How to cook

For this recipe we will use thick currant jam, but you can use any variety you like. Also, choose your cocoa responsibly – confectionery cocoa powder is not suitable for a delicious pudding. Let it be real cocoa, consisting of 80-90% ground cocoa beans. Of course, it will cost more than cocoa powder, but the taste and aroma of the resulting pudding are worth it!

Required ingredients:

  • Semolina 1 cup
  • Milk 400 ml
  • Chicken egg 5 pieces
  • Sugar
  • Butter
  • Cocoa 2 tablespoons
  • Currant jam 3 tablespoons

Cooking method:

  1. First of all, let's cook semolina porridge. Pour milk into a saucepan, bring to a boil, add semolina in a thin stream, sugar and salt. Cook until thickened. Add butter to the prepared porridge, stir with a spoon and let the porridge cool.
  2. Break the egg, separate the white from the yolks. Add the yolks to the cooled porridge and stir.
  3. Beat the egg whites with a blender at high speed for about 5-7 minutes, then add the resulting foam into the porridge and mix with a spoon.

Place the pudding dough in a greased pan. It needs to be filled 2/3 of the way to leave room for the pudding to rise. You can use a frying pan without a handle as a baking dish. Or you can take cake molds and the finished pudding will look even more appetizing. Place on the middle shelf in an oven preheated to 180 degrees for 30 minutes. When the top crust is browned, you can reduce the heat in the oven. Take out the finished pudding and let it cool in the air. After this, remove the dessert from the mold and serve.

Rice pudding

If you want to make rice pudding for your baby, then for this dish you will need:

  • 350 grams of round rice;
  • 500 ml water;
  • 500 ml milk;
  • a pinch of salt;
  • 100 grams sl. oils;
  • 150 g sugar;
  • about two tablespoons of vanilla sugar;
  • 4 eggs;
  • powdered sugar.
  1. Place the washed and dried rice in a saucepan.

  2. Fill with water, add a pinch of salt and cover the pan with a lid. Cook over medium heat (stirring occasionally) until all the water is absorbed.

  3. Pour milk into a container with rice, stir, cover the pan.

  4. Cook over low heat (stirring occasionally) until the rice is soft and the milk has been absorbed. (This takes about 20-30 minutes, depending on the cereal used).

  5. Remove the pan from the heat, remove the lid, and let the rice cool.

  6. Meanwhile, over a separate container, separate the yolks from the whites.

  7. Add sugar, including vanilla, and room temperature butter to the egg yolks. Mix everything well until it has a smooth, creamy and fluffy texture. Set the resulting mixture aside.

  8. Beat the egg whites until soft peaks form.

  9. Add the egg yolk mixture to the cooled rice and stir gently until smooth.

  10. Add the egg whites and gently fold into the rice mixture. (Be careful not to disturb the fluffy texture of the egg whites!)

  11. Grease a baking dish (I used 30x20x5 cm) with oil.
  12. Pour the rice mixture into the mold and bake in a preheated oven at 180°C for 35-40 minutes.

  13. We take out the form. Serve after cooling.

  14. If desired, sprinkle the finished pudding with powdered sugar.
