Bagels made from yeast dough with marmalade. Shortcrust pastry bagels with agar marmalade

These bagels are a childhood treat. Probably, once upon a time their recipe was published in the popular magazine “Rabotnitsa”, and all mothers prepared it for their children. I have already tried to cook something “from the past” more than once. And, unfortunately, the taste, spoiled by modern delicacies, said: “something is missing.” Bagels with marmalade are an exception.

The taste is simply indescribable, and such cookies disappear instantly and somehow completely unnoticeably, your hand just reaches out.

Butter (200 g); - sour cream (200 g); - flour (3 tbsp.); — granulated sugar (2 tablespoons); — sandwich marmalade (200 g).

Leave the butter at room temperature and mash with a fork. Or you can dissolve it in a water bath. Add sour cream and granulated sugar.

Mix thoroughly.

Add flour

and knead the dough.

What I like about this dough is that it rolls out easily. Soft, pliable. All the procedures that follow were done by my daughter. So, divide the dough into 4 parts, roll each into a thin circle.

Cut marmalade for rolls into slices:

We cut the circle of dough with a knife into triangles - 16 or more. The more triangles you get, the shorter the finished cookies will be. I prefer long ones - the rolls will look better. Place a slice of marmalade on the wide edge.

To make bagels, roll each triangle towards the center, trying to press the edges tightly so that the hole is as small as possible, otherwise the marmalade will leak out of the bagel during baking.

Place on a baking sheet greased or covered with baking paper.

Bake for 30-40 minutes at a temperature of 160-180 degrees.

Serve with tea. And the kids will love finding a cookie with a surprise, like a twist.

Everyone, without exception, loves homemade baked goods, especially our children. I suggest making delicious bagels with marmalade and pampering your loved ones with a delicious delicacy.

Any dough is suitable for such baking: yeast, puff pastry, shortbread. Shortcrust pastry is more crumbly and is more popular in my family.

Let's take the following ingredients: butter, chicken yolk, salt, powdered sugar, milk, marmalade, wheat flour.

Place the chopped cold butter in a mixer bowl. Beat with a mixer until fluffy.

Without ceasing to beat, add powdered sugar, milk, salt, chicken yolk.

Add sifted wheat flour in small portions. As soon as the dough begins to form a large lump near the beaters, stop beating.

Gather the dough into a ball. Wrap in cling film and refrigerate for 2 hours. I sped up the process a little and put the dough in the freezer for 30 minutes.

Divide the ripened dough into four parts and work with each separately. Keep the rest of the dough in the refrigerator while you work on one portion.

Roll out the dough between two sheets of parchment. Cut into triangles. Use the size of the triangles at your discretion. If the workpiece is larger, then you can put the whole marmalade. Place half a candy into smaller pieces. And if you really want to get a small bagel, you can cut the marmalade into cubes.

Place the marmalade on the wide side and wrap it in a roll. When placing the marmalade, try to fix the dough around the candy so that during baking, the marmalade remains inside the bagel. Cover a baking sheet with parchment and place the pieces. Bake in the oven for 30-40 minutes at 180 degrees until lightly browned.

Bagels with marmalade are ready. Sprinkle with powdered sugar and cool.

Serve to the sweet table.

Enjoy your tea!

How to make marmalade at home or a delicious dessert filling

I make homemade marmalade using agar-agar. I use freshly squeezed juice or any store-bought juice to taste as a base. You can also use plant milk: almond, coconut, poppy seed.

Options for preparing vegetarian marmalade:

  1. (very popular in China). Using the same principle, it is prepared from black or white sesame. It’s tasty, but it’s better to use a stronger flavor for filling in sweet pastries. Fruity or berry - to my taste.
  2. - from homemade juice.
  3. - make it thicker for the filling.

Of course, the easiest way is to buy ready-made marmalade, just make sure that there are fewer chemicals in the composition. In my recipe - prepared with my own hands, three layers, with food coloring.

This recipe for bagels is from my Soviet childhood. The notorious deficit forced the imagination to work to its fullest, delighting with the result. The bagels turn out tender and at the same time tiny, combining the flavors of sweet marmalade and unleavened shortbread dough. True, at that time marmalade was completely different, but with today’s marmalade it turns out no less tasty. And the set of products is completely unpretentious. The cookies turn out soft and sweet, although the dough is prepared without sugar. So, let's begin.

Gradually add sifted flour and knead the dough. The dough should be heavy and greasy, but not tough.

Wrap the dough in cling film and place in the refrigerator for an hour. Cut the marmalade into pieces. Divide the dough into 6 parts. Roll each part into a circle, cut the circle into 8 parts. Place a piece of marmalade on each piece and roll into a bagel.

Bagels are prepared with a variety of fillings - you can use any thick jam, jam, condensed milk, cottage cheese. And we will tell you how to make bagels with marmalade.

Very tasty bagels with marmalade made from simple curd dough. Crispy, like puff pastry. The dough is very tender, although there is relatively little oil in it. In general, the recipe is close to ideal, if not for one “but”. I myself don’t like recipes that don’t indicate the exact amount of ingredients, even just one. But this is exactly the case. There is definitely no way to calculate the flour for the cottage cheese dough, because the cottage cheese is all very different. Even the same manufacturer can make one batch of cottage cheese that is wetter than usual. So let’s try it on and get used to it. In the description I will try to explain more precisely how the dough should turn out. And even if you fail to achieve the ideal, you are unlikely to be upset. The bagels that come out the first time may be unsightly, but they are delicious!

