How to cook semolina casserole in the oven. Semolina casserole recipe. How to cook semolina casserole with milk

Hello dear readers. Semolina porridge casserole takes me back to those years where the little boy Sasha played in the cities with his father. Where mom reads fairy tales, everything is saturated with warmth, our house is surrounded by affection, cozy and smells of goodness.

Nostalgia gnaws at my soul, I wish I could turn back time, but only semolina casserole pleases my eyes today. The trees were big, like a holiday welcoming a new day. The world, which was around for the first time, suddenly opened the door for me. It’s impossible to say in words, so I baked a casserole. Try it - it's not difficult, it will replace a bunch of lines.

Semolina casserole with raisins

  • 1 liter of milk;
  • 1 cup semolina;
  • Half a glass of sugar;
  • 1 cup seedless raisins;
  • 4 eggs;
  • 50 grams of butter;
  • Zest from one lemon;
  • Salt.

Today’s casserole recipe turned out a little sad. This week, Orthodox people celebrated Radonitsa. So I decided to prepare a semolina porridge casserole on All Souls’ Day. I immediately remember times when the whole family gathered at a large table in full force.

My brother and I were never particularly honored, but for that reason the casserole made from it was a huge hit. So if someone cannot persuade their child to eat porridge, I advise you to use a trick and try this method of influence - it is appetizing and very tasty. And then you look at the semolina porridge, the kids will respect it.

How to cook

Pour semolina into a boiling liter of milk, stirring constantly.

The porridge thickens before our eyes. After about a couple of minutes, I remove the pan from the heat and let it cool.

Wash the eggs, break the shell and separate the whites from the yolks.

I pour half a glass of sugar into four egg yolks and grind them vigorously.

I grate the zest from the lemon and combine it with mashed yolks and sugar.

I rinse the raisins under running warm water and mix them into the yolk mixture.

I combine semolina porridge and a mixture of yolks, raisins and sugar.

I beat the whites in a blender into a fluffy foam. At the same time, I add a whisper of salt to them.

I carefully fold the whipped egg whites into the semolina porridge with raisins.

I put the resulting fluffy mass into a silicone mold.

Place pieces of butter on top of the casserole.

I put it in the oven preheated to 190 degrees. After 40 minutes of heat treatment of the semolina mixture, its surface is covered with a beautiful and, which notifies me that the cooking process is complete.

Description

One day, my daughter, coming home from kindergarten, spoke with delight about the unusually tasty dish that was served for afternoon tea.

When, as usual, I asked what delicious food was being fed today, the answer left me in amazement. Potatoes with jam!!! Like this? – I thought, I’ve never tried such exotic things and haven’t even heard of them!

But in our kindergarten they prepared something so tasty and sweet that the child ate every last crumb, although it is not always possible to please her taste. I asked whether potatoes could really be sweet, but my daughter stubbornly insisted on her version. So it remained a culinary mystery. A couple of years have passed since then, we moved from the junior group to the senior group, and now I again remembered the mysterious kindergarten “know-how”. When asked if they give you potatoes with jam, the child replied that they never gave you any more. And I really wanted to reproduce the amazing deliciousness at home. Through questioning, we were able to clarify some details about the mysterious dish. It was cut into rectangles, like an omelette; white, like a casserole, and sweet... What if it... is very similar to... semolina casserole!

I’ve never made semolina porridge casseroles before, only cottage cheese casseroles, to which a little semolina was added. And now I decided to make a casserole entirely from semolina. Well, what will happen?..

Hearty dessert for health

When the people of Israel wandered in the desert for 40 years, God gave them manna from heaven, which they used to prepare healthy meals. And perhaps even then they knew how to prepare semolina casserole in the best possible way. More than 4 thousand years have passed since then, but each of us knows how healthy this delicate dish is.

Let's try to use this recipe, which includes the following set of components:

  1. Kefir or fermented baked milk is poured into a large container. Add low-fat cottage cheese and grind until smooth.
  2. Next, add semolina, beaten eggs, granulated sugar and salt to the mixture. Stir and leave for 15 minutes.
  3. While the mixture is infusing, sift the flour and baking powder, and then add it to the semolina gruel. Mix the mixture thoroughly with a wooden spoon.
  4. The oven is set to 200 degrees. While it is heating up, the mold is generously greased with vegetable fat. Then the mass is carefully transferred there and immediately placed in the oven for 25 minutes.

Semolina casserole prepared according to this recipe in the oven, served with berry syrup or jelly. Calcium-enriched food will not only strengthen children’s bodies, but will also give strength to adult fans of healthy food.

The semolina dessert will retain its original shape if it cools completely in the baking pan.

Instructions:

Let's cook thick semolina porridge - the basis for the casserole (and if you have yesterday's semolina, great!). Pour semolina and 1 spoon of sugar into cold milk and cook, stirring all the time, over low heat. There are recipes in which you add semolina to boiling milk - I didn’t do that, it seems to me that to avoid lumps, it’s better to add it to cold milk. The main thing is not to be distracted - if you forget to stir the porridge for a minute, lumps will appear and you will have to catch them and grind them.

If you feel like there is not enough semolina and the porridge is too thin, don’t rush. When the milk starts to boil, the porridge, as if by magic, will instantly thicken. When it becomes thick and starts to gurgle, it’s ready! Turn off and transfer to a wide plate to cool quickly. Stir from time to time so that a crust does not form on the surface of the porridge.

When the porridge is slightly warm, you can continue. Beat the eggs with the remaining 3 tablespoons of sugar until fluffy and pour the whipped mass into the semolina porridge. Place a spoonful of softened butter there, add vanilla sugar, salt and mix thoroughly.

Let's prepare a mold (or cast-iron frying pan) by greasing it with butter and, of course, sprinkling it with semolina (I think this is more suitable for semolina casserole than with crackers).

Place the semolina mass in the mold and level it out.

Bake in the oven at 180C until the mass stops shaking like jelly, thickens and begins to brown. If you want a brighter blush, turn it up to 200C for a few minutes.

So the semolina casserole is ready - like the sun! Let it cool in the mold so that it does not fall apart when taken out, and then transfer it to a dish using a lid from a large saucepan.

Cut into segments, rectangles or diamonds, as you like, and serve with berries, jam, sour cream or marmalade!

White? Yes! Sweet? Exactly! All that remains is to spread the jam, and there will be those same amazing “potatoes”... In terms of consistency and appearance, semolina porridge casserole really looks a little like mashed potatoes :) But much tastier!

Alexander Gushchin

I can’t vouch for the taste, but it will be hot :)
