Cake decoration for September 1st

Autumn cakes - master class for confectioners

Seasonality is one of the basic culinary traditions. It justifies itself not so much from an economic point of view, but from the freshness of ingredients and regional characteristics. Italian cooking can rightly be called the standard of the seasonal principle. February blood oranges, April artichokes, June pumpkin flowers... But is seasonality really that important when we're talking about desserts?! Of course, you shouldn’t fall into madness and preach only it alone in tastes and design. But there is no need to ignore it completely. After all, each season is filled with its own symbols and signs, and what to choose from them and how to interpret is only a matter of your imagination. Here it is, autumn. What is she like? Bright and fertile, or perhaps languid and romantic?! We talked with Kaliningrad confectioners about autumn trends in desserts and selected for you the most current trends of this season. So what is it, the perfect autumn cake?! Choose yours and get inspired!

Autumn is bright.

With the arrival of September, the nature around us is unusually transformed: the days become shorter and colder, the sun changes its position, plants and grasses are painted in bright shades. Yellow, orange, crimson - an excellent palette for creating a juicy and colorful cake. You can't do without food coloring here. We rejoice with you in the color possibilities of AmeriColor and FoodColour. After all, even an artist would envy such a wide selection of shades. Just a few drops from “just a cake” to a juicy autumn masterpiece.

Yulia Parfenchikova/ @sweetbakerykld:

“Autumn cakes are special. I love them the most. Immediately associations arise with spices, mulled wine, apple and pumpkin pies. And as soon as you dream of a golden autumn, you immediately want to prepare cakes for this time of year. Pumpkin, nut, apple, carrot... The latter are my favorite ones. With caramelized nuts and orange zest - delicious! But the design is dominated by yellow and orange colors. The cake can be complemented with beautiful gingerbread cookies in the shape of maple leaves, and beautiful twists can be made from isomalt. Well, or decorate with a slide of berries, emphasizing the color contrast.”

Autumn is fertile

Autumn is the time to harvest. Apples, berries, mushrooms, vegetables... and all this can end up on your cake. Firstly, we all know about the possibilities of chocolate and sugar paste (mastic). With their help you can create absolutely any decor. Secondly, why not make the cake itself in the shape of, say, a pumpkin. And do it without a gram of mastic. How, you ask?! For the answer, let's go to modern mousse desserts. It is thanks to this pastry trend that you can create cakes of incredible shapes and designs. Silicone molds from Pavoni or Silikomart, chocolate velor, glaze and a bit of hard work.

Natalia Panasyuk / @paninatali:

“Many ideas for decorating autumn cakes are suggested by nature itself, the main thing is to be able to notice them and bring them to life... What is an autumn cake? In my opinion, bright, colorful and perhaps even provocative... Or it can be very warm, cozy and calm in color scheme. In decoration, in addition to the gifts of nature, of course, it’s time for chocolate decor, in combination with red, burgundy, orange shades, chocolate elements will add warmth and aroma.”

Autumn is rainy and romantic.

Well, from the cheerful aspects of autumn we move on to the natural ones. Low sky, clouds, rainy evenings. All this autumn mood manifests itself especially characteristically on the Baltic coast. But, as they say, nature has no bad weather. Therefore, all the autumn thoughtfulness is ideally transformed into cakes of muted, dusty shades.

Tatyana Pinyaeva/ @ti_cake_for_you:

“Rain, thunderstorm, autumn is a time for stories, for yours naturally... At this time you want calmer, pastel and even, to some extent, melancholic colors with notes of tenderness and romance... This is exactly the color I chose for the decor of this autumn cake . And to emphasize the seasonality, just add slices of figs and splashes of amber gold..."

Autumn is burgundy.

One of the persistent autumn trends is, of course, the theme of wine and winemaking. Deep, warm shades of plum, grape and dark berries are colors that will warm you up in any rainy weather. Bordeaux, Marsala, eggplant... Cakes decorated in this range are distinguished by a certain severity and sophistication. Light desserts decorated with flowers or other wine-colored elements look especially elegant and laconic.

Autumn is mystical.

Some fabulous autumn associations: a mysterious forest, roots, lonely walks, mystical moods. Try to create an elegant fantasy on your dessert using mixed techniques: experiment with molds from Silikomart, add chocolate decor of a non-standard style, find a new color solution.

Yulia Semich /@berrymore_cakes:

“In autumn, the theme of nature in cakes is at its peak. And the decor here can be very diverse: tree leaves and bark made of mastic and wafer paper, roots and twigs made of chocolate, biscuit moss, mousse apples covered with mirror glaze or velor and much more. In the design you can use absolutely any colors from pastel to bright. I want to emphasize a certain mystery and attractiveness of autumn and add bright spots.”

