- 35 ml sunflower oil.
- 1 tbsp granulated sugar.

Koreans do not use black pepper for “He”, only hot red pepper - the taste and aroma of pickled herring largely depends on the spices. This hot ingredient is added to hot oil, which is poured over the fish without cooling. After this, let it brew, mix and serve. This herring will definitely surprise guests and family with its exotic taste.
Ingredients for making herring heh:
- Fresh herring 1 kilogram (3–4 pieces)
- 1 carrot (large)
- Onion 1 piece (large)
- Table vinegar 9% 1/2 cup
- Vegetable oil 1/2 cup
- Sugar 2 tablespoons
- Salt 2 tablespoons
- Ketchup 2 tablespoons
- Ground black pepper pinch
- Ground red pepper pinch
- Ground bay leaf pinch
Take fresh or frozen herring, place it on a cutting board, cut off the head of each fish, gut the carcasses one by one, remove the entrails, rinse them under cold running water and dry with paper kitchen towels. Then we cut the herring into fillets, which, in turn, are cut into thin strips or small slices and left on the board.
Next, peel the onions and carrots, rinse them under cold running water and dry with paper towels. After this, grate the carrots on a medium or fine grater, and cut the onion into rings or half rings up to 5 millimeters thick. Leave the cuts on the board and proceed to the next step
Pour the required amount of 9% table vinegar and vegetable oil into a deep bowl. There we also put sugar, salt, ketchup, ground bay leaf, as well as two types of pepper: black and red. Mix these ingredients with a tablespoon until smooth - the marinade is ready!
Now put carrots, fish and onions in layers in a sterilized liter jar until the food runs out. Next, fill them with the previously prepared marinade, close the jar with a tight-fitting plastic lid and put it in the refrigerator for at least 6 hours, maximum 12 . After the required time has passed, place the herring heh on a dish or in a salad bowl and serve
Herring khe is served chilled as an appetizer or as a main dish for the Lenten table. After infusion, the herring acquires a slightly sour, spicy, one might say, piquant aftertaste. Herring heh at home - tasty and fast
Let's prepare a spicy Korean dish - herring heh. The appetizer turns out to be very tasty, satisfying and aromatic, moderately spicy. Thanks to the marinade, the herring turns out very tender and juicy.
Herring heh is prepared quickly; the longest process is preparing the fish.
The finished snack can be stored in the refrigerator for quite a long time, so it can be prepared for future use and stored in a glass container. This dish is suitable for a festive feast.
Using the same recipe, you can cook not only herring, but also mackerel, carp fillet or silver carp.
Korean herring khe at home
- fresh frozen herring – 1 kg;
- carrots – 1 pc.
- onions - 4-5 medium heads;
- tomato paste – 2 tbsp. l.;
- table vinegar 9% – 50 ml;
- vegetable oil – 125 ml;
- coarse salt - 1 tbsp. l.;
- red pepper – 0.5 tsp;
- black pepper – 0.5 tsp;
- fresh dill - 2 sprigs for decoration.
Cooking sequence
Freshly frozen herring must first be thawed. To do this, take it out of the freezer in advance, remove it from the packaging and put it in a deep bowl. Leave the fish at room temperature until it thaws completely. It is not advisable to defrost herring in warm water, oven or microwave. Thawed, washed fish must be cut. Place the knife blade under the fin and cut off the head. Next, cut off the herring’s tail and fins. Let's cut the belly of the fish. Remove the caviar or milk (they can be salted or thrown away). Remove the entrails and wash the fish. Carefully remove the skin from the fish. Separate two fillets from the backbone and remove all large bones from the fish.
Cut the herring fillet into portions 2 cm thick. Transfer the chopped pieces of fish into a deep bowl. For added spiciness, you can additionally add fresh grated garlic.
Peel the onion heads, wash them under running water and cut them into half rings. If the onion is large, then it must be cut into quarter rings.
Grind the washed and peeled carrots into thin strips on a Korean vegetable grater. If you don’t have such a device, chop the carrots on a regular grater or chop them finely.
Add chopped vegetables to the fish bowl. Mix the mixture thoroughly. Add salt and spices. The amount of red and black pepper can be adjusted according to your taste preferences. Additionally, you can add ground coriander, smoked paprika or nutmeg.
Pour 9% table vinegar into the mixture. Mix all the ingredients.
Combine oil and tomato paste in a frying pan. Stirring to combine the oil with the paste, fry the mixture for 4-5 minutes over low heat. Then cool the tomato mixture to room temperature.
Pour the cooled tomato mixture into the bowl with fish and vegetables. Let's mix everything again. Let's put it in the refrigerator for 12 hours.
