Uzvar: a recipe for a rich drink made from dried fruits and desserts from it

Western Ukraine is considered the birthplace of uzvar, and it was from there that the drink spread. Uzvar of dried fruits and kutia are traditional dishes of the festive table on Christmas Eve. The presence of a drink on the table has always been considered a symbol of fertility, a well-fed life and wealth.

The name “uzvar” itself comes from the word “brew”. The dried fruits used to prepare the drink do not need to be cooked for a long time; just bring them to a boil and remove from the stove.

It is not only tasty, but also healthy. The fact is that in the winter-spring period the human body is weakened due to frost and constant exposure to enclosed spaces. It is dried fruits, when consumed regularly, that help in the fight against colds, normalize the digestion process, support the body's protective functions, and improve the structure and appearance of the skin and nails.

Dried fruits are also used to prevent cardiovascular diseases, anemia and diseases of the digestive tract. Dried fruits contain fructose, which is easily absorbed by the body and does not cause as much harm to humans as sugar does. Therefore, it is better to give preference to dried fruits rather than cakes and pastries.

Uzvar is prepared quickly, the dried fruits are brought to a boil once and do not cook further. Thanks to this, all the beneficial substances in the drink are preserved. You can sweeten the uzvar with sugar or honey. This will change the technology for preparing the drink a little.

Classic recipe for making uzvar

You will need:

  • 100 g dried apples;
  • 100 g dried pears;
  • 100 g prunes;
  • 50 g raisins;
  • 2 tbsp. l. honey;
  • 3 liters of water.

Cooking steps:

  1. All dried products should be filled with clean cold water and left for 30 minutes. If possible, you can leave dried fruits soaked overnight.
  2. After the time has passed, the dried fruits must be thoroughly rinsed under running water. It is enough to wash home-made drying a couple of times, but store-bought drying needs to be washed more thoroughly.
  3. To prepare uzvar with sugar, you need to boil water, add granulated sugar to it, and then add dried fruits.

  4. After the ingredients boil, they need to be removed from the stove.
  5. This recipe uses honey, so first you need to pour cold water over the dried fruits and boil. After the drink has cooled to 60 degrees, you can add honey to it.
  6. You need to cool the brew with the lid closed and well wrapped in some kind of blanket. This way the dried fruits will impart more of their flavor to the drink. Honey must be thoroughly stirred until completely dissolved.

At an uzvar temperature of no more than 60 degrees, honey will not lose its healing qualities and will retain all useful microelements. The cooled drink must be poured into a jug or decanter and sent to the festive table.

  • Dried fruits (dried apples, dried apricots, prunes, raisins, cranberries) - 250 g

  • Water - 1 l

Cooking method:

  1. Rinse dried fruits thoroughly, add water and let steep for about 3-4 hours.
  2. Then pour the water into a saucepan and bring to a boil. Place the fruits in a jar, pour boiling water over them, add the zest, cover with a lid, wrap in a towel and leave overnight.
  3. Before serving, pour the uzvar and serve the fruit separately in a bowl. Serve with honey.

Uzvar recipe with cherries and dried apricots

In addition to other beneficial properties, such a drink will also have a diuretic effect.

You will need:

  • 50 g each of raisins, dried apricots and prunes;
  • 80 g each of dried apples, pears and cherries;
  • 2 liters of water;
  • citric acid to taste;
  • 3 tbsp. honey

Cooking steps:

  1. Pour water into a saucepan and bring it to a boil.
  2. Dry thoroughly washed dried fruits with a towel and place in boiling water. After another boil, you need to boil the drying for five minutes.
  3. Add a little citric acid and honey to the cooled drink and mix the uzvar thoroughly.

Uzvar of dried apples and pears

Ingredients:

  • Water - 2 l
  • Dried apples - 200 g
  • Dried pears - 300 g
  • Prunes – 200 g
  • Raisins – 100 g
  • Honey - 200 g

Cooking method:

  1. Soak dried fruits in cold water for 10 minutes, then rinse.
  2. Boil 2 liters of water in a saucepan, put pears in it and cook for 20 minutes.
  3. Then add apples, prunes and raisins. Cook for 15 minutes.
  4. Add honey, bring to a boil and remove from heat. Cover with a lid and leave to cool. Strain. You can add less honey - depending on your taste.

Rosehip uzvar

To maintain immunity in winter, you can prepare an uzvar from rose hips.

You will need:

  • 50 pcs. rosehip;
  • 1 liter of water;
  • sugar or honey

Preparation:

The washed rose hips must be poured with cold water, placed on the stove and brought to a boil. Cool the drink and add the required amount of sugar or honey to taste.

Dried fruit uzvar

An important rule in preparing uzvar is boiling the drink. This must be done for 20 minutes over low heat, then the drink must be infused for up to 12 hours. You can make uzvar from pears or uzvar from apples, but it’s tastier to use an assortment that includes dried pears and apples, dried apricots and other dried berries and fruits.

Ingredients:

  • prunes – 50 g;
  • 2 tablespoons tbsp. honey;
  • 50 g. hawthorn;
  • 50 g dried apricots;
  • 2 liters of water;
  • 100 g assorted drying;
  • cherry – 50 g;
  • raisins – 50 g;

Cooking steps:

  1. Sort through the dried fruits and rinse, then place in a bowl. Pour in warm water and cook over low heat.
  2. Bring the drink to a boil and add honey.
  3. After boiling, cook for another 20 minutes. Leave the finished uzvar to infuse under the lid.
  4. Strain the drink through a sieve, then through cheesecloth. Pour the uzvar into a jug.

