Origin of coffee dessert

Italy is considered to be the birthplace of tiramisu. It was here that Italian confectioners first fed a similar dessert to the famous Duke Cosimo. This happened at the end of the 17th century, when a connoisseur of sweets decided to visit the Italian city of Siena. Local chefs greatly surprised the nobleman with a new dish, which later became known as “Duke’s soup” and gradually spread throughout the country.

The courtesans from Treviso very quickly recognized the interesting property of the dish to lift the mood and increase desire. Ladies ate tiramisu dessert before serious dates, and it was they who gave the dish its now well-known and rather ambiguous name.

However, some confectioners consider these legends to be myths and claim that this dish is much younger. They tell a rather boring story that the dessert appeared thanks to those who like to dip cookies in coffee. Over time, liqueur was added to the coffee drink, and then soft cheese.

Classic tiramisu recipe

Required ingredients:

  • chicken eggs 2 pcs.;
  • granulated sugar 50 grams;
  • mascarpone cheese package (about 250 grams);
  • savoiardi 1 pack;
  • strong coffee 1 large cup;
  • Marcela 25 grams;
  • cocoa powder to taste.

Making real tiramisu with mascarpone:

  1. The process of preparing such a unique dessert is quite simple. This will take very little time; even an inept housewife can cope with this task. First you need to brew strong coffee and cool it well. To prepare real tiramisu, use coffee without sugar.
  2. Next, separate the whites from the yolks. The yolks are thoroughly ground with sugar, and the cooled whites are beaten until a steep, non-falling foam appears. Then both masses are carefully combined and mascarpone is added. The cream turns out to be quite thick, but its thickness directly depends on the whipping time. The longer this process, the better.
  3. Coffee is mixed with cognac. Each cookie is dipped and placed on the bottom of the bowl. Since savoiardi melts quite quickly when it comes into contact with coffee, the process needs to be accelerated as much as possible.
  4. Next, fill a layer of moistened cookies with cream and lay out the next one. The very last layer is decorated with cocoa powder or chocolate chips.
  5. The dessert is infused in the refrigerator for about 4-5 hours. After this time, the cookies will be soaked and the tiramisu cream will thicken even more. This dish is eaten with a spoon. Served with coffee, latte, and black tea.

Tiramisu cake without eggs

Sometimes a large dessert is planned for guests. You can try making tiramisu in the form of a cake.

For a delicious cake you will need the following ingredients:

  • savoiardi cookies about 30 pcs. or its substitute;
  • mascarpone or cottage cheese about 250 grams;
  • cream with a fat content of at least 30% - a glass;
  • strong coffee - a glass;
  • liqueur (if there is no Marcela) 30 grams;
  • powdered sugar – 5 tbsp. l.;
  • cocoa about 2 tbsp. l.

Step-by-step cooking process:

  1. First of all, brew coffee. You can even use instant ones if you don’t have natural ones in your kitchen. The drink is cooled and a little alcohol (wine or liqueur) is added.
  2. To prepare the cream, beat the cream with half the powdered sugar. For better whipping, it is recommended to cool the cream well first. The mixture should thicken well.
  3. Next, the mascarpone is ground with the remaining powder, whipped cream is added, and gently mixed until a thick, homogeneous mass is obtained. The finished cream is placed in the refrigerator for a while.
  4. Next, the cake itself is formed. Cookies, one at a time, are dipped in coffee and alcohol and placed in a prepared form. When the bottom is completely filled, place about half of the cream on top. Next is another layer of cookies and the remaining cream.
  5. The finished dessert is sprinkled with cocoa on top, then left in the refrigerator for about 5-6 hours. Cocoa is an acquired taste; it can easily be replaced with chocolate chips. That's it, the tiramisu cake is ready.

Tiramisu without mascarpone

Many housewives complain about the lack of mascarpone cheese in stores. The recipe below allows you to prepare dessert without using it. The cooking principle remains the same, but what can you replace mascarpone in tiramisu with?

Cottage cheese is an ideal product, but you can get by with regular homemade cream.

For the Russian version of the dessert you will need the following ingredients:

  • savoiardi biscuits or sponge cake cut into strips 0.4 kg;
  • homemade cream 0.5 kg;

How to cook:

  1. First, carefully break the prepared eggs and separate the yolks from the whites, pouring them into different dishes. The yolks are well ground with sugar and whipped using a regular whisk. A lot of work is not required, as a result, you should get a yellow homogeneous mass.

