Step-by-step preparation

  1. Boil 0.5 liters of water and pour it into 400 g of buckwheat. Let the cereal stand to steam.
  2. Heat the frying pan and add about 150 ml of vegetable oil to it. Finely chop 1 onion and send it to fry.
  3. Following the onions, pour 2 carrots, grated on a medium grater, into the frying pan. Mix everything and fry for 2-3 minutes.
  4. Without turning off the heat, add 2 tbsp to the browned ingredients. l. tomato paste, a pinch of salt and 0.5 tsp. ground pepper.
  5. Continuing to fry the vegetables with tomato paste and spices, pour 400 ml of water into them.
  6. Mix the roast well and add 2 tbsp. l. sour cream.
  7. Mix everything well and turn off the heat.
  8. Grind 1 onion and 2 cloves of garlic in a blender. Add the resulting mixture to 500 g of minced beef and season with 2 tbsp. l. sour cream.
  9. Mix all the ingredients and form balls into meatballs.
  10. Set the oven to preheat to 180 degrees. Grease a deep form with vegetable oil and place buckwheat there, after draining the water from it.
  11. Add half of the resulting filling on top of the buckwheat. Mix everything evenly and level the surface.
  12. Place the meat balls on top and cover them with the remaining filling.
  13. Place the pan in the preheated oven for 30-40 minutes. We take the dish out of the oven, place it on plates and serve.

Meatballs in mushroom sauce

To prepare meatballs with buckwheat we will need:

  • Minced meat - ½ kg.
  • One onion.
  • A little cabbage.
  • Salt.
  • One egg.
  • Seasonings.
  • ½ cup buckwheat.

Add all the ingredients and some finely shredded cabbage to the minced meat (it adds juiciness to the dish). We also add the egg, salt and seasonings. Mix everything thoroughly. Place the finished minced meat in the refrigerator. Let's move on to preparing the sauce.

It will require the following ingredients:

  1. Mushrooms (any) - 250 g.
  2. One onion.
  3. One carrot.
  4. Two glasses of milk.
  5. Two tablespoons of flour.
  6. Salt.

You need to chop the carrots and onions and fry them until golden brown. Finely chop the mushrooms. And also fry for seven minutes. Add flour. Next, pour milk into the pan in a thin stream. Stir the mixture slowly. After a couple of minutes, the sauce can be removed from the stove.

Now you can return to the minced meat. With wet hands, form meatballs from it and fry them a little in a frying pan. Then transfer to a baking dish and pour in the prepared sauce. Place the dish in the oven to cook for 25 minutes. If desired, the finished meatballs can be sprinkled with grated cheese. It melts quickly and gives the dish a special taste.

Meatballs with buckwheat and minced meat can easily compete with classic meatballs with rice. This is understandable, because buckwheat is much healthier than rice. And then, it is an original Russian product, because buckwheat has been known in Rus' since ancient times.

The combination of buckwheat with minced meat, accompanied by gravy or without gravy, is an excellent hearty dish that is suitable for the menu of both adults and children.

Meatballs with buckwheat and minced meat are prepared simply, in the usual way. You can cook them in a frying pan, saucepan or put them in the oven.

Prepare the following foods.

Boil the buckwheat and cool.

Add minced meat, finely chopped onion and egg to the buckwheat, add salt and knead until smooth. Form small meatballs - the size can be whatever you are used to, I make it a little larger than a walnut. Bread them in flour.

In heated sunflower oil, fry the meatballs with buckwheat and minced meat on all sides.

Turn over to the other side. The sauce can be made straight away or prepared separately.

Toast the flour in a dry frying pan until it turns slightly pink and has a nutty aroma. Cool slightly and dilute with water.

Add sour cream and tomato paste, salt the resulting sauce. Boil it.

Simmer the meatballs in the resulting sauce.

Meatballs with buckwheat and minced meat can be served with or without a side dish. After all, the composition already contains both cereals and meat, so it is more logical to add vegetables and herbs. Bon appetit!

How to cook meatballs with buckwheat

Ingredients:

  • Minced meat – 600 g
  • Buckwheat – 1 tbsp. (200 ml)
  • Onions – 1 pc.
  • Garlic – 2 teeth.
  • Tomato juice – 1.5 tbsp. (200 ml)
  • Salt - to taste

Preparation:

First of all, cook the crumbly buckwheat. To do this, if necessary, sort out the grains and rinse them thoroughly in running water. Then pour water into the saucepan with the prepared buckwheat in the ratio of 1 part buckwheat to 2 parts water. This does not mean mass, but the volume of the product, for example, in glasses. Bring to a boil, reduce heat to low and simmer, covered, for about 20 minutes, then stir.

