Pancake pie with chicken and mushrooms

One of the savory pie options is a delicious pancake pie with chicken and mushrooms.

You will need:

  • milk - 500 ml,
  • eggs - 5 pcs. (3 pcs. - in the dough, 2 pcs. - in the filling),
  • chicken fillet - 400 g,
  • champignons - 300 g,
  • flour - 200 g,
  • sunflower oil - 2-3 tbsp.,
  • butter - 30 g,
  • onion - 1 pc.,
  • sour cream - 2 tbsp. l.,
  • salt - 1 tsp,
  • allspice (ground) - to taste,
  • garlic - 1 clove,
  • thyme (or other herbs) - to taste.

You need to start, of course, by making pancakes. Take the classic recipe as a basis: lightly beat the eggs with a pinch of salt, pour in about a third of the milk and add flour, mix thoroughly until smooth, gradually adding the remaining milk.

When the dough is well kneaded, pour a couple of tablespoons of sunflower oil into it and mix again.

Bake the pancakes and start preparing the filling: alternately fry chicken fillet, cut into small pieces, mushrooms and onions in a frying pan.

Using a chopper (processor), prepare a pate mass from meat, mushrooms, onions and garlic, salt it to taste, add salt, pepper, herbs, and your favorite spices (optional).

Now comes the fun part - shaping the cake. Take a deep baking dish and grease it with butter. Line the bottom of the pan with pancakes (5-6 pieces) overlapping, leaving the edges hanging over the sides.

Roll the remaining pancakes into rolls, placing the previously prepared filling in the center. Place the pancake rolls in layers in the center of the pan and cover with the edges of the bottom pancakes.

Prepare a filling from the remaining eggs, sour cream and a pinch of salt, pour it onto the formed pie.

Place the pancake pie in a preheated oven at 180-200 degrees and cook for 10-15 minutes.

In this case, pie is not a completely correct name: in terms of the method of preparation, the dish is perhaps closer to casseroles or even multi-layer sandwiches than to pies. And yet, usually a dish of pancakes with various layers is called that way.

Pancake pie is a great solution if there are pancakes left after dinner or breakfast. As a rule, cold pancakes do not attract anyone, but if you turn them into a delicious pie, then they will definitely eat it with great pleasure.

From the very beginning

What are the best pancakes to use for making pancake pies? Any variety will do, it is only important that the pancakes are not too thick, otherwise the cake will not be soaked well and will look ugly. In a word, these should be pancakes, not pancakes. The recipe for the dough can be anything: yeast pancakes, with soda, with baking powder, with kefir or whey, with the addition of buckwheat flour or millet porridge, lean or with cream.

Traditional Russian pancake pie is made from classic Russian yeast pancakes. Baking such pancakes (or rather, preparing the dough) takes a lot of time, but the resulting food is simply excellent. Fans of yeast baking are sure that there is no other way to prepare such tender, soft, spongy pancakes.

But for the French variety of pancake pie - crepeville - yeast-free thin crepe pancakes are used. Crepeville is traditionally prepared with sweet fillings; in fact, it is not even a pie, but a cake.

If you follow traditions, then for a savory pancake pie it is better to use yeast pancakes, and for a sweet pie-cake, thin French crepes are more suitable. However, today yeast-free pancakes are often used in combination with savory fillings, the result is quite decent.

Cooking methods

Pancake pies can be prepared in different ways. Most often, pancakes are stacked, sandwiched with various fillings. The more pancakes and the thicker the layer of filling, the higher and more elegant the pie turns out. There are, however, other versions of this dish. For example, sometimes pancakes are greased with fillings and rolled into tubes, and then these tubes are placed in a “woodpile” or cut into pieces and tightly placed vertically in a mold. A flat pancake is usually placed underneath such a structure, and beaten eggs, sauce or glaze are poured on top of the pie. When cut, these pies look very original, especially if the filling is multi-colored.

Pancake pies can be divided into savory and sweet. The former are usually served as an appetizer or main course, for example, for dinner or breakfast. Sweet crepevilles are a wonderful French-style dessert, perfect to end a meal or even replace a meal.

In addition, pancake pies can be divided into cold and hot. The first variety is prepared simply: the pancakes need to be greased with cold fillings, left for a while so that the cake is soaked, and served. This pancake is not subjected to additional heat treatment.

Cooking pancake pie hot is a little more difficult. The pancakes are greased with filling and stacked, after which they are briefly put in the oven and served hot. Sweet pancake pies are often topped with a fluffy top of whipped egg whites and kept in the oven until the whites are set. Various sauces, grated cheese or traditional filling of eggs beaten with sour cream are suitable for coating savory pies.

Juicy fillings

As a rule, pancakes are sandwiched with several types of fillings: their number can reach up to ten, but usually they are limited to two or three. The choice of fillings for pancakes that are not subjected to heat treatment is unusually wide. As for pancake pies, which are additionally baked in the oven, not all fillings are suitable for them, for example, caviar, raw smoked fish, butter creams or salads with mayonnaise are no longer suitable for them. But the taste of hot unsweetened pies will be greatly enhanced by hot melted cheese, and sweet ones will be decorated with a layer of meringue.

Pancake snail with minced meat

The pie made from pancakes with custard is very tasty. This cake is a little reminiscent of the well-known Napoleon.

To prepare a pancake pie, the recipe for which is presented below, you will need: • One liter of milk (one half for the cream, the other for the dough). • Two glasses of flour (two tablespoons of this amount are added to the cream). • Five eggs (two for the dough, three for the cream). • A pinch of salt. • 200 grams and 2 tbsp. spoons (in the dough) of sugar. • Three tbsp. tablespoons sunflower oil (choose unscented).