Tiramisu ingredients :

To prepare the biscuit we will need:

  • Sugar – 140 gr;
  • Flour – 220 gr;
  • Baking powder for flour – 1/2 tsp;
  • Vanilla sugar – 1 sachet;
  • Baking paper – 2 pieces;
  • Baking dish lined with baking paper – diameter 26 cm;

To prepare the cream we will need:

  • Philadelphia cream cheese – 500 gr;
  • Sugar – 100 gr;
  • Vanilla sugar – 1 sachet;
  • White chocolate, melted in a steam bath – 100 g;
  • Cream 35% – 100 g;
  • Powdered sugar – 3 tbsp;

To prepare the impregnation we will need:

  • Chilled coffee – 250 ml;
  • Dark chocolate for chips – 50 g;
  • Dark cocoa for top – 15 g;
  • Brandy or black rum – 2 tbsp (40 g);
  • Sugar – 3 tbsp;

Preparing the tiramisu biscuit:

1) First of all, beat the whites with a mixer and gradually add sugar until stable shiny peaks appear.

2) Next, beat the egg yolks and vanilla for 5 minutes.

3) Carefully combine the whites with the yolk mixture.

4) Add the flour mixed with baking powder in portions and, using the folding method, mix it with the yolk-white mixture.

Preparing savoiardi cookies:

Using 1/3 of the dough, make savoiardi cookies. To do this, take a pastry bag, fill it with dough and squeeze out round cookies with a diameter of 3 centimeters onto a baking sheet. Sprinkle the future savoiardi with sugar and place in an oven preheated to 180 ºC, bake for 15 minutes.

From the remaining 2/3 of the dough, bake a sponge cake in a springform pan. To do this, put the rolled out dough into a mold and put it in the oven, heated to 180 ºC for 15-20 minutes. After this, take the biscuit out of the oven, let it cool and cut it horizontally into 2 layers.

Making tiramisu cream without eggs:

Place 500 grams of Philadelphia cream cheese in a container, add 100 grams of sugar, a bag of vanilla and beat with a mixer at low speed. Next, add the white chocolate melted in a steam bath.

Add 3 tablespoons of powdered sugar to the cream and beat until stiff peaks form, then combine the whipped cream with the cheese and chocolate mass using a spatula.

We combine everything into a finished dessert:

1) Place the cake on a dish and put a ring on top from a springform pan.

2) Soak the cake with coffee syrup and spread a layer of cream on top.

3) Dip the cookies one by one into our syrup and place them tightly together. Spread a layer of cream on top.

  2. Beat everything again with a mixer.   3. The biscuit is ready, and then make it by analogy with the classic recipe. I baked a sponge cake in a 20 cm mold, then when it cooled down, I made 2 cake layers using the bottom of a mold 15 cm in diameter and cut more pieces into cubes (large).
  4. Prepare the cream: whip the cream, but do not beat it. Add powdered sugar, Mascarpone cheese, mix it all into a single mass. Let cool.
  5. Impregnation: combine coffee with liqueur, whatever you like best, I don’t give the proportions
  6. Assembling the cake: sponge cake - impregnation - cream - sponge cake impregnation - cream - biscuit cubes - impregnation - cream. Let it cool for at least 3-4 hours, preferably overnight.

Next, let's start preparing our dish. If you want to make a classic tiramisu and truly enjoy it, you need to choose your ingredients carefully.

The main difficulty is cream cheese.
Some people think it's too expensive and want to replace it. This should not be done, since it is through Mascarpone that you will achieve the airiness and lightness that is necessary.
Cookies should also not be substituted. If you can’t buy it, you can easily find a recipe for making it.

  • First of all, you need to brew coffee. It should be strong and tart in taste. After which it needs to be cooled to room temperature.
  • The recipe does not involve baking, so we recommend mashing the eggs in warm water, then carefully separate the yolks from the whites. At this stage you will only need the yolks, so put the whites in the refrigerator.
  • Mix the sugar with the yolks until smooth using a whisk or blender on medium mode. You should get a white mass. It is desirable that the sugar is completely dissolved.
  • In a large bowl, mix mixture with cream cheese. Do it carefully . There is no need to set the blender to maximum speed to save time. Beat on low speed.
  • Beat the cooled egg whites with a blender (or mixer) until stiff peaks form. To make the process easier and faster, use a pinch of salt. It’s easy to understand that the whites are ready: they should not flow or slide off the whisk, but should keep their shape.