The easiest way is to cook buckwheat, which is sold in cooking bags, but takes about five minutes less than indicated on the package.

Minced meat for meatballs can be made from almost any meat, and best of all from several types of meat in a combination of fatty and lean, for example, pork with beef or pork with chicken. Give preference to minced meat prepared at home rather than store-bought. And it’s better to let the minced meat be minced in a meat grinder than torn apart using a blender.

The most popular vegetables to add to minced meat are onions and garlic. In addition to excellent taste, they will also add juiciness. Peel and finely chop the onion. After peeling, crush the garlic cloves with a wide knife blade and then chop. The easiest way to chop onion pieces and garlic cloves is to use mechanical kitchen appliances.

Combine the finished cooled buckwheat, minced meat and vegetable mass, mix thoroughly, add salt and spices to taste. Almost any dry aromatic herbs are great.

Form the mixture into round meatballs the size of a walnut or larger. Place them in a greased pan. Prepare a stew sauce from tomato paste and water, ketchup and water, or simply use tomato juice. Pour the tomato sauce over the meatballs to about half their height.

Bake buckwheat meatballs in the oven at 200 degrees for about half an hour, but the time depends on the size of the meatballs and the properties of your oven. If desired, periodically baste the meatballs with sauce or turn them over to the other side during baking.

As a side dish for buckwheat meatballs, choose something to suit your taste: mashed potatoes, stewed potatoes, pasta.

Since I adhere to a dietary diet, crumbly buckwheat in my personal rating takes honorable first place among healthy cereals. A serving of buckwheat porridge, even without vegetables, meat, mushrooms or other popular side dish additives, eliminates the feeling of hunger for many hours, and the composition of proteins, carbohydrates, vitamins and minerals in this cereal is so balanced that it quickly saturates the body with almost all useful substances. Previously, I whipped up buckwheat porridge according to a traditional recipe - I simply poured boiling water over the cereal, covered the pan with a lid, and the boiled water did its job, absorbing into the kernel and turning it into crumbly porridge. But the taste of porridge cooked in water turns out to be quite bland, and my youngest members of the household ate buckwheat without much appetite.

I started experimenting with different recipes for preparing buckwheat and now I can say with confidence that porridge baked in the oven turns out to be very aromatic, tender, juicy, but at the same time the kernel does not boil over and remains crumbly. Of course, this method of preparing buckwheat porridge takes more time, but I got used to preparing a healthy side dish in pots 5-6 days in advance, since the taste properties of the porridge practically do not change when stored in the refrigerator. After a long simmer in the oven, the taste of buckwheat is fully revealed. This versatile side dish does not always have to be prepared separately from the main dish. Add chicken or pork meat, meatballs, mushrooms or vegetables to a pot of cereal and, after heat-treating the food in the oven, serve a hearty and very appetizing porridge, saturated with the juices of the added ingredients, to the dinner table. ♦ USEFUL TIPS ❶ It is not necessary to sort through high-quality cereals - it is quite enough to pour the amount required for cooking porridge into a bowl, add water and wash, making sure that no black pebbles come across; ❷ Rinse the cereal with clean cold water until the water becomes clear (at least 4 times); ❸ Before cooking buckwheat in the oven, there is no need to soak the cereal, since the kernel that has absorbed the liquid may lose its shape and aromatic taste after baking; ❹ Add ingredients to the pot in the exact proportions indicated in the recipe. As a rule, 2 glasses of water are enough for one glass of cereal. If you don’t like crumbly buckwheat, then add more liquid (according to the recipe); ❺ To replace the bitter taste of buckwheat with a pleasant nutty one, roast the grains in a dry frying pan until the grains stop sticking to each other. Do not forget to constantly stir the cereal with a spatula so that it does not burn; ❻ If you plan to bake buckwheat along with chicken, then lightly fry the meat cut into small pieces in a frying pan before putting it in the oven. Add vegetable oil to the frying pan and fry small pieces of meat until golden brown. Chicken meat can be replaced with pork, beef or veal; ❼ It is also advisable to fry the mushrooms a little in a frying pan: first, rinse them thoroughly with clean water, place them on a dry napkin and chop them finely; then over low heat you can simmer the onion cut into rings, add the mushrooms and fry everything together for 10-15 minutes, stirring occasionally with a spatula; ❽ In a thick-walled ceramic or cast iron pot, buckwheat porridge is baked evenly and soaked in the juices of other ingredients.
