- if you do not have time to prepare the dough, you can purchase ready-made layers at any grocery store;
- when using ready-made dough, it must first be defrosted under natural conditions;
- dough prepared independently must be given a little time to “rest”;
- chicken meat should be separated from the skin and bones, which can then be used to prepare sauce for the pie;
- since chicken meat is a bit dry, it must be marinated for at least half an hour;
- you can add prunes, dried apricots, mushrooms, cabbage, potatoes to the chicken pie; some housewives even put raisins in the filling;
- Brush the top of the pie with egg yolk, and to make it shiny, add a little salt;
- chicken meat should be pre-fried or boiled;
- Before baking, you need to make cuts on top of the pie so that all excess moisture comes out during the cooking process.
How to make puff pastry for a pie quickly?
If you decide to make puff pastry yourself, then, first of all, you need to decide on the method of preparing it. As you know, such dough can be kneaded with or without yeast. We present to your attention a quick recipe for puff pastry without yeast.
Compound:
- 2.5 tbsp. wheat flour;
- 1 tbsp. filtered water;
- ¼ tsp. table salt;
- ½ tsp. citric acid;
- 150 g vegetable oil.
Preparation:
- First of all, dissolve citric acid in water and put it in the freezer for 2-3 minutes.
- Be sure to sift the flour, it is better to do this 2-3 times - this will make the dough more airy.
- 2 tbsp. pour the flour into a container with high sides and make a small depression in the middle. Gently pour lemon water into the resulting hole, and then knead the dough.
- Lightly sprinkle the table with flour and lay out our dough. Knead thoroughly until the dough stops sticking to your hands, but do not beat it. Roll it into a large ball, wrap it in cling film and place it in the refrigerator for 30 minutes.
- Mix half a glass of flour with vegetable oil and also place in the refrigerator for at least 20 minutes.
- Take out the ball of dough and roll it out into a layer about 2-3 mm thick.
- Grease the rolled out layer of dough evenly with vegetable oil mixed with flour and roll it into a roll. Place in the refrigerator for half an hour, and after this time the dough can be used for baking.
Puff pastry balls step by step photo recipe
Ingredients:
- Chicken fillet - 700 gr.;
- Puff pastry (any kind, frozen store-bought puff pastry, whether it’s yeasted or not - it doesn’t matter) - 2 plates;
- Onions - 1 pc.;
- Greens (onion, parsley and dill) - 1-2 stalks each;
- Olive oil - 1 tbsp. spoon;
- Spices for chicken (I used 1/2 teaspoon each: store-bought chicken seasoning, garlic seasoning (can be replaced with 2-3 cloves of garlic), red hot pepper, freshly ground black pepper);
- Salt - to taste;
Balls are a puff pastry pastry that consists of a filling made from chopped chicken with onions and spices, wrapped in a narrow strip of store-bought puff pastry. Next, this thing is baked in the oven until beautifully golden brown.
Today we will prepare pastries from puff pastry, which are somewhat similar to balls, hence the name of the recipe.
Let's start preparing puff pastry balls with the filling. We wash the chicken fillet, cut it into small cubes (approximately 0.5 x 0.5 x 0.5 cm),

We cut both sheets of dough into these shreds, about 1 cm wide. As an experiment, I tried cutting into wider shreds (2 cm), but then the resulting baked goods don’t look much like balls, so you need to cut the puff pastry narrower...
Next, take a minced chicken meatball in your left hand (if you are, of course, right-handed), and with your right hand, begin to wrap a chopped piece of puff pastry onto the minced meat,
Then another, and another, until the strips of puff pastry are almost completely wrapped around the minced chicken,

Now let's prepare a fragrant and very tasty chicken pie with the addition of potatoes. We use ready-made yeast dough as a basis. You can also bake this pie by preparing the dough according to the previous recipe. For the filling, you can use a whole chicken or fillet.
Compound:
- 0.5 kg puff pastry;
- 0.5 kg of chicken meat;
- 3-4 potatoes;
- onion head;
- 1 chicken egg;
- a mixture of peppers and salt;
- 2 tbsp. l. sifted flour;
- vegetable oil.
Preparation:
- First of all, take the dough out of the refrigerator and defrost it at room temperature.
- In the meantime, let's prepare the filling. Wash the chicken, dry it, and then chop it coarsely.
- Fry the chicken meat in vegetable oil until cooked.
- Peel the vegetables and cut them thinly: potatoes into slices, and onions into rings.
- Place the vegetables in a bowl and season with a mixture of peppers and salt. You can add chicken spices if you wish.
- Sprinkle the table with flour and lay out the dough. It needs to be cut into two parts so that one of them is smaller than the other.
- Separate the cooled chicken from the bones and remove the skin from it, cut into small pieces.
- Roll out a larger piece of dough into a layer and place it on a baking sheet, having previously covered it with baking paper.
- Now lay out the onions and potatoes, evenly distributing the filling over the dough.
- Place chicken meat on top.
- Roll out a small piece of dough and cover the pie with it. We trim the excess dough into shape; by the way, it’s easy to make a decoration for the pie, for example, a braid. Now you need to pinch the edges of the pie and brush it with beaten egg yolk.
- Heat the oven to 190-200 degrees and place the pie in it. After 15-20 minutes, reduce the oven temperature to 170-180 degrees. Bake the chicken pie for about 25 minutes.

To prepare you will need:

Compound:
- 250-300 g puff pastry;
- 1 chicken egg;
- large onion;
- 400 g chicken meat;
- 250 g of mushrooms (preferably champignons);
- 150 g sour cream;
- vegetable oil;
- a mixture of peppers and salt.
Preparation:
- First of all, boil the chicken meat. It can also be fried. Cool the finished meat and separate it from the bones and skin.
- Wash the mushrooms, dry them and cut them into cubes.
- Peel and chop the onion.
- Fry the mushrooms and onions in vegetable oil until fully cooked.
- Cut the chicken meat and place it in a separate container. Add mushrooms and onions, sour cream, season with salt and a mixture of peppers, mix. The pie filling is ready.
- Divide the puff pastry into two parts, as in the previous recipe. Roll out most of it into a layer and place it on a baking sheet. Don't forget to line it with baking paper.
- Spread the filling onto the dough in an even layer.
