Sometimes this dish is called “Hedgehog in the Fog.” Probably due to sympathy for the famous cartoon character. As for the salad, it is not shrouded in any fog. If necessary, the fog can be filled with the mystery of the recipe. One way or another, you will delight your loved ones with an interesting and unusually designed “Hedgehog” salad. The dish will decorate the festive table and your guests, especially children, will like it. We offer three dissimilar recipes, united by a common name and similar design of the finished dish. “Hedgehog” salad with chicken and mushrooms
Originally designed snacks are table decoration. Prepare the Hedgehog salad with chicken and mushrooms. In addition to its unusual design, the salad has an excellent taste that will be remembered for a long time. It is best to use boiled or baked chicken fillet as the main component. When choosing hard cheese, give preference to fatty varieties with a classic taste. Any pickled or salted mushrooms are suitable for this recipe.
What we need:
- chicken (breast fillet) – 150 g;
- onion – 1 pc.;
- vegetable oil – 1.5 tbsp. l.;
- pickled champignons – 150 g;
- eggs – 2 pcs.;
- cheese – 100 g;
- Korean carrots – 150 g;
- mayonnaise – 3 tbsp. l.;
- smoked paprika – 0.3 tsp;
- salt, pepper - to taste;
- bay leaf – 1 pc.;
- allspice – 2 peas;
- olives, parsley - for decoration.

How to prepare this salad
- Boil the fillet in salted water with the addition of bay leaf and allspice. Cool and cut into small pieces or disassemble into fibers.
- Peel the onions and chop finely. Sauté in oil until transparent.
- Place chicken fillet, onion, spices, salt and mayonnaise in a container. Mix the mass.
- Place a teardrop-shaped layer of meat on a serving plate.
- Cut the champignons in half and place on the meat layer.
- Boil the eggs and grate on a fine grater. Salt, pepper and season with mayonnaise.
- Place the egg mixture on top of the mushrooms.
- The next layer is grated cheese.
- Spread some of the salad with mayonnaise and place the Korean carrots as in the photo.
- Form “eyes” and “nose” from olives, decorate the salad with mushrooms and herbs. Leave the dish to soak for 20 minutes at room temperature.

Hedgehog salad recipe with Korean carrots and chicken
1. Place the chicken fillet in a pan of boiling, lightly salted water and cook for 20 minutes. It is important not to overcook the tender chicken meat, otherwise it will significantly spoil the taste of the salad.
Cool the finished chicken and separate it into fibers using a fork or your hands. Can be cut into cubes.
2. Boil the potatoes until tender “in their jackets” and let cool. Grate the vegetable using a fine mesh grater.
3. Place the chicken eggs in a saucepan with water and cook until done for about 10 minutes. Then cool in very cold water and remove the shells. Finely chop.
4. Fry the diced onion in a frying pan with vegetable oil. There is no need to fry it too much; it will be enough to achieve transparency.
5. Place the marinated champignons on a sieve to remove excess marinade and cut into the same pieces as the eggs. Leave a few whole mushrooms for decoration.
6. Grind the hard cheese on a grater with small holes.
All ingredients are ready - you can prepare the salad. But first, let's resort to a little trick. Housewives usually lay each layer of salad on top of the previous one and generously coat it with mayonnaise. We will do it differently: put each ingredient in a small bowl and add some salt and mayonnaise to taste. This will make it easier to assemble the salad and give the finished dish an extraordinary taste and juiciness.
1. The first layer will be potatoes - lay them out so that the shape resembles the body of a hedgehog.
2. Mix champignons with fried onions and place on top.
3. The chicken fillet should be placed so that it creates the volume of the future hedgehog, that is, a small slide. And we leave the “face” of the hedgehog a little flattened.
4. Visually separate the hedgehog’s head from the body, and place a layer of eggs with mayonnaise on the body.
5. Next comes a layer of cheese - cover the entire surface of the salad with it. You can leave a little cheese without mayonnaise to decorate the hedgehog’s face with it.
6. The last layer of our salad will be Korean carrots. If the carrot strips are too long, you can cut them in half. We place the carrots on the “back” of the hedgehog, leaving the face uncovered.
7. Correct the shape of the hedgehog: if necessary, ruffle the carrots a little so that the “spines” are more prominent.
8. Next, we create a clearing for the hedgehog - we line the base with greenery.
9. We put the olives in place of the eye, and the hazelnut serves as the nose.
10. Place several whole champignons on top of the hedgehog so that the animal looks more impressive on the plate. Using small sprigs of parsley we create eyelashes for the hedgehog.
11. All that’s left is to let the salad soak in the refrigerator for a couple of hours and you can surprise your guests!
“Hedgehog” salad with chicken and pineapples
This “Hedgehog” does not include the popular hedgehog food – mushrooms – among the ingredients. However, canned pineapple adds an unusual sweet note that goes well with the salad's base product, chicken.
Ingredients:
- hard cheese - 150 g;
- walnut - 50 g;
- eggs (hard-boiled) - 4 pcs.;
- garlic - 1 clove;
- chicken fillet (boiled) - 1 pc.;
- canned pineapples - 150 g;
- olives - 100 g;
- mayonnaise - 200 g.

