- large blue eggplants - 3 pcs.;
- olive mayonnaise - approximately 150 g;
- refined sunflower oil - approximately 20 ml;
- ground black pepper - a few pinches;
- large ripe tomatoes - 3 pcs.;
- coarse table salt - a few pinches;
- “Russian” hard cheese - about 100 g;
- fresh garlic - a few cloves (to taste and desire).
Processing components
Before making an eggplant fan for the holiday table, the vegetables should be carefully processed. The main component is washed thoroughly in warm water, and then the tails are removed and divided in half lengthwise. After this, the eggplant halves are laid out on a board with the cuts down and cut so that the vegetables form a kind of fan. In other words, the product is not cut to the end by about 1 cm.
As soon as the blue vegetable is processed, it is generously seasoned with salt and left in this form for 25-35 minutes. This procedure is necessary to remove all the inherent bitterness from the eggplants.

- cheese (I used Como) – 150 g;

- garlic – 2-3 cloves;
- salt, parsley (or dill), vegetable oil.

We cut into not too thick strips so that the cut does not reach the very end (leave 1.5-2 cm). Salt well inside and leave for 20, or preferably 30 minutes. Let all the bitterness drain from them.
Mix mayonnaise with chopped parsley (or other herbs) and several cloves of garlic, passed through a press. This makes such a spicy and delicious dressing. If desired, mayonnaise can be completely or partially replaced with sour cream with a fat content of 10-15%.
Wash the tomatoes, dry them and cut into thin half rings. We also cut Como cheese into thin rectangular slices. Squeeze out any remaining liquid from the eggplant. First put tomatoes in the cuts of vegetables, and then cheese on top of them. We straighten the eggplant strips with filling as shown in the photo below. It turns out to be a kind of fan. Place the eggplants that look like the Firebird's tail on a baking sheet with foil, carefully greasing it with oil.
Lubricate the top with mayonnaise-garlic dressing generously and thoroughly. Cover the baking sheet completely with foil and place it immediately in a hot oven (180-190 degrees). Bake in this way for about 40 minutes. Then you can check if the eggplants are ready. At the end, remove the foil and let the vegetables remain uncovered in the oven for another 5-7 minutes. At this stage, you can add a little more grated cheese if you like it in large quantities.
We take out the ready-made hot Firebird eggplants and carefully transfer them to plates without disturbing their appearance. You can add some chopped herbs on top for beauty and extra taste. Great! The dish is ready and waiting! Bon appetit and good autumn mood everyone!