The recipe for sweet pancake pie is as follows:

1. First prepare the cream. To do this, beat sugar and three eggs until smooth. 2. Add a pinch of vanillin and a little flour. 3. Then pour in the milk. Next, mix well. 4. Now put the cream on the fire. During the cooking process, stir it constantly so that it does not burn. Also make sure that no lumps form in the cream. Cook until thickened. 5. Afterwards, set the finished cream aside to cool. 6. Now start making pancakes. 7. To do this, beat two eggs, a pinch of salt and sugar (a little) in a deep bowl. Add flour, vegetable oil and milk. 8. Then knead a homogeneous, lump-free dough. 9. Then heat the frying pan and fry thin pancakes. 10. Next, place them one by one on a plate and coat with cream. 11. After the sweet pancake pie with custard, put it in the refrigerator. Let it sit there for a couple of hours. Before serving, decorate the cake with coconut, berries or chocolate.

Pancake pie with sour cream

The cream for this pie can be prepared from the following ingredients:

  • sour cream - 350 g (maximum fat content),
  • condensed milk - 350 g (boiled can also be used).

This is very easy to do - you just need to beat the ingredients with a mixer until smooth and airy. To add flavor to the cream, add vanilla essence or a pinch of cinnamon.

Form a cake from pancakes prepared according to your favorite recipe, coating them with cream. Decorate the dessert with chocolate chips, icing or pieces of marmalade. Before serving, place the treat in the refrigerator for a couple of hours. Enjoy your tea!

Making cabbage pie

1. Prepare pancakes according to your favorite recipe or one of those discussed in the article. 2. Next, prepare the filling. Chop the cabbage, fry in oil, pour in milk (200 ml). Cook until soft. 3. Next, add grated Adyghe cheese and dried dill to the pan. Then pepper and salt the dish. 4. Now prepare the filling for the pie. To do this, put sour cream in the cream. Next, add grated cheese, a pinch of nutmeg, and black pepper. If necessary, add salt to the filling. Next, stir it.


5. Then, in a baking dish (or, for example, in a frying pan), place a pancake and cabbage filling on it. Continue this way until you run out of pancakes. Note that the top layer should be made of pancake. 6. Fill the pie with filling. Then place in a preheated oven for thirty minutes. If the top of the product burns, cover it with foil. Curd filling for pancake pie

No less interesting is the version of dessert pie with curd filling, which is prepared from the following components:

  • cottage cheese - 500 g,
  • eggs - 2 pcs.,
  • cocoa - 1 tbsp. l.,
  • black currants (or other berries) - 3 tbsp. l.,
  • starch - 2 tbsp. l.,
  • sugar - 80 g.

For the base, beat cottage cheese, eggs and sugar using a blender. Divide the filling into 3 parts. Add only starch (1 tbsp) to one, berries and starch to the second, and cocoa powder to the third.

Then form a pie out of pancakes according to the principle described in the first recipe (remembering to alternate fillings), and pour over a filling of one egg and 100 ml of cream.

Bake a pancake pie with curd filling in an oven preheated to 180 degrees. You will need approximately 25-30 minutes. Serve dessert, garnishing with powder and fresh berries if desired. This Maslenitsa treat will not leave anyone indifferent!

Lasagna, a popular dish of Italian cuisine. It is prepared from boiled dough plates and filling. And in this recipe, lasagna will be made from pancakes - we prepare a pancake pie with minced meat and cheese. It’s much more budget-friendly than making real lasagna, but no less satisfying and tasty. Pancakes for preparing this dish must be unsweetened.

To prepare pancake lasagna you will need the following ingredients:

Pancake ingredients:

  • 400 milliliters unsweetened sparkling water
  • 10 grams baking powder
  • 120 milliliters vegetable oil
  • 270 grams flour
  • 40 grams of medium fat sour cream
  • 4 eggs.

Filling ingredients:

  • 15 savory pancakes
  • 800 grams minced meat
  • 700 grams of tomatoes
  • 450 grams of medium fat sour cream
  • 1 piece of onion
  • 1 carrot
  • 200 grams of hard cheese
  • 100 milliliters vegetable oil
  • 2 teaspoons salt.

Preparation:

  1. Using a blender or mixer, beat sour cream, eggs and vegetable oil.
  2. Mix flour with baking powder.
  3. Add sparkling water to the blender and add flour in stages, beating the dough in the blender after each added portion of flour. The result should be a runny dough.
  4. Heat the frying pan and grease it with sunflower oil just before baking the first pancake.
  5. Bake each pancake over high heat for one and a half minutes on each side.
  6. Peel the onions and carrots. Finely chop the onion and grate the carrots. Mix both ingredients and fry in vegetable oil.
  7. Add minced meat to the pan with onions and carrots, add salt and simmer over low heat for twenty minutes, stirring occasionally.
  8. Grate the hard cheese on a fine grater, and cut the tomatoes into thin slices.
  9. Line a round springform baking pan with baking parchment.
  10. Place three pancakes on the bottom of the pan so that there are no gaps at the bottom of the pan.
  11. Spread some of the minced meat evenly over the entire surface of the pancakes and spread sour cream on top. Place the tomatoes on top of the sour cream in one layer, sprinkling them with grated cheese on top.
  12. Next, lay out layers of pancakes and filling, alternating in the same order, until the form is filled to the top. Grease the top layer with a layer of sour cream and sprinkle with cheese.
  13. Place the pan with the pancake pie in an oven preheated to 200 degrees and bake for 20 minutes.
  14. Remove the cake from the baking dish when it has cooled slightly and is warm.
  15. The pie turns out tender and very filling. A piece of such pancake pie can easily replace dinner.
