The History of Mexican Avocado Dip

Many centuries ago, avocados were considered inedible. However, the brave princess of the Mayan tribe still dared to try the fruit, for which she was rewarded with enlightenment, eternal youth, and beautiful children. So says the ancient legend, the truth of which only time knows. However, now this is no longer so important, because avocado has become firmly established in many cuisines of the world and continues to be one of the leaders in terms of benefits among many other fruits.

Avocado has been voted the most nutritious fruit in the world. On September 25, 1988, the corresponding information was entered into the Guinness Book of Records.

Who came up with the idea of making wonderful guacamole from this wonderful fruit? The name of the sauce comes from the Aztec words “ahuacatl” (avocado) and “molli” (sauce), so there is an opinion that it was these Indian people who came up with the recipe, which is still popular today. According to other written sources, the first information about guacamole is found in English and Spanish written references that date back to the beginning of the 20th century. Either way, the sauce has a history, with roots going back to traditional Mexican cuisine.

What is it made from and what is it served with?

In addition to the main ingredient - avocado, the essential components of the simplest guacamole are lime (or lemon) juice and salt (ideally sea salt).

However, taking into account the fact that all recipes are subject to changes and additions by culinary experts, you can find options with the addition of hot and/or bell peppers, tomatoes, onions, garlic, herbs (most often cilantro), and various seasonings. Olive oil is a common ingredient in the dish; mayonnaise is less commonly found in recipes.

It should not be surprising that on culinary sites there are recipes for exotic foods with the addition of fruits, cheese, meat, fish and seafood. Everyone prepares this dish to their own taste!

Traditionally, the sauce is served with Mexican corn tortillas.

. In addition, guacamole is good with bread, regular or thin pita bread, crackers and any chips and toast.

It should also be prepared as a side dish for meat and fish dishes, or as a salad for pasta and potatoes: to do this, simply cut the ingredients specified in the recipe larger and do not puree the dish.

Recipe from Jamie Oliver

The world-famous chef Jamie Oliver did not ignore the exotic sauce. Its preparation version can be found on the “delicious” pages of many peoples of the world. The ingredients of the sauce are not much different from other options, but the Naked Chef suggests pureeing the avocado pulp using a blender rather than mashing it by hand.

You will need the following ingredients:

  • 2- ripe avocados;
  • 5–6 cherry tomatoes;
  • 1–2 limes;
  • 2 stalks of green onions;
  • 1 small chili;
  • several sprigs of fresh cilantro;
  • 1 tablespoon olive oil;
  • salt and ground black pepper to taste.

Preparation:

  1. Place a few sprigs of fresh cilantro, a couple of green onions, and a small chili pod (deseeded) in the bowl of a blender or food processor.
    Grind food using the device at medium speed. Chop cilantro, green onions and chili
  2. Remove the pits from the avocado.
    Jamie Oliver suggests doing this by removing the stem of the fruit and pressing firmly on it so that the flesh slides out of the shell. However, it is worth noting that this option is only suitable for very ripe fruits. If the avocado is a little hard, you can simply cut it in half, remove the pits with a spoon or knife, and then separate the flesh from the skin in a more conventional way. The next step is to peel and pit the avocado.
  3. Place the avocado and cherry tomatoes in a blender bowl and blend again at low speed.
    Pour in lime juice
  4. Season the guacamole with salt and ground black pepper to taste, stir again, transfer to a clean container and serve.
    Oliver suggests serving guacamole with lightly grilled tortillas and fresh vegetables. Help yourself to your health!

With ginger and lemon juice

This version of the sauce captivates not only with its spicy taste, but also with its unique aroma. However, keep in mind that a large amount of ginger can spoil the dish.

. You will need:

  • 1 tomato;
  • 1/2 bell pepper;
  • 1/2 large white onion;
  • 2 tablespoons lemon juice;
  • a piece of fresh ginger;
  • ground black pepper;
  • salt;
  • tortillas.

Preparation:

  1. Peel and pit the avocado, place in a mortar and mash.
    Mash the avocado until smooth
  2. Cut half a bell pepper without seeds into squares, a tomato and half an onion into cubes.
    Grate a piece of fresh ginger on a fine grater, chop with a knife or pass through a press. Place the prepared ingredients in a mortar with the avocado puree. Guacamole with ginger is amazingly flavorful!

Advice! If the family does not like cilantro, then this greenery can be replaced with fresh parsley.

Chop the hot pepper very finely. We first clear the pod of seeds, since it is the seeds that contain most of the burning substances. Also finely chop the shallots. If this type of onion is not available, then you can take salad onions - white or red. But regular onions have too strong a taste and are not suitable for this sauce.

  • ½ part of avocado fruit;
  • 1 tomato;
  • 2 cloves of garlic;
  • ¼ part of a medium-sized red onion;
  • 1 bunch of dill;
  • 0.5 teaspoon salt;
  • 0.5 teaspoon ground black pepper;
  • 2 tablespoons olive oil.

