Cutlets, which today can be prepared from any type of meat, are considered a favorite dish of many people. You can make them “for yourself,” that is, by adding your favorite ingredients to the dish, for example, grated potatoes, flour, semolina, soaked bread, and so on. To prepare this dish, any type of meat is used, but I would like to pay special attention to turkey cutlets, which turn out very tender and tasty. It is almost impossible to dry them out during cooking, which means you will be able to make a truly tasty and appetizing dish by adding your favorite spices.
Recipe for minced turkey cutlets with cheese in the oven
This dish can be served with any side dish, as it will complement it perfectly. To make the cutlets more tender and tasty, we will cook them together with cheese, which is placed on top of the cutlets (this way they will become even more appetizing and will decorate the dinner table).
Ingredients:
- 500 grams of ground turkey or fillet;
- 2 slices of white bread (preferably old);
- 2 large spoons of sour cream (low-fat);
- bulb;
- 50 ml milk;
- hard cheese (the amount is arbitrary);
- salt;
- spices for minced meat or meat.
How to cook
If you decide to take not minced meat, but a whole piece of meat, you need to grind it 2 times in a meat grinder. If minced meat is used as the main ingredient, it should be completely defrosted. Soak the bread in milk: as soon as it softens, crush it with a fork (there is no need to drain the liquid). Then transfer the resulting mass into the minced meat.
Chop the onion very finely or grate it with a grater, then place it on a plate with the rest of the ingredients. Add sour cream, salt and spices. Mix the minced meat well - it should turn out a little runny, but the dish will eventually turn out juicy and soft. Before putting the resulting mass in the pan, it is better to taste the salt, but do not forget that the cheese will also add a slight saltiness to the dish.
Heat the frying pan well, pour in oil and spoon out the minced meat. If it is not heated enough, the cutlets will quickly fall apart. Fry them for 2-3 minutes on each side until a light crust appears. Then they need to be placed on a napkin so that it absorbs all the excess oil.
As soon as all the cutlets are ready, transfer them to a baking sheet, sprinkle with grated cheese and place in the oven for 5 minutes. There is no need to add oil.
If you don’t have time, you can not bake the cutlets in the oven, but simply sprinkle with cheese and lightly simmer on the stove. But then they need to be fried a little longer so that the minced meat has time to cook completely.
Step-by-step preparation
Preparation of minced minced meat
- Let's prepare the ingredients and work surface.
- First, wash the turkey thigh well, remove the skin and cut out the bone with a knife. Then cut the thigh flesh very thinly into plates, and then each plate into small cubes. Turkey breast is also suitable for this recipe, but then the cutlets will turn out a little dry. Place the chopped meat in a deep bowl. To make it easier for you to cut meat, you can pass it through a meat grinder or grind it in a blender. But we still recommend chopping the thigh; the cutlets turn out juicier.
- Chop the pre-peeled medium-sized onion as finely as possible. We send the onions to the meat.
- Next, let's deal with the cheese. Any hard cheese you like to taste will do. Cut it into very small cubes and place it in a bowl with the rest of the ingredients.
- Finely chop the parsley and dill and add to the minced meat. Greens give cutlets an incredible aroma, beautiful appearance and benefits. You can also add chopped green onions or other spices to the cutlets, at your discretion.
- After this, salt and pepper the minced meat to taste. ъ
- Add starch and dry chopped garlic. Dried garlic has a stronger flavor, but you can use fresh garlic in this recipe, the choice is yours.
- Then add 2 full tbsp. l. mayonnaise.
- Mix thoroughly until smooth so that all ingredients are evenly distributed.
- Beat in 1 medium-sized egg and mix well again. Chopped minced meat is ready.
Cooking cutlets
- Place a frying pan on medium heat, pour 2 - 3 tbsp. l. vegetable oil and heat well. We collect about 1 tbsp. l. minced meat, form a round cutlet and place in a frying pan. Fry until golden brown on both sides.
