Usually I determine the amount of ingredients “by eye”, but today I will try to give a more accurate recipe.
We take the kefir out of the refrigerator in advance and warm it to room temperature. Pour it into a bowl, add a pinch of salt and stir.
Combine baking soda with flour and mix. And add it in small portions to the kefir, stir well until the lumps disappear. When combined with kefir, soda will extinguish and make the dough more airy. We adjust the thickness of the dough - the less flour we add, the more liquid it will be.
If necessary, add flour and knead until your hands feel the dough pleasantly soft and elastic. Then simply wrap the ball in cling film and leave it alone.
The suggested amount of flour may be slightly more or less, depending on the fat content of kefir.
