Let's learn with you how to make pies with various fillings from puff pastry that will not leave anyone indifferent. So, take the puff pastry out of the freezer in advance and leave it to defrost. During this time, boil the required amount of rice in salted water until cooked. Fry the minced meat in a separate frying pan in a small amount of vegetable oil, adding salt and pepper to taste. Peel the onion, chop into cubes and sauté until golden brown. Next, combine the minced meat with onions in a deep bowl, add boiled rice to this mixture, thoroughly stir the resulting filling and leave to cool. Gently roll out the puff pastry with a rolling pin in one direction and cut into small rectangles. After that, on one side of each, put the filling and make pies, carefully fastening the edges. Now place the products on a greased baking sheet and leave to stand for about 20 minutes. Beat the egg thoroughly with a whisk and coat the surface. Bake pies from store-bought puff pastry for about 20 minutes at a temperature of about 180 °C

Before preparing baked pies, take the puff pastry out of the freezer and leave it to thaw. In the meantime, we will prepare the filling with you. After this, sprinkle the table with flour, roll out the dough and cut it into squares. Next, put a spoonful of chopped apples on each, sprinkle with sugar, cinnamon and make envelopes, gluing first the first two opposite ends of the dough, and then the other two ends. Pies with potatoes
We will need (for 16 pcs):
- puff pastry dough - 4 plates (750 g)
- potatoes - 800 gr
- egg - 1 pc.
- butter - 50 gr.
- milk (optional)
- onion - 2 pcs. ( optional)
- sesame - 2 tbsp. spoons
- salt - to taste
- vegetable oil - for lubricating the sheet
1. Pour water over the potatoes, bring to a boil, add salt and boil until tender.
2. Now you need to decide what filling you would like to make. There are two options, the first is to use only mashed potatoes for this. The second is to make the filling from mashed potatoes with fried onions. Today I follow the simplest path and choose the first option.
If you want to choose the second option, then cut the onion into small cubes and fry it until golden brown in a small amount of vegetable oil.
3. Mash the potatoes, add butter, potato broth, or milk. When the puree (how to prepare it) is the desired consistency, add the egg white. Leave the yolk, we will need it. For the potato filling, it is better to make mashed potatoes a little thicker than we do for the side dish.
If you are making the filling with onions, add it to the puree. In this case, you can not add butter at all or add less. Taste the salt; if it is not enough, add salt to taste.
4. Give the filling time to cool.
5. Grease the table with vegetable oil and roll out one layer of dough on it. It should be rolled out in one direction, away from you, so as not to disturb the layers. You don’t need to press hard on the rolling pin, just roll it out evenly.
6. Cut the workpiece into 4 parts. Place a large portion of the filling on each one. To make the finished products tasty, they must have a lot of filling.
7. Roll into an envelope or triangle.
8. Cover a baking tray with baking paper, grease it with oil or use a silicone mat, and place the preparations on it. Do the same with the other three layers.
9. Grease with yolk. Thanks to it, the products will turn out rosy and appetizing. And sprinkle sesame seeds on top for beauty. After all, a dish is first determined by its appearance, so let’s make it attractive.
10. Place in an oven preheated to 180 degrees and bake for 30 minutes. The finished baked goods should have a beautiful golden brown crust.
11. Take out a baking sheet, remove the pies and place them in a large flat dish. Let cool slightly and serve with hot tea.
Classic cabbage pie
The time-tested recipe is suitable for both baked goods lovers and those who want not to overeat: the body spends a large number of calories on digesting cabbage, so this option is optimal in terms of energy production and expenditure.
Ingredients:
- Puff pastry, 500 g
- Butter, 140 g
- Small head of cabbage
- Eggs, 7 pcs.
- Salt, 3 teaspoons
Remove the cabbage leaves from the top layer and stalk, and then finely chop. Mix the cabbage with salt, knead a little with your hands and set aside for 15 minutes. At this time, boil the eggs, chop them and combine with shredded cabbage. Then melt the butter and pour it into the filling. The filling is ready. All you have to do is roll out the dough and cut into two equal sized rectangles. Place one of them on a baking sheet, then lay out the filling and cover it with the second part of the dough. Seal the edges properly and place the pie in the oven for 40 minutes at 180 C.
Pies with potatoes and mushrooms
Similar to the previous recipe, but only we add mushrooms fried with onions to the filling.