Natalia Panasyuk / @paninatali:

“As for the inner world of autumn-themed cakes, how can one do without spicy pear, bright sea buckthorn and daring cranberries... Well, the favorite is still the same chocolate with nutty notes.”

Autumn is regional.

Seasonality always keeps pace with regionality. Each climate zone is rich in its own specialties. For the Baltic coast, sea buckthorn is undoubtedly such a special autumn product. Bright, original and so soulful.

Tatyana Pinyaeva/ @ti_cake_for_you:

“As a child, my grandmother always made sea buckthorn jam in the fall, so fragrant and tender, and brewed rosehip tea... The aroma of sea buckthorn spread throughout the house and it became so warm and cozy, even on the cloudiest day. For me, the ideal autumn dessert is a fragrant sea buckthorn cake, combined with a dark chocolate sponge cake and coffee...”

Blackboard Cake

You can make a beautiful cake with a blackboard. You will need :

  • white mastic, black and brown dye (or ready-made colored mass);
  • powdered sugar or flour;
  • water.

Tools:

  • ruler;
  • knife;
  • rolling pin;
  • toothpicks (read about alternatives in step No. 3);
  • latex gloves;
  • brush.

You can take a piece of sugar mastic or chocolate for modeling and paint it black. Read about coloring rules here. The color should be rich. You can also use brown or green mass of a suitable shade.

The procedure is as follows:

  1. To make a first grade cake decoration, roll out the fondant and cut out rectangles for future chalkboards. Make preliminary markings using a ruler and use a well-sharpened knife.
  2. Leave the rectangles at room temperature overnight to dry.

  3. Using a pen with edible ink, a toothpick, a stack or a needle, cut out the inscription on the board. For example, these could be the first letters of the alphabet.

  4. Take powdered sugar or flour and sprinkle it on the cut out lettering.
  5. Rub the powder into the letters with gloved hands, then brush away any excess.

  6. If you look at the photo of the first grade cake with a chalkboard, you'll notice what's still missing: a frame. For it, cut out strips of the required size from brown mastic.
  7. Glue the strips to the board with edible glue, egg white or water.
  8. For chalk, take a piece of white mastic.

Ready! Use the resulting chalkboard to decorate your own cake for September 1st. Visual video of the process:

How to decorate a cake with fruits: step-by-step instructions

Let's look at how to decorate a cake with fruits step by step. I will be decorating a sponge cake with buttercream and chocolate fudge on top, apple, raspberries and blackberries. In order to prepare the decoration, I need the following products:

Decorating a cake with your own hands is not difficult, the main thing is that the composition does not float and the flowers, and I will make roses, do not fall apart.

Step one:

I make syrup. Pour a cup (100 ml) of water into a saucepan, bring to a boil, then add 100 g of sugar. Stir the sugar until it dissolves completely and remove from the heat.

Step two:

wash an apple and 100 g each of raspberries and blackberries. I scatter the berries on a towel to dry. I cut the apple in half, then into thin slices.

I dip a plate of apple in syrup and roll it into a tube, I also dip the next one and wrap it on top of the first.

The secret to how easy it is to decorate a cake with apple roses is that each “petal” covers the end of the previous one.

In addition, the “petals” are set by the syrup. One flower requires approximately five apple slices.

Step three:

I place the flowers in the center of the cake. The mint leaves around them imitate rose leaves. Along the edge of the cake, it is round in shape, I place blackberries and raspberries close to each other, alternating them. I put several berries in a chaotic order in the free places on the cake. The cake decorated with fruit is almost ready, the final touch is to lightly sprinkle the berries with powdered sugar; it will look beautiful against a chocolate background.

During a famine in 1407 in the German city of Lubeck, it was decided to make bread from almond flour. Since then, Lubeck has been considered the capital of marzipan, which is known to be made from almonds and sugar syrup.

How to decorate a homemade cake depends largely on the event for which it is prepared. If it’s for a children’s party, then cutting out figures of animals or fairy-tale characters from fruits will be just a great idea.

From fruits you can make flowers, geometric shapes, hearts, and so on, whatever your imagination allows.

From fruits cut into slices, you can easily lay out any ornament or an entire carpet, combining fruits and berries of several colors. A composition of fruits and berries is often filled with jelly, which gives it stability and a glossy shine.

Fruits can be dipped in chocolate, sprinkled with powder or cinnamon, coconut, or ground nuts.

If we decorate a cake with fruit and sprinkle powdered sugar on top, the fruit or berries must be dry, otherwise the powder will spread on them.

