Despite the presence of yeast in the composition, you do not have to spend a lot of time baking this recipe.
You will need:
- 3 tbsp. flour;
- 1 tbsp. warm milk;
- 30 g fresh yeast or 1 tsp. dry;
- 1 tsp. Sahara;
- 0.5 tbsp. vegetable oil;
- 0.5 tsp. salt.
Before the main batch, froth the yeast: add it to a bowl with warm milk and sugar diluted in it. Place the dishes in a warm place and wait 10 - 15 minutes until the mixture bubbles.
- Add salt and oil to the mixture.
- Add the sifted flour in parts to make a soft dough that does not stick to your hands.
- Rest for 5 – 10 minutes and form the products for further baking.
This portion of yeast dough for bagels yields 18 - 20 pieces of wonderful, airy, delicious buns with your favorite filling.

Everyone loves crispy puff pastry, but only experienced bakers can prepare real puff pastry according to the original recipe.

We offer a lightweight version of your favorite baked goods, consisting of:
- 2 – 2.5 tbsp. flour;
- 200 g butter margarine;
- 1 egg yolk;
- 100 g sour cream or kefir;
- 0.5 tsp. salt.
The flour must be sifted, and the margarine must be removed from the refrigerator in advance so that it softens.
- Mix salt, egg yolk and sour cream.
- Add margarine.
- Add flour gradually to form a soft, pliable dough.
- Roll it out into a thick layer and fold it into thirds or fourths. Roll out again and roll again. Repeat this several times so that the dough layer acquires a layered structure due to repeated folding.
- Cool the finished bagel base in the refrigerator for 30 minutes, then begin shaping and baking the finished products.
However, the quickest puff base for your favorite delicacy will, of course, be a ready-made layer of frozen dough purchased at the nearest store.

The recipe is very simple.
- Ready-made puff pastry bought in a store must be thawed.
- Roll out and cut into triangles.
- Place boiled condensed milk on the wide end of the triangle.
- Bake in the oven at 200 degrees for 20 minutes.

Cooking with cottage cheese
This pastry is easy to distinguish from any other, thanks to its delicious creamy milky taste and amazingly delicate structure.
For the curd dough you will need:
- 400 g flour;
- 1 egg;
- 150 g butter;
- 300 g cottage cheese;
- 1 tsp. salt;
- 50 – 100 g of powdered sugar;
- 10 g baking powder.
Remove the butter from the refrigerator immediately before starting cooking.
You need soft cottage cheese. If it contains large fragments, you will have to pass it through a sieve or meat grinder.
- Take half the required amount of flour and in a deep bowl mix it with grated butter. The mass should have a fine lumpy structure.
- Add the egg and the remaining sifted flour. To slow down the melting of the butter, knead the dough in a stand mixer using the dough hook attachment.
- Add cold cottage cheese, salt and powdered sugar mixed with baking powder into the mixture. Mix everything well with the same mixer.
- As soon as the dough becomes homogeneous and stops sticking to your hands, wrap it in film and put it in the refrigerator for 1 - 1.5 hours.
- After this, you can start shaping the bagels, rolling out the dough into layers 0.5 - 0.7 cm thick.
Any filling is suitable for such baking: thick aromatic jam, fresh grated apples with sugar and cinnamon, and sweet cottage cheese with raisins and vanilla.
Recipe for bagels with lemon filling
While the prepared shortcrust pastry is cooling in the refrigerator, make the filling for the bagels. It will require: - 1 lemon; - 1 cup granulated sugar; - 1 cup shelled walnuts.
First of all, scald the lemon with boiling water 2-3 times and let the lemon stand for 1-2 minutes each time. Then grate the lemon zest into a bowl and squeeze in the lemon juice (don't forget to remove the seeds first). Add chopped walnut kernels and granulated sugar. Mix everything well.
Divide the cooled dough into 4 parts, roll each into a round or rectangular layer and brush with melted butter. After this, cut the layers into wedges and put the prepared filling on the wide part, distributing it so that there is enough for all the bagels.
Then carefully start rolling the bagel from the wide side to the narrow side. After making the first turn, lightly press the dough on the sides and then continue to wrap. Then place the wrapped bagels on a greased baking sheet and place in the oven for 20-30 minutes to bake at 180°C. Sprinkle the finished baked goods with powdered sugar.
Shortbread dough for bagels

Don't be mistaken about the proportions:
- 200 g each of flour and butter;
- 2 eggs (yolks only);
- 100 g powdered sugar;
- 0.5 tsp. soda or 1 tsp. baking powder.
The butter should be chilled and the flour should be sifted. Use a large cutting board or work surface to knead.
- Place a piece of butter on a mound of flour and chop it with a cold (!) knife into fine crumbs.

- Wrap the finished dough in film and place in the refrigerator for 1 hour.
- Roll out the layers quickly and carefully, avoiding the appearance of cracks.
- Place the formed products on a heated baking sheet, lightly dusted with flour.
Advice! If you replace 2 yolks with 1 whole egg in the recipe, this will not make the shortbread dough for bagels any worse.