Tomatoes for sauce must be peeled. To do this, it is recommended to immerse the tomato in boiling water for a minute and then pour cold water over it. After this treatment, the skin can be easily removed. Cut the peeled tomato into small cubes.

Chop the red onion just as finely. Instead of red onions, you can use white onions, but regular onions will not work. Finely chop the greens. To prepare this sauce, you can take not only dill, but also parsley or cilantro, or even better, use a mixture of different greens.

Remove the pit from half an avocado and scoop out the pulp with a spoon. Mash the avocado with a fork and mix with olive oil. Add the rest of the vegetables and herbs, stir, or even better, beat everything with an immersion blender so that the mass acquires a homogeneous consistency.

Season the sauce with pepper and salt. Place in the refrigerator to let the sauce steep and cool.

Advice! It is not recommended to add any other spices except black pepper. The sauce already has a bright taste that should not be overpowered.

Classic guacamole

Guacamole, an avocado sauce, is a Mexican dish known all over the world. The recipe dates back to ancient times. It was invented in Mexico, and then spread to South America and Europe, where it took pride of place among other famous sauces. First of all, it will appeal to spicy lovers. The classic recipe for avocado guacamole sauce includes avocado pulp, pureed, lemon or lime juice and salt. We invite you to try this delicious appetizer.

Ingredients:

  • avocado – 1 fruit;
  • tomatoes 1 pc. (can be replaced with the “Cherry” variety in the amount of 3-4 pcs.);
  • onion - half a head;
  • lemon (can be replaced with lime) – half a fruit;
  • garlic – 1 clove;
  • fresh cilantro - 2 sprigs;
  • salt - to taste;
  • freshly ground pepper - to taste;

It is better to take small onions for avocado guacamole so that they do not interrupt the taste and aroma of other ingredients.

Cooking method:

  1. Wash the alligator pear thoroughly and dry with a towel.
  2. Divide the fruit in half. To do this, first make an incision along the entire circumference of the fruit, cutting the pulp to the bone.

  3. Next, the avocado halves are turned in opposite directions relative to each other, thereby moving the pulp away from the core.
  4. To remove the pit, place the avocado on a cutting board. Take your hands off the table to avoid injury. Taking a knife, very carefully hit the bone with it, making sure that the blade sinks slightly into the core. Turn the knife around its axis and remove the kernel. You can use a safer method: using a spoon, cut the avocado flesh around the pit and remove it.

  5. Drizzle lime or lemon juice over the avocado. This will prevent oxidation and darkening of the fruit.
  6. Using a spoon, scoop out all the pulp (you can simply cut off the peel) and grind in a blender until pureed.

  7. Wash the tomatoes well, dry and cut into small cubes.

  8. Peel the onion and finely chop.

  9. Peel the garlic and pass through a press.

  10. Rinse the cilantro sprigs under running water, dry with a towel and chop finely.
  11. Place all ingredients into a salad bowl, add salt and pepper and mix thoroughly.

It is recommended to serve the sauce immediately after preparation.

Ready guacamole is not left for later. It must be consumed immediately, otherwise it will become unusable due to oxidation. The maximum shelf life of the sauce is one day.

Shrimp salad sauce

Avocado sauce with canned tuna makes a great shrimp salad dressing. It is an excellent alternative to the usual mayonnaise.

  • 1 avocado;
  • 200 gr. canned tuna;
  • 150 gr. olives;
  • salt and pepper to taste.

To prepare the sauce, you need to buy canned fish; choose tuna in its own juice. Since when using fish in oil, the sauce will turn out to be excessively fatty. Remove the canned fish from the jar and mash with a fork. We don’t pour the liquid out of the jar yet, it may be useful to us.

We chop the olives, there is no need to chop them too much, since the sauce will still be crushed using a blender. Peel the avocado, remove the pit from the fruit and cut into medium-sized cubes. Grind the avocado, fish and olives using a blender until pureed. Salt and pepper the mixture. If it turns out to be too thick, then it can be diluted with the juice remaining in a fish can or brine from olives. The consistency of the sauce should be similar to mayonnaise.

Advice! In this recipe, olives can be replaced with pickled cucumbers, the taste of the sauce will change slightly, but it will still be delicious.

The benefits of avocado instead of mayonnaise

Everyone knows that mayonnaise is one of the most harmful products for the body. This is due to the high percentage of pure vegetable fat in it. In classic recipes, the content of sunflower oil reaches 79%, which is a serious burden on the body’s digestive system. The calorie content of some types reaches 700 kcal per 100 g of product.

According to nutritionists, using avocado can significantly reduce the calorie content and the total proportion of fat in the finished product. At the same time, the fruit, despite its rather high nutritional value, is very beneficial for the human body. It contains vitamins A, B2, E, PP, as well as the most important microelements for humans - potassium, magnesium, calcium and sodium.