STEP-BY-STEP COOKING RECIPE

Step 1

The ingredients are given for three cake layers. Bake each cake separately in a mold with a diameter of 20 cm. Preheat the oven to 180 degrees. Add 100 g of grated carrots and 100 g of grated quince to 1 cake. Add 200 g of grated carrots, 4 g of cinnamon and nutmeg to 2 cake layers. In 3 layers add 200 g of carrots, 15 g of unsweetened cocoa, vanilla sugar.

Step 2

Beat eggs and whites with sugar until stiff foam, about 8-10 minutes. Mix dry ingredients in a separate bowl. Bake 3 apples. Scrape out the puree with a spoon. Cancel 100 g. Grate carrots and quince. Add honey to the first cake without heating. For cakes 2 and 3, heat honey with soda, this gives color to the cakes. At 3 add vanilla sugar. Mix everything carefully with eggs, flour, grated carrots, applesauce, and quince in 1 cake.

Step 3

Bake at 180 degrees for 35 minutes. Cool on a wire rack. Wrap the cakes in cling film and put them in the refrigerator overnight. This way they will be juicy and even tastier.

Decorating a jelly cake with fruits

Decorating cakes with fruits and berries with jelly is an option for quickly decorating a homemade dessert. Using jelly, small and multi-layer cakes are prepared. The basis is ordinary sponge cakes and thick cream. For jelly - gelatin, fruits, berries, sugar.

A semi-finished product with sides is being prepared. Thin slices of cake are placed against the sides in a tall springform pan (pastry ring). It is acceptable to use tall shortbread cookies or thin chocolate bars.

  • the first cake is placed on the bottom;
  • layered with confiture or syrup;
  • covered with a layer of thick cream;
  • then the second layer of cake;
  • again layer and cream (layer thinner than the first).

It is important that the layers are below the top edges of the border. After all, the top layer of the cake is jelly.

While the cake is resting in the refrigerator, make the jelly. Recipe:

  • Dissolve gelatin in water (ratio of powder and water 1:4);
  • after 10 minutes, heat, stirring, without bringing to a boil;
  • strain through a fine mesh sieve;
  • mix with sugar syrup;
  • cool at room temperature.

Linked thick sheets of A4 paper can serve as a pastry ring.

Place pieces of fruit and decorations on the surface of the cake. Carefully pour in the liquid jelly. Place in the refrigerator to harden. Then slowly remove the pastry ring.

Prepare the syrup for the jelly yourself (boil a glass of water with 3-4 tablespoons of sugar) or take syrup from canned fruits or light jam.

You don’t have to make special borders for the jelly. Just put a ring on your homemade cake. Place fruit slices and pour sweet jelly. After hardening, remove the ring. Decorate the sides with cornet and cream.

How to make a cake from mastic “Autumn” » Tatyana Bedareva

To make a mastic cake, we will need cake layers, cream and mastic.

In previous articles you can find detailed recipes with photos: How to make mastic from condensed milk; and also How to make a honey cake step by step master class. If you want to make a children's cake from mastic, here is a step-by-step master class on how to make figures for a children's cake from mastic. Cling film and a rolling pin will also come in handy.

Let me remind you that I am not a cake maker, I am just a mother who loves to please her children. True, while only the eldest daughter eats the cakes, the son is still just admiring them. I made my second mastic cake at home, very quickly, since the children actively “helped.” If you also want to make a simple mastic cake with your own hands, I’ll share the idea and photos of how I made an autumn-themed cake.

Autumn mastic cake

To begin with, the kids and I collected various leaves and rowan berries from the street to figure out how to decorate the cake with fondant in an autumn style. By the way, you can decorate the cake with fondant at home together with your children; my daughter happily sculpted the rowan berries herself and also sculpted various figures. And for a child, a cake decorated with fondant yourself will be the most delicious and memorable! And a photo of a mastic cake will immortalize the little cook and his mastic figures for a long time.

In this cake I used ready-made cake layers, since I don’t have an oven. In principle, it was possible to make a simple cupcake (Here are 10 recipes for delicious cupcakes) in a bread maker and decorate it, but I wanted a big cake with mastic.

I coated it with the simplest sour cream, the recipe is in the article about honey cake. Or you can search for “ganache cream recipe.”

So!
How to make a cake from mastic “Autumn” step by step with photos

Looking for a composition

We cover the cake with cling film, try on our natural materials, figure out the composition and what we will sculpt.
Let's make a cake - coat the cakes with cream and put them in the refrigerator to soak. How to make leaves from mastic:

Base for leaves

We take mastic for the leaves, the main color. We make a flat cake, cover it with cling film, roll it out directly on it - this way we will avoid the mastic sticking to the rolling pin.

Adding mastics

Add mastics of different autumn colors. I used fondant left over from a previous cake, so I don't have exactly fall colors, but there is so much fondant left over that it needs to go somewhere. So let the leaves be raspberry!
