper into strips or cubes, and simply chop the cilantro.
  4. For the dressing, combine vinegar, oil, spices, and garlic pressed through a press. By the way, novice cooks often don’t know how to replace wine vinegar in Tbilisi salad. I recommend taking natural apple juice - it turns out just as good.
  5. Mix everything in a deep container, let it stand for 10-15 minutes and help yourself!

Secrets and tips

  • “Tbilisi” is a universal recipe! For example, cook it without any meat at all and it will turn out not only delicious, but also quite suitable for Lent or a vegetarian menu.
  • As with any other salads, you can and should experiment with this - this way you can create an exclusive original recipe. For example, add croutons and corn or replace the traditional dressing with homemade mayonnaise.
  • Few people know, but this salad can be served not only cold - when heated, the flavors of the dish are revealed even more. Can be heated in the oven at 60 degrees or in a water bath. The main thing is not to overheat!