We will need (for 16 pcs):
- puff pastry dough - 4 plates (750 g)
- potatoes - 500-600 gr
- mushrooms - 300 gr
- egg - 1 pc.
- onion - 2 pcs.
- sesame - 2 tbsp. spoons
- vegetable oil - 5 tbsp. spoons
- salt, pepper - to taste
1. Boil the potatoes. Mash it into puree, add a little potato broth and egg white.
2. While the potatoes are boiling, cut the onion into cubes and lightly fry it in vegetable oil.
Puff pastries with minced meat
If you prepare minced meat in advance and defrost the dough, then in an hour the whole family will be able to enjoy delicious, aromatic baked goods with meat.
We will need (for 16 pcs):
- minced meat -500-600 gr
- onions - 2-3 pcs.
- dough - 4 plates (750 g)
- egg - 1 piece
- sesame - 2 tbsp. spoons
- spices, dried herbs
- vegetable oil - for greasing
1. Cut the onion into small cubes and add to the minced meat. You can, of course, grind it in a meat grinder, but you shouldn’t. Ground onion is very liquid, and the minced meat will also be liquid. But when we cut it, the minced meat will be the consistency we need. In addition, during the cooking process, the onion will gradually exchange juice with the meat, and this will make the filling much tastier.
2. Add spices and dried herbs to the minced meat. Good spices would be ground coriander, rosemary and cumin. They will give our products a simply divine aroma. You can add any dried herbs, but I add basil and parsley, as well as oregano.
3. Salt and pepper to taste. And add egg white. We will need the yolk to grease the baking surface. During the cooking process, it will acquire a beautiful golden color.
4. Mix the minced meat thoroughly until smooth.
5. Roll out one layer on a greased table. Don't forget that we roll it out in one direction so as not to disturb the layers. Cut the layer into four parts.
6.Place a significant portion of the filling on each piece of dough. Fold into an envelope or triangle. Place on a greased baking sheet or lined with a silicone mat.
7. Do the same with the remaining parts. Grease the finished pieces with yolk and sprinkle with sesame seeds.
8. Bake in an oven preheated to 180 degrees for 35-40 minutes. The pies will brown and become beautiful and very appetizing.
9. Take them out and place them on a large flat dish. let cool slightly and serve with hot tea.
Yeast-free puff pastry
Yeast-free puff pastry is great for making amazing puff pastries with different fillings. And sweet, and meat, and fish.
Of course, to get the right puff pastry, you need to roll it out a lot. Then rolling it up and rolling it out again is tedious work. But the result is worth it! In fact, the rolling itself does not take much time. Most of the time is spent resting the dough in the refrigerator between rolling out.
The classic recipe for a simple puff pastry without yeast is flour and water in equal quantities, salt and butter. We will add 9% vinegar and vodka to it. This will add fluffiness and elasticity to the finished baked goods. Puff pastry without yeast consists of flour, butter and cottage cheese in equal quantities. Creamy puff pastry is prepared from flour, butter, sour cream or cream in a ratio of 2:1:0.8.
Yeast-free puff pastry - cooking secrets
- You can prepare puff pastry without eggs and vodka, replacing their volume with water. But by adding eggs, the quality of the finished products improves. And alcohol makes them more fluffy and tasty. Vinegar in the dough helps increase its elasticity, and salt balances the taste.
- Baking made from puff pastry without yeast is prepared at a temperature that should not be lower than 210-220°C. If this condition is violated, oil leaks out of flour products and, as a result, they turn out to be thin and dry.
- This dough should not be left at room temperature for long as the fat will melt and the layers will begin to stick together.
- High-quality puff pastry has a neutral taste, so the taste of the finished product will be determined by the fillings used. If low-quality margarine was used when preparing puff pastry, it may have a corresponding aftertaste.

Yeast-free puff pastry recipe
Portions |
Ingredients
- wheat flour - 450 grams;
- butter -250 grams;
- water - 200 ml
- chicken egg - 1 piece
- salt - a pinch.
- table vinegar 9% - 3 teaspoons
- vodka - 1 tbsp. spoon.
Portions |
Ingredients
- wheat flour - 450 grams;
- butter -250 grams;
- water - 200 ml
- chicken egg - 1 piece
- salt - a pinch.
- table vinegar 9% - 3 teaspoons
- vodka - 1 tbsp. spoon.
Instructions
- Break a chicken egg into a 250 ml glass.
