If you do not want to prepare an appetizer from raw fish, then first boil the fillet in a double boiler until cooked.

Preparation:

If you, like us, bought frozen mackerel, then, of course, you need to defrost it. It is better to do this gradually, without resorting to warm baths. Thaw at room temperature.

And here’s some advice: don’t wait for the fish to defrost completely, start processing it while it’s still slightly hard. This will make it easier for you to separate the fillets, remove the bones and remove the skin.

And we start by cutting off the head along with the fins strictly at an angle to the fish’s nose. Next, we will rip open the abdomen and remove the entrails. Immediately rinse the mackerel under cold water.

Now we separate the fillet. To do this, make cuts in the center of the back along the ridge on both sides and use a knife to separate the fillet part.

After this, carefully remove the skin.

Remove the remaining bones from the fillet, which can be easily felt with your fingers. And then, once the mackerel is ready for cooking, cut it into small pieces.

Place them in a bowl and pour vinegar on top and mix. The vinegar will kind of “cook” our fish. Let's leave it like this for half an hour.

Let's prepare the onion. We used two types of onions: sterling and red, but this is not necessary, you can use onions, you just want them to be juicy. Cut it into thin half rings.

Lightly rub the onion with your hands so that it releases its juice, and pour it into the already prepared mackerel. Immediately add the remaining ingredients: salt, sugar, a mixture of peppers, coriander, soy sauce and vegetable oil.

Mix all the ingredients of our delicious snack under the wonderful name Mackerel Xe and, closing the container with a lid, send it to steep in the refrigerator.

You can taste the dish in just a couple of hours, or you can leave it overnight.

  10. Mix the fish and onion with your hands (if desired, you can mix with two forks).
  11. Cover the bowl with a lid so that the vinegar does not evaporate, and in the meantime heat the sunflower oil in a ladle on the stove.
  12. When the oil is hot, open the bowl, put chopped tomatoes, chopped garlic and chili peppers and about 0.5 teaspoon of coriander (can be ground or whole) and marjoram (a pinch). Very carefully pour hot oil over the garlic and chili peppers until they fry. This must be done very carefully, because the oil is hot and the ingredients in the bowl are wet, the oil will splash and you can get scalded.
  13. Mix everything in a bowl and taste. If necessary, add more salt and vinegar. We transfer everything into a liter jar with a twist. Everything should lie very tightly so that it all marinates well.

Pour vinegar over fish fillets. Mix the fish pieces with vinegar well.

Cover the bowl with a small saucer and place a press (a bottle or jar of water, for example) on the saucer. Place the fish in the refrigerator to marinate for 40-60 minutes.

After this, drain the released liquid from the fish, not all of it, you need to leave a little liquid (a couple of spoons).

Peel the onion and cut into half rings.

Add the onion to the pickled mackerel.

Wash the carrots, peel and grate either on a medium grater or on a Korean carrot grater.

Add carrots to the bowl with the fish and onions.

Now it's time for the spices. I won’t be original and just add ready-made seasoning for Korean carrots, it will come in very handy here.

Pour soy sauce into a bowl.

Heat vegetable (ideally sesame) oil in a frying pan until a slight smoke appears on the surface of the pan and pour boiling oil over the mackerel with vegetables and spices. Mix everything well, usually soy sauce provides enough salt, but just in case, taste the dish for salt and, if necessary, add more salt.

Again cover the bowl with mackerel heh with a small saucer, put pressure or weight on it and put it in the refrigerator for 1-2 hours.