  • Add cognac or liqueur to the cooled coffee. Use a container that can hold one whole cookie evenly. Place the Savoiardi in the coffee one at a time for 1-2 seconds (during this time they will have time to soak). Do not keep it longer so that the dessert does not turn out too raw.
  • Take a mold (at your discretion - one large or portioned) and place the moistened cookies into it so that they form the base.
  • Place the creamy mixture on top of the cookies, about half of it. After this, repeat the rows and put the mixture in the refrigerator. Important ! The dessert should be kept in the refrigerator for at least 6-8 hours . It is best to leave it overnight so that it has time to completely soak and “set.” This way you can get beautiful portioned pieces out of the mold.

Tiramisu with cream

Ingredients:

  • ground coffee - 50 g
  • egg yolk - 3 pcs.
  • granulated sugar - 60 g
  • light rum – 40 ml
  • cream cheese (Mascarpone) - 350 g
  • cream 30-33% - 250 ml
  • powdered sugar - 30 g
  • biscuit cookies - 200 g
  • cocoa powder - 30 g

Preparation:

  1. Brew strong coffee from 50 g of coffee and 350 ml of water and cool it. Add rum or cognac to the cooled coffee. Add sugar to the yolks and beat them in a water bath until they become light and thick. Remove and continue whisking until mixture cools.
  2. Mash the mascarpone cream cheese and add the yolks to it. Stir until smooth. Beat very cold heavy cream with powdered sugar until a thick, stable consistency is obtained. Carefully combine the cream with the yolk-cheese mixture, using upward movements.
  3. In a suitable form 8-10 cm high, place a layer of cream 1.5-2 cm thick. Quickly dip the cold Savoyardi cookies into the coffee on both sides and place them in the mold on top of the cream.
  4. Spread another third of the cream onto the cookies, then add another layer of soaked biscuits. Cover them with the remaining cream, smooth them out and sprinkle them thickly with cocoa powder.
  5. Place the tiramisu in the refrigerator for 4-5 hours or overnight so that everything is well soaked. Serve chilled.

Tiramisu in 5 minutes

Ingredients:

  • cream cheese - 110 g
  • condensed milk - 5 tbsp. l.
  • heavy cream - 4 tbsp. l.
  • vanilla - 3 drops
  • coffee - 1 cup
  • “Lady fingers” cookies
  • grated chocolate

Preparation:

  1. In a bowl, beat cheese, cream, milk and vanilla.
  2. Dip the cookies in the coffee for a few seconds to prevent them from getting soggy.
  3. Place cookies in a continuous layer on a plate.
  4. Apply half of the whipped mixture.
  5. Place a second layer of cookies and cover with the remaining mixture.
  6. Grate the chocolate.
  7. Refrigerate for a couple of hours before serving.

Cooking options

Unfortunately, not every store offers original mascarpone cheese or special cookies for tiramisu. However, the absence of these ingredients is not at all a reason to refuse to prepare your favorite dessert. In this case, it is possible to slightly replace the components.

Required:

  • eggs - 6 pieces;
  • sugar - 6 tbsp. spoon;
  • high fat cottage cheese - 750 g;
  • rum or amaretto - 5-6 tbsp. spoon;
  • ready-made sponge cakes (1 package);
  • small chocolate (preferably dark chocolate).

The procedure is almost identical, only instead of mascarpone you should prepare cottage cheese. To do this, first rub it through a fine sieve - this way the cottage cheese turns out more airy and without lumps. While beating the yolks with sugar, add cottage cheese and rum in parts. Add the protein foam in small portions, stirring from bottom to top with a spatula so that the cream does not fall off.

Dip the biscuit into coffee for a few seconds and place it on a wire rack to allow any excess soaking to drip off. Then carefully transfer the soft cake into a round container and cover with some of the cream. So we alternate the biscuit with the curd filling. Place in the refrigerator for several hours, and before serving, sprinkle with grated chocolate. To make the chocolate grate better, it should be placed in the freezer for a while.

Strawberry tiramisu

Ingredients:

  • strawberries – 980 g
  • cold milk – 1.5 cups
  • vanilla pudding mix (instant) – 100 g
  • mascarpone cheese – 225 g
  • brewed coffee at room temperature – 2 cups
  • whipped cream – 2 cups
  • “Lady fingers” cookies – 85 g
  • dark chocolate – 170 g

Preparation:

  1. Chop all but 1 strawberry (for decoration). Dissolve the pudding mixture in the milk, leave for 2 minutes, and then refrigerate for 2 minutes.
  2. In a mixing bowl, beat the mascarpone cheese until creamy. Pour in 2 tablespoons of coffee, pudding and whipped cream.
  3. Just before placing the cookies, dip each one in coffee. Place 1/3 of the cookies in the bottom of a large flat-bottomed salad bowl.
  4. Cover with the first layer of 1/3 strawberries, grated chocolate and mascarpone mixture. Lay out the remaining 2 layers in this way, the last one should be mascarpone and grated chocolate.
  5. Garnish with remaining strawberries. Refrigerate for at least 4 hours, preferably overnight.