- Add salt, vinegar and vodka. Mix well so that no crystals remain.
- After this, we bring the volume to exactly 250 ml by adding water. Since eggs come in different sizes, you may need a little more or less water. The liquid part of the dough is ready.
- Sift about 350 - 400 grams of wheat flour onto a work surface or into a large bowl. Leave a little flour to adjust the density of the dough.
- Make a well in the flour and pour the liquid mixture into it.
- Knead the dough and knead everything thoroughly with your hands. Gradually the dough comes together into a ball.
- Knead the dough for at least 5 minutes until it becomes smooth and elastic. It is advisable to beat the dough on the table at least fifty times - just slap it on the surface.
- Transfer the finished dough into a bowl and cover with film. You can put it in a bag and tie it tightly. Let the dough rest at room temperature for an hour.
- Prepare the oil mixture. To do this, combine cold butter and 50 grams of wheat flour. This is best done using a food processor, but you can chop everything together with a knife until smooth.
- Place it on a sheet of parchment.
- Cover with a second sheet of parchment and roll the butter with a rolling pin. The result should be a fairly thin, about 10 mm, approximately square-shaped layer. Place the butter and rested dough in the refrigerator for 15-20 minutes.
- Then we take out and roll out the dough into a rectangular layer about 5 mm thick, measuring 25x30 cm.
- Place a layer of butter on the third part of the dough, leaving a couple of centimeters at the edges.
- Cover the butter with the free side of the dough and pinch the sides
- Next, fold the opposite side with oil onto the one with which we covered it before. It turns out that we have three layers of dough.
- Stretch the ends towards the side edges to form an even rectangle. Be sure to secure the ends tightly with finger pressure. Cover the dough with cling film and refrigerate for half an hour.
- Then take the dough out of the refrigerator and place it on a floured table with the short side facing you.
- Use a rolling pin to gently and moderately press the dough to distribute the oil.
- Let's start the next rollout. Roll out the puff pastry into a layer, the thickness of which should be about one centimeter. It is recommended to roll out the puff pastry by moving the rolling pin from the center to the edges. That is, we roll out the dough from the center to two sides: towards ourselves and away from ourselves.
- Visually divide the dough into three equal parts. First we wrap one part. Then we put the second part on it. It turns out like a book. This is called triple folding. Place the dough, covered with cling film, in the refrigerator for another half hour.
- We take it out of the refrigerator again and roll it out again, as in the previous step.
- Again, fold it into a book shape and let the dough cool for half an hour. It is advisable to perform two more rollings and two coolings in the same way.
- The yeast-free puff pastry is ready. Can be put in the freezer and used as needed. Before cooking, you need to defrost it in the refrigerator. From the specified amount of products, about eight hundred grams of wonderful puff pastry without yeast are obtained.
Pies with green onions and eggs
With the onset of spring and summer, we all feel a lack of vitamins. And by that time, the first “green vitamins” appeared in our summer cottages - and onions took pride of place among them. We enjoy eating it as an accompaniment to various dishes, and with no less pleasure we make a variety of baked goods using it. Puff pastries are one of them.
We will need (for 16 pcs):
- dough - 4 plates (750 g)
- egg - 6 pieces
- yolk - 1 pc.
- green onions - as much as you don’t mind (a good big bunch)
- sour cream or mayonnaise - to taste
- salt - to taste
- sesame (optional)
1. Boil the eggs, cover them with cold water and remove the shells. Cut into small cubes.
2. Cut green onions 0.6-0.8 cm thick.
3. Mix onions with eggs, add sour cream or mayonnaise. Or both in equal proportions. The filling should not be liquid or thick. In the first case, the finished products will “float”, and in the second they will turn out dry and tasteless.
4. Grease the table with vegetable oil and roll out the first layer. Cut it into four parts and put the filling on each part. We don’t feel sorry for it, we put in more of it. Fold the blanks into an envelope or triangle. Place on a greased baking sheet or lined with a silicone mat.
5. Do the same with the remaining three parts. Brush the pies with yolk and sprinkle with sesame seeds.
6. Bake in a preheated oven at 180 degrees for 30 minutes. They will brown and become beautiful and of course tasty.
Here we have products with the most popular and favorite fillings. As you may have noticed, working with the dough is the same everywhere. Well, that is if you use it in a ready-made version.
If you want to make the dough yourself, here is the recipe.
