Slow Cooker Banana Cake Recipe

Ingredients:

  • bananas – 3 pcs;
  • eggs – 2 pcs;
  • sugar – 1 glass (220g);
  • flour – 2 cups (340g);
  • sour cream – 2 tbsp. (80g);
  • baking powder - 1 tsp;
  • vegetable oil – 100ml;
  • salt - a pinch.

How to bake a banana muffin in a slow cooker

  1. Pour sugar into a bowl and break eggs into it.

  2. Beat with a mixer. You just need to mix everything well.

  3. Add sour cream. Mix again with a mixer.

  4. Cut ripe bananas into small cubes or pieces. Add to our mixture.

  5. Sift the flour into a bowl along with baking powder and salt.

  6. Stir with a spoon, add oil and stir again. We get a dough with a consistency similar to thick sour cream with noticeable pieces of bananas in it.

  7. Lightly grease the multicooker bowl with vegetable oil. Pour the dough into it. Turn on the “Baking” program. I have a Panasonic multicooker, the default baking time is 40 minutes. But for such a large cake, and even a banana one (that is, with pieces of wet fruit inside), this time is not enough. Therefore, after the signal sounds for the first time, you need to open the lid and check the condition of the baking. Then turn on the program again and periodically check how the cake is doing.

  8. It should rise well and the top will remain light, but it should not be runny or sticky. Check readiness with a wooden skewer.

  9. To remove the cake from the bowl, cover it on top with a plastic steaming insert and, holding it with oven mitts, turn the bowl upside down. The cupcake will be face down on the liner. In this state, cool it completely.

  10. The cooled cake can be sprinkled with powdered sugar, decorated with nuts or colored sprinkles.

Cooking step by step:

The recipe for this delicious homemade pastry includes the following ingredients: bananas (medium size, very ripe), wheat flour, baking powder, granulated sugar, sour cream, chicken eggs and refined vegetable oil.

Break chicken eggs into a suitable bowl and add granulated sugar.

Beat everything with a mixer or whisk into a fluffy foam until it turns white and increases in size several times. Then add sour cream at room temperature and pour in oil (leave a tablespoon for greasing the bowl). Mix everything.

Now peel the bananas and break the pulp directly into a bowl with your hands. The pieces turn out to be unequal, but not very small - there shouldn’t be any porridge. I advise you to choose very ripe and sweet bananas - then the finished cake will be very fragrant.

Mix everything again and add sifted wheat flour mixed with baking powder.

Mix the dough - it turns out to be of medium density, like sour cream with 25% fat content.

Grease the multicooker bowl with the remaining vegetable oil, lay out the dough and cook on the Baking mode for 1 hour. If you have a more powerful multicooker, the baking time may be reduced by 7-10 minutes. Or vice versa. In general, check for a dry splinter.

What we need:

  • butter – 130g;
  • flour – 300g;

  • salt – 3/4 tsp;
  • ground nutmeg – 0.5 tsp;
  • hazelnuts – 0.5 cups;
  • bananas – 2 pcs;
  • milk – 100ml;
  • eggs – 2 pcs;
  • powdered sugar.

How to bake banana muffin in the oven

  1. We need melted butter, so we’ll start with that. We heat it as conveniently as possible, on the stove or in the microwave. Then cool a little.
  2. Sift the bulk ingredients into a deep container: flour, sugar, baking powder, salt and nutmeg.

  3. Hazelnuts for baking are usually peeled from the outer skin. But in this case, I didn’t do it and nothing bad happened. The nuts need to be chopped, this can be done in a blender or even with a knife.

  4. Add the chopped nuts to the bowl with the dry ingredients. Mix.

  5. Remove the peel from the bananas. Cut one into cubes, mash the second with a fork. Place the cubes into the already mixed ingredients.

  6. Pour milk into a separate bowl and break the eggs. Shake with a fork and add banana puree to the mixture.

  7. Mix and pour into a bowl with flour.

  8. All that remains is to pour in the melted butter and mix thoroughly again.

  9. Pour the dough into a silicone mold and bake in an oven preheated to 170°C. Baking time is 50-60 minutes, but may vary due to the characteristics of the oven. Therefore, you need to check with a wooden toothpick, hat or match.

  10. Remove, cool for half an hour in the pan, then turn over, preferably onto a wire rack, and cool completely.

  11. Sprinkle the powder over the cooled one so that it doesn't melt. You can make fudge and pour over the cake if you wish.

And now the delicious, aromatic banana cake with nuts is ready! You can drink tea.

We prepare the products: separate the whites from the yolks, melt the butter, sift the flour, beat the whites into a strong foam, cut the bananas into pieces, mash the other with a fork.

Let's start cooking. In a mixer, beat the yolks with cottage cheese, add butter and, continuing to stir, gradually add flour, vanillin, baking powder, and bananas, mashed with a fork.

Turn off the mixer and add the chopped banana and mix. And last, carefully add the whipped whites, stirring from bottom to top.

Grease the multicooker bowl with oil and lay out our mixture, level it and turn on the baking mode. For me it lasts 50 minutes. After finishing, do not open the multicooker for about 15 minutes. Next, carefully take out the cake with a container for steaming. Decorate the banana cupcake to taste, I just sprinkled it with powdered sugar and cocoa.

When the program end signal sounds, open the lid and let the cake cool slightly inside the appliance. It is more convenient to get it out using a steamer container.