Traditionally, sugar is not added to the uzvar recipe, but it is customary to sweeten the drink with honey at Christmas.

What is uzvar?

Uzvar is a drink typical of Belarusian and Ukrainian cuisines. Simply put, this drink is a compote made from dried fruits. Basically, apples, pears, and prunes are used to prepare uzvar. However, different uzvar recipes may include raisins, dried cherries and even dried apricots.

Moreover, some housewives add cinnamon, star anise and nutmeg to the uzvar. These spices help give the drink an exotic taste.

Whatever ingredients you include in uzvar, its main character is honey, which helps create a unique taste and aroma. Honey adds sweetness by replacing sugar.

Uzvar is traditionally served for Christmas dinner. It is especially popular in countries such as Ukraine, Russia, Poland and Lithuania.

Uzvar can be consumed both hot and cold. However, traditionally it is served cold.

Apple uzvar with honey

Honey in uzvar promises a rich sweet life. If you want to pamper your guests at the festive table with a delicious drink, use a simple recipe for apple uzvar.

Apple uzvar with honey. Ingredients:

  • dried apples - 200 g
  • honey - 4 tbsp. spoons
  • water - 1.5 l

Apple uzvar with honey. Preparation:

To prepare uzvar, wash dried fruits and place them in a pan. Bring water to a boil and pour it over the prepared apples. Cover the pan with a lid and let the drink brew for a couple of hours. After this time, strain the uzvar through cheesecloth or a fine strainer. After this, add honey to the liquid and stir until completely dissolved.

Recipe for uzvar with apples

Uzvar can be prepared from both dry and fresh apples. For 3 liters of water you will need 500 g of fresh apples. It is necessary to thoroughly wash the fruits and cut them into thin slices, removing the core. Then pour boiling water over the chopped apples, add spices (mint, cinnamon, cloves, etc.), cover with a lid and leave for 4-5 hours. The apple soup is ready.

Dried fruit uzvar recipe

To prepare uzvar from dried fruits, take 400-500 g of various dried fruits (dried apricots, raisins, figs, dried oranges, apples, pears), half a glass of sugar, a tablespoon of starch or oatmeal, a liter of water.

First, you need to thoroughly rinse the dried fruit mixture, clear it of debris and separate the dried apples and pears from the rest of the fruit. First of all, fill the apples and pears with water (since they take the longest to cook), add sugar and put the pan on the fire. Cook for 20 minutes, then add the remaining ingredients (raisins, dried apricots, prunes, figs, dried cherries, etc.) and cook for another 5 minutes. Next, dilute the starch (or flour) in cold water, pour it into the pan and bring to a boil. At the end, add spices as desired (cinnamon, cloves, cardamom, star anise, etc.).

The finished dried fruit uzvar must be cooled and served cold.

Recipe for uzvar with rose hips

Rosehip, or wild rose, is a rich source of vitamin C, so rosehip drinks are a very effective remedy for strengthening the immune system and treating colds.

To prepare uzvar you will need 40-50 dried rose hips, a liter of water, 2 tablespoons of honey and half a glass of sugar.

We thoroughly wash the rose hips and place them in boiling water. Cook for 3-4 minutes, then remove from heat and let the uzvar brew under a closed lid for about half an hour. After this, add honey and sugar. (If desired, sugar can be completely replaced with natural honey). Honey should only be added to a cooled drink to preserve all its beneficial properties.

If you are preparing uzvar with honey, you can immediately fill the dryer with cold water and place it on the stove. Then bring the uzvar to a boil and immediately remove from the stove. Cover with a lid and leave. And only when the drink has cooled to a warm state, add honey.

The fact is that at temperatures above 60*C honey loses some of its beneficial properties and in order to preserve all its qualities we add it to a warm uzvar.

Benefits of uzvar

Since dried fruits (apples, pears, raisins, prunes, cherries, dried apricots, hawthorn) are used to prepare uzvar, it is quite possible to guess that this drink has invaluable benefits for our body.

It is known for certain that dried fruits contain more minerals than fresh fruits. Dried fruits contain vitamins: A, B1, B2, B3, C and pectin, cellulose and glucose, which is beneficial for the brain, which are very important for the normal functioning of the intestines.

Pears and apples are good antioxidants. Therefore, consuming uzvar helps fight free radicals in the body.

It should also be noted that this drink helps reduce inflammation, strengthen the immune system, increase hemoglobin, improve the functioning of the intestines and gastrointestinal tract as a whole, normalize the functioning of the cardiovascular and respiratory systems, and also remove harmful salts and cholesterol from the body.

Christmas uzvar-kisel

An unusual version of thick uzvar using starch. It will be loved by adults and children who want to experience the pleasant taste of traditions and Christmas holidays.

Christmas uzvar-jelly. Ingredients:

  • dried fruits - 500 g
  • sugar - 3 tbsp. spoons
  • starch - 2 tbsp. spoons
  • water - 1 l

Christmas uzvar-jelly. Preparation:

The best ingredients for making a winter drink are apples, raisins, pears, prunes and cherries. Rinse dried fruits and cover them with cold water. After adding sugar, place the pan on the stove and simmer the drink over low heat until the fruit is soft. Separately mix water and starch, pour it all into a hot uzvar, bring the drink to a boil, then cool.
