How to cook
Pour semolina into a boiling liter of milk, stirring constantly.
The porridge thickens before our eyes. After about a couple of minutes, I remove the pan from the heat and let it cool.
Wash the eggs, break the shell and separate the whites from the yolks.
I pour half a glass of sugar into four egg yolks and grind them vigorously.
I grate the zest from the lemon and combine it with mashed yolks and sugar.
I rinse the raisins under running warm water and mix them into the yolk mixture.
I combine semolina porridge and a mixture of yolks, raisins and sugar.
I beat the whites in a blender into a fluffy foam. At the same time, I add a whisper of salt to them.
I carefully fold the whipped egg whites into the semolina porridge with raisins.
I put the resulting fluffy mass into a silicone mold.
Place pieces of butter on top of the casserole.
I put it in the oven preheated to 190 degrees. After 40 minutes of heat treatment of the semolina mixture, its surface is covered with a beautiful and, which notifies me that the cooking process is complete.
On semolina with apples
A quick, very simple, healthy and tasty cottage cheese made from ingredients that you usually have on hand. It only takes a few minutes to prepare.
Let's prepare:
- 2 table. l. semolina;
- 400 g cottage cheese;
- 2 eggs;
- 2 tbsp. Sahara;
- 1 apple;
- 100 g margarine;
- 2 tsp. potato starch;
- 1 tsp. l. baking powder;
- Vanillin;
- 1 table. l lemon juice;
- 10 g zest;
- Cinnamon if desired.
Beat eggs with vanilla and granulated sugar. Add the cereal here, mix and leave for at least 5 minutes. Melt the margarine and let cool a little, add the cottage cheese and egg-semolina mixture, mix well. Add starch and baking powder, lemon zest and juice.
Place in a mold and place in a preheated oven for 15 minutes. While the casserole is baking, peel the apple, remove the center and cut into slices. The main thing is not to be distracted - if you forget to stir the porridge for a minute, lumps will appear and you will have to catch them and grind them.
If you feel like there is not enough semolina and the porridge is too thin, don’t rush. When the milk starts to boil, the porridge, as if by magic, will instantly thicken. When it becomes thick and starts to gurgle, it’s ready! Turn off and transfer to a wide plate to cool quickly. Stir from time to time so that a crust does not form on the surface of the porridge.
When the porridge is slightly warm, you can continue. Beat the eggs with the remaining 3 tablespoons of sugar until fluffy and pour the whipped mass into the semolina porridge. Place a spoonful of softened butter there, add vanilla sugar, salt and mix thoroughly.
Let's prepare a mold (or cast-iron frying pan) by greasing it with butter and, of course, sprinkling it with semolina (I think this is more suitable for semolina casserole than with crackers).
Place the semolina mass in the mold and level it out.
