Dairy desserts - general principles of preparation
Milk for making desserts must be fresh and preferably full-fat. The ideal option would be pasteurized cow's milk from a trusted brand.

Made from chocolate and cottage cheese
A spectacular and very tasty curd-chocolate dessert is prepared with the addition of any fruit or berries.
You will need:
- 70 g butter;
- 100 g each of white and milk chocolate;
- 180 g cottage cheese;
- 200 ml cream;
- 100 ml milk;
- 10 g gelatin;
- 25 g sugar;
- a pinch of vanilla sugar;
- 200 g of peaches, strawberries, raspberries, cherries or cherries.
Preparation:
- Prepare gelatin according to the instructions on the bag.
- Melt the butter and chocolate in the microwave or in a water bath in separate containers.
- Prepare a springform pan for dessert. If a ring is used, then it must be placed on a board or wide dish, having previously lined it with parchment. Place parchment or pastry tape inside (along the walls).
- Combine milk chocolate and butter (this will be the base of the dessert), place in the refrigerator to harden.
- Roughly chop fruits or berries.
- Bring the cottage cheese using any method (blender, sieve) to a paste consistency. Add vanilla and regular sugar, stir.
- Boil milk, mix with prepared gelatin until dissolved. Pour the resulting mass into the cottage cheese, add white chocolate, mix thoroughly again and let stand until the temperature reaches room temperature.
- Whip the cream until fluffy, combine it with the curd mass, pour half of it into the mold on top of the base, smooth it out and put it in the freezer for 10 minutes.
- Place slices of peach or berries on the frozen layer and pour in the remaining half of the curd mousse. Let stand for 10 minutes until the air bubbles disappear.
- Place the mold in the refrigerator until completely hardened.
- Take out the dessert, carefully remove the parchment from the bottom and open the mold. To make it easier to remove the ring, you need to warm it up with a hairdryer.
- The final stage of preparation is to decorate the top with pieces of fruit or berries, and mint leaves.
From milk and cocoa
A budget-friendly recipe for a delicate dessert that can be used as cream for homemade cakes or served in bowls. It cooks quickly (about 20 minutes), and disappears from the table even faster.
You will need:
- 70 g butter;
- 2 glasses of milk of any fat content;
- 1 cup of sugar;
- 3 tbsp. l. cocoa powder;
- 2 tbsp. l. flour;
- a pinch of vanillin;
- 50 g walnuts (or any other).
Preparation:
- Pour cocoa, sugar and flour into a sieve and sift. This will make it easier to mix them until smooth with milk.
- Gradually, stirring with a whisk, add milk.
- Heat the finished mass (without lumps) to a boil and remove from the stove.
- Lightly toast the nuts, remove the brown husks (they can add bitterness to the dessert), and crush until fine crumbs are obtained.
- Pour the nuts into the chocolate base, add vanillin and butter, mix everything well.
- Allow the dessert to cool, place in bowls and serve, sprinkled with cocoa and garnished with mint.
The best milk-based dough recipes
Quick baking with milk can be different: from milk shortcakes to melt-in-your-mouth cakes that are prepared in less than an hour. Each housewife has her own top list of the most delicious “milk” recipes; one article is not enough to list them all, but no one will argue that delicious donuts and airy custard sponge cake with milk are worthy of being called the best recipes for such baked goods.
For custard milk sponge cake you should take:
- 3 eggs;
- 165 g granulated sugar;
- 120 ml milk;
- 60 g butter;
- 7 g baking powder;
- 165 g flour;
- 3 g salt;
- 3 g vanillin.
Baking step by step:
- Place the cubed butter into the milk and put it on the fire until it boils.
- Beat the eggs with sugar, salt and vanillin with a mixer into a fluffy foamy mass, into which then stir in the flour in two or three additions, after combining it with baking powder.
- Pour boiling milk into the dough in several additions and mix thoroughly. Pour the mixture into a mold lined with parchment and cook in a preheated oven for half an hour at 170 degrees.
The finished sponge cake can be used as a base for a cake or simply cut into portioned slices and served with tea.
And for delicious donuts with milk you need:
- 250 ml milk;
- 2 eggs;
- 60 g butter;
- 80 g white crystalline sugar;
- 1.5 g vanillin;
- 1.5 g salt;
- 11 g dry yeast;
- 600 g flour.
Baking method:
- Beat the eggs with sugar until smooth, pour in the milk and melted butter. Separately mix the flour with the rest of the bulk products.
- Combine both components of the dough (liquid and bulk) and knead into an elastic mass, which is allowed to rise in a warm place for one hour.
- Next, roll out the dough into a centimeter layer, from which cut out circles with a hole in the center. Allow the preparations to lie in a warm place for another quarter of an hour, and then literally fry for 2 - 3 minutes in boiling vegetable oil on both sides.
Ready-made donuts can be coated with colored sugar glaze and decorated with confectionery sprinkles or crushed nuts and coconut flakes.
