Today we offer you a recipe for corn bread for a bread machine, because “maize” is nothing more than corn, whose beneficial properties are known to almost everyone. In novels, tortillas often helped travelers and adventurers to the rescue, and we will also try to bake this miracle, indispensable for adherents of a healthy lifestyle.

The benefits of corn bread

The main ingredient in this cornbread recipe is cornmeal, which is made from yellow corn. Corn contains many useful minerals - calcium, potassium, iron, magnesium, B vitamins, vitamin PP, starch. Products made from corn flour improve digestion, are well absorbed and reduce cholesterol levels.

Corn flour normalizes blood circulation, strengthens the heart and blood vessels, and has diuretic properties.

It helps normalize sugar levels in diabetic patients and is used in the manufacture of medications for hypertension and urolithiasis. Products made from corn flour, and in particular corn bread, are recommended for consumption by people who are allergic to gluten and follow a special diet.

  • To prepare bread in a bread machine, it is recommended to use premium wheat flour. Soft wheat flour (with baking powder) and protein-free flour are not suitable for baking.
  • Baking with the addition of corn flour turns out a little different than with wheat flour alone, since corn flour gives the baked goods a looseness and density.
  • Add dry and liquid ingredients in the order indicated in the instructions for the bread maker.
  • It’s good if your bread machine has a “Gluten Free” mode, and you need to bake on it.

Corn bread is not as fluffy as wheat bread, but this does not make it any less tasty and healthy.

Gluten Free Cornbread Without Wheat Flour - Recipe

Cooking time: 120 minutes. These are gluten-free baked goods. Wheat-free cornmeal bread is delicious, moist and crunchy thanks to the presence of flaxseed and sesame seeds.

Cornbread - recipe

Ingredients:

  • 350 g corn flour,
  • 100 g rice flour,
  • 50 g buckwheat flour,
  • 3 tablespoons flaxseed,
  • 2 tablespoons sesame seeds,
  • 3/4 tablespoons salt,
  • 1.5 tablespoons sugar,
  • 12 g dry yeast,
  • 600 ml warm water.

Cooking method

Store the remaining dough in the refrigerator and use it within the next 14 days. The cake matures for 14 days, improving the taste and texture of our bread. Before each baking, as above: cut, trim and bake another loaf.

Form a loaf of bread and place it on the flour. 20 minutes before baking, place the stone in the oven to preheat. Quickly slide the bread from the cornmeal-dusted board onto the heated stone to bake the pizza. The nutritional value of bread depends on the flour from which it is made. It's good to choose dark whole grain, grain and gram breads because they are a source of complex carbohydrates that provide energy without a sudden insulin spike. Sourdough rye bread is also healthy - it is a source of lactic acid, which improves the functioning of the digestive system.

Mix all ingredients together on low speed. Cover the bowl with a cloth and leave to rise for 20 minutes in a warm place. Place the dough in two glass or aluminum muffin tins measuring 10 x 24 cm and again leave to rest in a warm place, for example near a radiator for 20 minutes. In the meantime, preheat the oven, place the molds in the hot oven and bake at 180 degrees for 40 minutes, then remove the products from the molds and bake on a wire rack for 10 minutes.

Recipe note

This wheat-free cornmeal bread seems like it should be a little taller, but that's the fault of the cornstarch, which is quite heavy. During proofing it will rise beautifully, but then during baking it will shrink a little - this is normal.

Add corn flour to a bowl and add water. Leave for 15 minutes. Add remaining ingredients, mix for 3 minutes on low speed, then 3 minutes faster. Leave in a warm place, covered with a cloth, until the dough rises - for 1.5 hours. After 45 minutes, fold the dough in half.

Our first gluten-free cake - with ground nuts, grated apples and boiled dill inside. Ingredients: whole flour, rice flour, tarragon, buckwheat, cornstarch, apples, fructose, vegetable oil, soy milk, sesame seeds, coconut, sea salt, walnuts or hazelnuts, baking soda, cinnamon.

The gluten-free version of our favorite whole gingerbread is juicy with raisins, minus the shredded apples, which are gluten-free in all of our sweet pies. At the discretion of customers who cannot eat the seeds, the gingerbread surface is not made with sesame seeds.

Divide the dough into 2 parts, cover it and let it rest for 10-20 minutes. Grease the muffin tins and place the dough in them, let it rise for 1 hour 15 minutes under a cloth. You can score the top before baking. Bake at 235°C with steam for 40 minutes. Cool on a wire rack.

Note: This is oven baked cornbread, this dough is not suitable for baking in a bread machine.

Recipe for cornbread with poppy seeds in a bread machine

Ingredients

  • Corn flour – 1 cup;
  • Wheat flour – 1 cup;
  • Milk – 170 ml;
  • Dry yeast – 1 tsp;
  • Vegetable oil - 1 tbsp;
  • Salt - ¾ tsp;
  • Sugar – 1 tbsp;
  • Poppy seed – 1 tbsp.

How to make corn tortilla with poppy seeds

  1. Pour milk into the removable bowl of the bread machine. Milk can be taken half with water, or other proportions, but the total amount of liquid should be 170 ml.
  2. Add vegetable oil - sunflower, corn or olive.
  3. Add sugar and salt.
  4. Carefully pour both types of flour - wheat and corn.
  5. Add poppy seeds. If you don’t have it, you can do it this way, but with poppy seeds it turns out tastier and healthier.
  6. Add yeast.
  7. Place the bowl in the bread maker. Turn on the “Basic” mode or “White bread”.
  8. Turn on the bread maker and wait for the baking to finish.

Benefits of a bread machine

In any case, after three and a half hours, delicious golden-brown cornbread will be ready. In a bread machine (we provided the recipe with photos to readers in our article today), baking a dish is extremely simple, because you just need to sequentially add the ingredients, and the machine will take over the entire tedious kneading process.

Tip: After the bread is baked, remove the loaf from the bowl, place it on a plate and cover with a cotton towel. After all, the finished product evaporates too much moisture while it cools. To ensure that the taste is rich and not dry, the bread is covered with a towel; besides, the bread rests under the cloth and is fully cooked. Corn bread baked in a bread machine (we recommend using our recipe) will also remain soft, with a fragrant aroma, if you remember to cover it immediately after it is cooked.

  • 160-180 ml warm water,