Tiramisu with raspberries

Ingredients:

  • savoiardi - 7 pcs.
  • orange - 1 pc.
  • instant coffee - 4 tsp.
  • powdered sugar - 30 g
  • yolk - 1 pc.
  • mascarpone – 250 g
  • raspberries - 180 g
  • dark chocolate - 50 g
  • mint - 2 sprigs

Preparation:

  1. Making coffee syrup. Pour orange juice and 300 g of water into a saucepan, add coffee. Boil and add about 3 tbsp. l. powdered sugar (reserve 2 tbsp). Pour the resulting syrup into a shallow bowl.
  2. Preparation of cream: Beat the yolk with a mixer (or a whisk or fork), add 2 (or to taste) tablespoons of powdered sugar, then Mascarpone cheese. Lightly whisk or stir everything together.
  3. Dip savoiardi (three pieces per serving) in coffee syrup. Place vertically in a glass. Fill the glass with cream by squeezing it out of a pastry bag and layering it with berries. Decorate the top of the glass with berries, shavings or pieces of dark chocolate and mint leaves. Serve dessert after cooling in the refrigerator.

The recipe for tiramisu with ricotta is as popular as the classic version of the dessert. Ricotta is an Italian cheese made from whey. This product has a sweetish taste. The fat content of cheese can vary: from 8% to 24%.

  3. Prepare a container with high layers so that the dessert can hold its shape. You can use portion cups. Open the package of cookies and take the required amount of savoiardi. Dip the product into coffee and place in the prepared pan. Place an even layer of cream on top of the savoiardi.
  4. Repeat layers and steps until you run out of ingredients. Place the formed dessert in a cold place for two to three hours to soak. And when time has passed, take it out and sprinkle the tiramisu with cocoa.

As you can see, the principle of operation is the same as in the classic dessert recipe, only some ingredients change. But Italian pastries are already used to transformation, for example, this recipe is without eggs and without cream. Although these products are quite often added to the cream.

Tiramisu Madalena

Ingredients:

  • mascarpone – 250 g
  • heavy cream (33%) – 250 ml
  • eggs - 4 pcs.
  • savoiardi cookies
  • sugar - 4 tbsp.
  • espresso coffee - 1 cup
  • Marsala - 2 tsp.
  • cocoa or grated chocolate

Preparation:

  1. Separate the whites from the yolks. Beat the yolks with sugar and a teaspoon of marsala until white. All operations are in the mixer, this is understandable.
  2. Then add the mascarpone, mix well until the lumps disappear. Stir the cream into the resulting mixture of eggs and mascarpone, mix well with a spatula (moving from bottom to top, carefully so that the cream turns out airy).
  3. Dip the savoiardi in coffee with the remains of marsala. Do not keep them in the coffee for a long time - they will creep, and brew it in advance, let it cool. It is better, of course, to use strong espresso.
  4. And we begin to put it in molds. You can prepare tiramisu in portions, in beautiful cups or glasses. A layer of cream, savoiardi, another layer of cream, two or three times, no more. Sprinkle cocoa or grated chocolate on top. Or take a large mold and grease the bottom with cream. Repeat layers - again no more than three. (I always make two).
  5. Carefully coat each layer, and at the end level it with a spatula or dough scraper, it is much more convenient for them. And again sprinkle with cocoa. Place in the refrigerator for at least 5 hours, or preferably overnight, to let it harden well. Carefully remove with a spatula. If you know the exact number of guests, it is, of course, more convenient to cook it in portions.

Homemade Tiramisu recipe with cottage cheese or curd cream


Here's another way to replace mascarpone. Prepare a cream based on market fat cottage cheese. It makes no sense to say that the “assembly” of tiramisu itself remains classic. We will prepare the cream this way.
  1. Buy 400-500 grams of full-fat cottage cheese and market sour cream. Take cottage cheese that is soft and not watery. If you find it made from baked milk, it’s very good.
  2. Place the cottage cheese in a blender and blend until smooth.
  3. Then add sour cream and the traditional amount of powdered sugar - 7 tablespoons.

That's all the cream. Brush the dessert with it and leave it in a cool place for 4-6 hours or even longer.