Based on baked milk
Baked milk is a unique product of a beautiful cream color with an unusual taste, not known in non-Slavic countries. Thanks to the cooking technology, it contains more vitamins, iron, calcium and easily digestible proteins. Baked milk can replace regular cow's milk in most recipes, but there are baked goods that are prepared only with it.
Milk shortcakes
Previously, such shortcakes were sold in school and student canteens, and it seemed that nothing could be tastier.
But you can repeat this deliciousness in your home kitchen by taking:
- 100 g butter;
- 200 g sugar;
- 2 eggs;
- 100 ml baked milk;
- 420 g flour;
- 5 g baking powder;
- 2 g vanillin.
Bakery:
- Grind soft butter with sugar, then stir in eggs one at a time, pour in baked milk at room temperature, stir until smooth.
- Flour, vanillin and baking powder are mixed in one bowl, then sifted so that the baking powder is evenly distributed in the dough. The resulting mixture is mixed with the remaining ingredients.
- The result is soft dough, which is rolled out into a flat cake 7–10 mm thick. Round cakes are cut out of it, which are also greased with a small amount of baked milk and baked for about a quarter of an hour at 180 °C.
Baked milk cake
By slightly changing the proportions of the same ingredients, you can bake a delicious and aromatic cupcake. It can be topped with glaze made from 80 g of white chocolate and 50 ml of heavy cream.
Ratio of ingredients in the dough:
- 100 g soft butter;
- 100 g sugar;
- 1 egg;
- 300 ml baked milk;
- 12 g baking powder;
- 350 g flour.
How to bake:
- Combine all ingredients in the same sequence as when kneading the shortbread dough.
- Pour the resulting dough, flowing like sour cream, into the prepared pan and bake until toothpick dry at standard 180 degrees. After cooling, cover the finished cake with frosting.
It is very easy to prepare baked milk using a slow cooker. To do this, bring it to a boil, pour it into a multi-pan and simmer for 1.5 - 2 hours in the “Stew” mode.
Pancakes with curd
Pour 0.5 kilograms of flour into a dough container, gradually pour a liter of milk into it, while mixing thoroughly so that no lumps form. Add salt at the tip of a knife. Separately, beat five eggs and four tablespoons of sugar. Pour everything into a container and add two tablespoons of melted butter and three tablespoons of sunflower oil. You can add vanilla. Mix everything thoroughly or beat with a mixer. Let it sit for about an hour. Then pour a thin layer of dough into a hot frying pan and fry: first on one side, and then on the other. After frying, spread our pancakes with cottage cheese, which has been ground with sugar, eggs and butter. These pancakes can also be coated with jam or sprinkled with cinnamon and sugar. If you don’t add sugar and vanilla to the dough, you can make the filling salty: minced meat or mushrooms, cabbage, or you can also wrap a sausage. When you have filled the pancake, you can lightly fry them in oil before serving.

You will need:
- 400 ml milk of any fat content;
- 100 g powdered sugar;
- 15 g gelatin;
- 1 small banana;
- a pinch of vanilla sugar.
Preparation:
- Soak gelatin in a quarter glass of water until it swells.
- Rinse a small enamel saucepan with cold water (this procedure will prevent the milk from running away instantly), pour in the milk and add sugar. Let the mixture boil over low heat.
- Remove from the stove, let stand for 10 minutes and cool slightly. Pour vanilla sugar into the milk, add the swollen gelatin, stir until smooth.
- When the temperature of the mass drops to about 35 degrees, add banana puree to it and beat everything with a submersible blender until a stable foam appears.
- Place the mousse in bowls and place in the refrigerator for a couple of hours.
- Take out the dessert, garnish with grated chocolate, banana slices and mint.
Favorite baked goods: grandma's pies
What can you bake with milk? Of course, first of all these are pies. A culinary product that our grandmothers and great-grandmothers always baked. The basis of the recipe has not changed for a very long time.
So, take 700 grams of premium flour and pour it into a bowl. Place a pinch of salt and vanilla on the tip of the knife. Place 200 grams of margarine and 100 grams of butter in flour and rub everything thoroughly with your hands until the butter and margarine are mixed with flour and become small pieces. Then pour 0.5 liters of boiled milk into the flour. It should be warm, never hot. Add two tablespoons of sour cream. Mix everything well with a wooden spoon. Then take four eggs and beat them thoroughly with one glass of sugar, pour them into a bowl. Grind 70 grams of yeast in a plate with two tablespoons of sugar and add to our dough. Now we start kneading the dough. Add flour until it becomes soft and at the same time does not stick to your hands and bowl. While kneading the dough, gradually add 0.5 cups of sunflower oil to it. While kneading, feel the dough; it should not be very soft, but not hard either.
Place the dishes in a warm place for two hours. When it’s ready, we’ll form the pies. They can have any filling: cottage cheese, cherries, plums, whatever you and your family love.