Cooking “Hedgehog” with chicken and pineapples
- Grind nuts and garlic in a chopper.
- Mix the resulting mixture with mayonnaise - this will be a salad sauce.
- Cut the chicken fillet into small cubes and place on a plate, giving it a hedgehog shape. Spread with sauce.
- The second layer is finely chopped pineapples.
- Next - grated cheese on a coarse grater. Don't forget to brush each layer with sauce.
- The final layer is eggs (grate on a coarse grater). Finally form a neat hedgehog shape.
- Using olives, make the hedgehog's nose, eyes and needles.
- Place in the refrigerator to soak for 1.5-2 hours.

- olives, lemon slices, seeds, carrots for decoration.
- Potatoes and eggs must be boiled, peeled, and grated on a coarse grater. The boiled chicken should be finely cut into equal cubes, and the cucumbers and herbs should be chopped with a knife.
- First, fry the champignons and onion cut into half rings. Let cool.
- Then put lettuce leaves on a plate, a layer of chicken meat, and add mayonnaise on top. Place the cooled mushrooms in the second layer.
- Next comes the turn of pickled cucumbers, mayonnaise, eggs. Place grated potatoes on top and also grease with mayonnaise.
- Instead of needles, we stick large seeds, and around the hedgehog we place lemon slices, sprigs of dill and pieces of carrots in the shape of a flower. We make eyes with a sharp nose from whole olives.
- The seeds can be replaced with almonds and pieces of olives.
- If you add lemon juice to mayonnaise, the dish will become more aromatic and more delicate in taste.

Chicken liver is used for salad to give it a tender and piquant taste. Instead of mayonnaise, you can use homemade sauce.

- boiled eggs – 5 pcs.;
- large boiled carrots;
- onion head (medium size);
- peas from a can – 85 g;
- dressing sauce – 225 – 250 g;
- olives, cherry tomatoes (to make mushroom) - two or three pieces each;
- greens - optional;
- sunflower oil – 2 tbsp. l.;

Step-by-step instruction
- Cut the liver into small pieces and fry in a frying pan with the addition of sunflower oil.
- Chop the onion and fry it too.
- After five minutes, add grated carrots to the onions (leave a small part for decoration).
- Peel the eggs and chop them.
- Pour the ingredients into a deep bowl and mix with the dressing sauce. Add green peas. Salt the resulting mixture.
- Place the hedgehog's body in a flat plate.
- Make a fur coat for the hedgehog from fried carrots and onions, leaving a small space for the head. It needs to be greased with dressing sauce.

- one large boiled chicken breast;
- a can of pineapple rings canned in syrup;
- a piece of cheese weighing 250 grams;
- half a glass of shelled walnuts;
- a small jar of olives;
- 3 hard-boiled eggs;
- garlic;
- juice from half a lemon;
- light mayonnaise.
- First you need to make a flavorful dressing. Combine the nuts and garlic chopped in a blender, mayonnaise, add lemon juice, mix everything very well. The nuts can be pre-fried in a dry frying pan. Each layer will need to be coated with this dressing.
- Divide the boiled chicken into small fibers and place it on a wide flat plate in the shape of a drop.