Ingredients:

For 24 bagels with marmalade you will need:

  • 2 packs of cottage cheese (400 g)
  • 150 g butter
  • 1.5-2 cups flour
  • 1 teaspoon baking powder
  • 1/3 cup sugar
  • apple jelly or any other filling that does not spread when baking

The right recipe from childhood

Many people remember bagels with marmalade from childhood - the taste of crumbly dough along with slightly sour apple marmalade. But not everyone knows that it’s quite easy to prepare them yourself.

You will need:

  • 200 g lump marmalade;
  • 3.5 cups flour;
  • 200 g butter;
  • 0.5 tsp. soda;
  • a glass of sour cream;
  • 5 tbsp. l. Sahara;
  • vanillin optional;
  • one protein.

Baking method:

  1. Leave all ingredients at room temperature in advance, and melt the butter in a water bath.
  2. Mix sour cream, butter and sugar (reserve 1 tbsp) together.
  3. Sift the flour into a deep container along with soda and add vanillin to it.
  4. Add the liquid ingredients to the bowl and knead the dough.
  5. The structure of the dough should be soft, but not stick to your hands and bowl.
  6. Leave the workpiece to cool in the refrigerator for ½ hour.
  7. Grind the marmalade into small pieces.
  8. Place the chilled dough on the work surface and use a rolling pin to shape it into a circle 4 mm thick.
  9. Coat the dough layer with egg white.
  10. Cut the circle from the middle to the edge into triangles.
  11. Place marmalade cubes on each piece on the wider side and roll into a roll.
  12. Bake at 200 degrees for 20 minutes.

After baking, you should not immediately remove the bagels from the parchment; you should let them cool on the baking sheet under a towel.

Curd bagels with marmalade

Friends, I offer you another recipe that has been popular for a very long time, these are delicious curd bagels with marmalade, or, in other words, tubes with marmalade.

They were prepared with plastic apple marmalade, which disappeared from sale during perestroika. Now some factories have revived the production of such marmalade, and not only apple, so this recipe has also been revived from oblivion. There are many options for making cottage cheese bagels with marmalade; I offer the recipe that was used at our home, without yeast and eggs.

  • 200 g low-fat dry cottage cheese
  • 150 g butter or butter margarine
  • 300 g flour
  • 1/2 tsp. baking powder
  • 1/3 tsp. salt
  • 1 tbsp. l. vanilla sugar
  • 2 tbsp. l. Sahara
  • 150-200 g marmalade for filling

Mix flour with baking powder, vanilla sugar and salt. Add softened butter or margarine, cut into pieces. The butter should not be completely melted.

Grind everything into fine crumbs with your hands.

Add 200 g of mashed cottage cheese and 2 tbsp. l. Sahara. Take cottage cheese that is not very soft, not wet, and without obvious lumps. If the cottage cheese is grainy, it is better to rub it through a large sieve, or beat it with a blender, or pass it through a meat grinder.

Quickly knead a homogeneous dough. It should be soft enough and should not stick to your hands. If the dough is very soft (due to cottage cheese, for example), add just a little flour.

Place the finished dough in the refrigerator for at least half an hour. In the meantime, let's make marmalade. This is what a pack of plastic apple marmalade looks like, which I accidentally saw in a supermarket:

This package contains 400 g, for our portion of cottage cheese bagels we will need 150-200 g. Cut the marmalade into cubes 4-5 cm long.

Take the dough out of the refrigerator and divide it into 3 parts. We will roll it out in parts.

Lightly dust the counter with flour and place one piece of dough on it. Roll out the dough into a thin rectangle measuring approximately 15*30 cm and no more than 3 mm thick. If you have a special mat for rolling out dough, you may not need flour; the dough won’t stick anyway.

Cut the dough into triangles and lay out pieces of marmalade.

Generally speaking, the dough can be rolled out into a circle, cut from the center into segments, placed marmalade along the edge and rolled into tubes. Then our portion should be divided not into three parts, but in half.

You can easily find this method of cutting dough on the Internet. I’m just used to rolling out the dough for cottage cheese bagels with marmalade exactly the same way, in a rectangle, as we’ve always done at home.

And it seems to me that this is more convenient and the bagels turn out neater.

Quickly roll the dough with marmalade into tubes, starting from the wide side, and place the tubes on a baking sheet previously covered with parchment. We do the same with the other two parts of the dough. There is no need to grease the parchment; there is enough oil in the dough. You can carefully sprinkle each bagel with a pinch of sugar, or you can sprinkle it with powdered sugar after baking.

Place the baking sheet in the oven, heated to 180-190 degrees, and bake for 20-25 minutes until golden brown. It is better to bake on the middle shelf of the oven so that the bottom does not burn. Well, actually, you know your oven better, and decide for yourself at what level you should bake.

Remove the baking sheet from the oven, let the bagels cool completely and transfer to a plate. If desired, you can sprinkle with powdered sugar. If you want to try a hot cookie, be careful, the marmalade is very hot, even if the bagel has already cooled. In general, completely cooled cookies are much tastier than warm ones.

Everyone likes cottage cheese bagels with marmalade; they turn out crispy on top and soft inside. Children especially love them. Try preparing a small portion like this, and in the future you can double the amount of ingredients.

Baking with cottage cheese or based on cottage cheese is always a success. Look at the recipe for sochniki with curd and banana filling, this is an amazing pastry with a pleasant banana aroma. I also suggest you learn how to make excellent cookies from cottage cheese dough with apples, the recipe is very simple, and the cookies turn out incredibly tender and tasty.

I bid you farewell for today. Good luck everyone and have a nice day!
