It is better to use fresh and ripe cherries for pies, and if it’s not in season, frozen ones will do. If you use ice cream, be sure to defrost it and strain off the resulting liquid before cooking. And of course, do not forget to remove the seeds from the berries.

Shortbread pie with cherries recipe with photos step by step

  1. Grind the melted softened butter with powdered sugar.
  2. Add sour cream, stir.
  3. Combine flour with baking powder and add to butter. Put the ingredients together and roll the dough into a ball.
  4. For the future pie, choose a heat-resistant container with a diameter of 22 cm. We stretch the soft, pliable dough inside the dish, lifting the edge 2-2.5 cm up along the circumference. Place the mold with the flour base in the refrigerator for half an hour.
  5. Sprinkle the cooled shortbread “basket” with half the starch and lightly rub it with your palm.
  6. Next, evenly fill the flour base with cherries (if the berries were frozen, completely defrost them in advance and squeeze them out). Sprinkle the filling with the remaining starch.
  7. Prepare flour crumbs for the top layer. Mix flour and powdered sugar with soft butter, rub with your fingers until small lumps are obtained.
  8. Finely chop the nuts with a knife or lightly grind them in a blender bowl. Add to the flour crumbs, grind again.
  9. Distribute the crumbs evenly over the cherry layer.
  10. Bake the pie in an oven preheated to 180 degrees for about 30 minutes (until the dough is browned).
  11. Let the cake cool completely before removing from the pan and slicing.

  • yolk - 3;

  • starch - 1 tbsp. l.;
  • sugar - 2 table. l.

Meringue:

  • egg whites - 3;
  • sugar - ⅔ cup.

First of all, prepare the shortbread dough by rubbing the dry ingredients with butter into crumbs. Then mix with the yolks. The resulting shortbread dough is similar to the previous versions. We put the base in the mold and form the sides.

Mix the cherries with sugar and place on the base. We send it to bake a little in the oven at 190 degrees for 15 minutes.

A few minutes before the end of baking the base and berries, we begin to make the meringue. First, beat the whites, then add sugar and beat the mixture until stiff peaks form. Spread the meringue over the berries. We turn the temperature up to 150 degrees. and bake the pie for another 15 minutes. The meringue will brown.   • 4 chicken eggs;
  • 150 g granulated sugar (100 g for the dough, 50 for filling);
  • 120 g butter margarine or butter;
  • 10 g baking powder for dough;
  • 390-4500 g of flour (including 60-90 g for filling);
  • 200 g sour cream;
  • 300 g pitted cherries.

The preparation time for this dessert will be 95-100 minutes.

Sequence of culinary processes:
