This classic recipe for nettle soup, which many also call vegetarian, was prepared by our grandmothers and great-grandmothers. And now, despite the fact that the 21st century is already outside, this dish still remains in the cookbooks of many cooks - both professionals and amateurs, like you and me.

What you will need:

  • nettle – 300 gr,
  • potatoes – 4-5 pcs.,
  • onion – 1 piece,
  • carrots – 1 piece,
  • chicken egg – 4 pcs,
  • green onions, dill - to taste,
  • salt, pepper to taste.

If desired, this soup can be prepared in water, or you can use meat broth. It will turn out even tastier. But we have a classic recipe, which means we will cook it in water.

How to cook

Place a pan with water or meat broth on the stove - whichever you prefer. Bring to a boil. While we're waiting, let's fry it.

Peel the onion and cut into cubes. Pour oil into a frying pan and add onions. Fry for about 2 minutes, stirring vigorously.

Peel, wash and grate the carrots. Pour the carrots into the onions and simmer the vegetables together until the carrots become soft. As a rule, this can be done in literally 2 - 3 minutes.

We peel and wash the potatoes. Cut into small cubes, or maybe into strips. As soon as the water in the pan boils, add the potatoes first. It will take the longest to cook, so it should be the first to be added to the future soup.

Boil eggs in a separate pan. This must be done until the product is completely cooked. And this will take about 10 minutes.

Now let's start cutting the nettles. First we wash it under running cold water. And to avoid being stung by the leaves of the plant, it is best to wear thin medical rubber gloves.

After washing, pour boiling water over the leaves. Then put it in a colander, let the water drain and chop it.

As soon as the potatoes are cooked, add the frying from the frying pan to the pan. Let the soup boil and simmer for about 2 minutes.

Next are nettles and all the other greens, which we also chopped with a knife. At this point you can add ground black pepper for taste and aroma.

After adding all the ingredients, let our soup simmer for a few more minutes, then cover with a lid, turn off the heat and leave to steep for 20 minutes.

Then we add it to the table. At the same time, add a quarter of an egg to each plate for a greater appetite. You can also add a tablespoon of sour cream for taste. And serve it to the table not too hot.

Nettle soup with dumplings and egg

For most people, nettle is a weed, but others continue to use it to create new culinary masterpieces. For example, like this one with koloboks.

Children will happily eat this, because dumplings are what attract them. It looks more original with them and, as always, it’s also delicious. The cooking technology is almost no different from the three options that were made before, but still.

Chop the onions and carrots, it is preferable to do it this way, the onions - into half rings, and the carrots - on a grater.

2. Next, fry, melt a piece of butter in a frying pan and add vegetables. Fry until golden brown.

Place potato slices into the already cooked meat broth and cook for 20 minutes.

3. Make the dumplings in a bowl, combine the milk, eggs and flour and stir with a fork. Don't forget to add salt and your favorite spices. The result will be a thick consistency, reminiscent of pancake batter or something similar.

Add pieces of meat and frying to the boiling stew.

5. And then the nettle leaves, which you chop using a sharp knife into any shape, but so that the pieces are not too long and large.

Nettle soup

Summer is a wonderful time when you can enjoy fresh greens to your heart's content, even if they are as “biting” as nettles. Nettle is commonly added to salads, pancakes, or pie fillings, but the plant is most often used in soups. Nettle soup will delight you not only with its excellent taste, but also with its health benefits.

First of all, nettle is one of the record holders for vitamin C content - the leaves of young nettle contain twice as much of it as black currants. Nettle also contains vitamins A, B1, B5, E and K, beta-carotene and minerals such as potassium, calcium, iron and manganese. Thanks to this, nettle perfectly strengthens the immune system, normalizes blood clotting, improves vision and has anti-inflammatory properties. It is worth noting that nettle does not lose all these healing properties during heat treatment - isn’t this a reason to prepare an appetizing and healthy nettle soup for the joy of the whole family?

The “biting” grass should be collected in environmentally safe areas away from highways and street yards. If nettle grows in abundance in your garden plot, you are extremely lucky. To prevent the plant from “stinging” you, use gardening gloves; it is best to collect young nettles, the leaves of which are more delicate and not as stinging as those of the old one. It is only necessary to pluck the leaves from the tops of the stem, after which they need to be scalded with boiling water so that the greens no longer burn the skin.

Nettle can be used to make either a vegetarian soup using water or vegetable broth, or a meat version of the soup using chicken, lean pork or beef. Potatoes, carrots, onions, cabbage, mushrooms and beans are usually added to nettle soup, but the options for preparing this dish are limited only by your imagination - you can add processed cheese to the soup, making it creamy, or seafood (shrimps and mussels), turning the soup into a real gastronomic masterpiece. In soups, nettle goes well with other greens such as sorrel, spinach, dandelions, parsley, dill, green onions, quinoa, etc. The more greens you add to the soup, the healthier your dish will be. Nettle, like other greens, should be added to the soup very last, a few minutes before it is ready, in order to preserve all its beneficial properties. When you calculate the required amount of greens for soup, keep in mind that nettle boils down significantly. Nettle soup is perfectly complemented by sour cream and chopped boiled eggs. And now “Culinary Eden” brings to your attention a selection of delicious recipes for this wonderful soup.