- When the cutlets are fried and browned, cover the pan with a lid, reduce the heat and simmer for 2 - 3 minutes.
- In order to rid the cutlets of excess oil after frying, transfer them to a paper towel. Serve to the table in a beautiful plate, garnished with herbs. Chopped turkey cutlets according to a delicious recipe are ready.
Bon appetit!
Chopped turkey cutlets
What could be simpler and tastier than cutlets? Especially if they are prepared from minced meat, which tastes great and gives the dish a special taste. If you do not add spices, you can serve turkey cutlets to children, but it is better to bake them in the oven rather than fry them in oil.
Products:
- half a kilogram of turkey (it is recommended to choose fillet);
- medium bulb;
- 2 eggs;
- several cloves of garlic;
- salt and seasonings;
- 3 large spoons of flour;
- 3 large spoons of sour cream (can be replaced with mayonnaise).
Cooking option
Wash the fillet well and chop into small cubes. Add finely chopped garlic and onion to the meat (to make the cutlets more tender, the root vegetables can be grated).
In a separate plate, thoroughly beat the eggs, then add sour cream and flour to them. Stir the mixture again until smooth – it is important that there are no lumps in it.
Place the meat into the resulting mass, mix, salt and pepper. If you wish, you can add fresh herbs to the minced meat.
Place the cutlets in a hot frying pan using a spoon, then fry them over medium heat until golden brown. If the chopped turkey cutlets are too oily, you can remove any remaining oil with a napkin.
I'm sure you love cutlets as much as I do! And how can you resist the temptation to feast on delicious ruddy rounds with a crispy crust, delicious taste and dizzying aroma?! Each housewife prepares this wonderful dish with her own subtleties and secrets, thanks to which in modern cooking you can find more than a dozen, or even a hundred different ways of preparing cutlets. One of my recent discoveries was ground turkey cutlets. After trying a wonderful dish at a party, I decided to cook it at home. I cooked it, but only managed to eat one cutlet, as my family appreciated my efforts, and already 5 minutes after the start of dinner there was an empty dish on the table! I have no doubt that you will like such tender cutlets too!
To make chopped turkey cutlets, you will need:
turkey fillet – 400 g onions – 1 pc. egg – 1 pc. white balsamic vinegar – ½ tsp. dried basil – ½ tsp. ground black pepper - to taste salt - to taste olive oil for frying
How to cook chopped turkey cutlets:
1. Wash the turkey fillet thoroughly under running water and dry with paper towels. 2. Cut the prepared meat into very small cubes and place in a bowl. 3. Peel the onions, wash, dry, and cut into small cubes. Place the chopped onion in a small bowl or deep plate, pour boiling water over it and leave for 3-5 minutes. Soaking onions in hot water will remove the absolutely unnecessary bitterness. Although, as an option, you can add finely chopped red or white sweet lettuce onions to the minced meat. 4. Drain the onion in a colander to remove excess liquid, then transfer the vegetable to the bowl with the turkey fillet. 5. Add dried basil, ground black pepper and salt to taste to the minced meat, sprinkle everything with balsamic white vinegar. Mix all ingredients thoroughly, cover the bowl with cling film, place in the refrigerator and let sit for 15-20 minutes. 6. After a quarter of an hour, beat one egg into the minced meat and mix everything well again. 7. Heat olive oil in a frying pan. If you don’t have olive oil on hand or you’re simply not a fan of it, feel free to use regular sunflower oil (preferably refined). 8. Place a tablespoon of minced meat directly into a frying pan with hot oil, form small cutlets and fry them on both sides until an appetizing golden brown crust appears. Approximate cooking time is 7-10 minutes over medium heat. 9. Place the finished cutlets into portioned plates with a side dish and serve immediately.
As a side dish for chopped turkey cutlets, you can serve mashed potatoes with spinach and garlic or buckwheat porridge with porcini mushrooms. The cutlets are also good as an independent dish with sliced vegetables or a salad of fresh tomatoes and cucumbers.
Cook with pleasure and bon appetit!
