Be prepared for the fact that you will have to get used to pancake dough made from rice flour without eggs and milk, it is capricious, but you can adapt to it.
Ingredients:
- rice flour - 250 g;
- glass of water;
- salt - 1 tsp;
- sugar - 2 - 3 tbsp;
- odorless sunflower oil - 50 g and a little more for greasing the pan.
Mix all ingredients except flour. When the sugar is completely dissolved, add rice flour little by little, after sifting it to make the pancakes softer. When the dough is ready, it may seem a little runny at first, so let it sit for about 20 minutes. During this time, the flour will absorb moisture and swell, and the mixture will become a little thicker.
If you have a non-stick frying pan, use it. Heat it thoroughly and grease it with oil, scoop out a little dough, stir it, and pour it into the frying pan. Try to immediately distribute the mass over the entire surface. The baking process is almost no different from making pancakes from wheat flour, it’s just that the dough is a little unusual in color and not as pliable.
How can you tell when it’s time to flip a pancake? When many bubbles form on its surface and the dough itself begins to change color from white to transparent, slightly lift the edge with a spatula. If the bottom of the pancake is browned, try moving the spatula closer to its center. If it works, turn it over. When the center is not baked enough, the pancake wrinkles and sticks. In this case, just wait a few more seconds and then try again.
The second side cooks a little faster, so don't hesitate. Place the finished pancakes on a plate, greasing them with butter (optional). Before adding the next portion of dough to the pan, stir it again. Do this every time because the rice flour will settle to the bottom when it rests.

Recipe:

- corn flour - 350 g
- sparkling mineral water – 150 ml
- vegetable oil - 1 tbsp.
- granulated sugar - 1/2 cup (more or less is possible)
- raisins, prunes or any other dried fruits - 50 g (optional)
- baking soda - on the tip of a knife
Preparation:
- Pour raisins or prunes (both are possible) with hot water for 10-15 minutes. Salt the water, rinse the dried fruits and place on a paper towel.
- Mix the dough from carbonated mineral water, corn flour, sugar, vegetable oil and baking soda. It should be thick enough not to stick to your hands (you may need to add a little flour).
- Let the dough rest for 15-20 minutes.
- Add prunes or raisins cut into small pieces. Let's knead again.
- Lightly flour the surface of the table and roll out the dough into a layer 1-1.5 cm thick.
- Let's cut out shaped cookies from it. Kids will especially love the figures of different animals.
