Making a chocolate sponge cake is similar to a sponge cake with coconut flakes, we do everything the same, pay attention, only with the ingredients for it. Carefully remove the biscuit and continue to do with it as your heart desires.

Preparing the custard: In a container, beat 250 g of milk, egg and flour until smooth. Boil 375 g (1.5 cups) milk with sugar. Carefully add the milk-egg mixture into boiling milk and cook over low heat, stirring constantly, until thickened. Remove from heat and cool completely at room temperature.

Grind 2 bananas in a blender, combine the resulting mass with cream and butter at room temperature. Beat. Thus, if you make it with bananas, it is better to reduce the amount of sugar by 20-30 g.

Assembling the cake: Cut the sponge cake in half exactly. Trim the edges and grind them in a blender into crumbs. Generously coat 1 part of the sponge cake with cream, cover the top with the second part, coat the top and sides of the cake with cream.

Decorate the sides with biscuit crumbs. The top of the cake can often be decorated as desired. Leave in the refrigerator for ~1-2 hours. Before serving, transfer to a plate.

How to bake?

Preheat the oven to 180 degrees. Lightly grease 2 identical sized pans with butter and line them with baking paper.

Place the flour, baking powder, sugar and ground almonds in a large bowl, then make a well in the centre. Pour the eggs into another bowl, then mix them with kefir and vanilla extract. Pour the mixture along with the melted butter and vegetable oil into the dry mixture prepared in the previous step. Stir with a large metal spoon until mixture is evenly combined.

Divide the dough equally into two pans and smooth the surface. Bake both kefir biscuits in the oven at the same time for 20 minutes, or until the dough begins to slightly move away from the edges of the pan.

Remove the cakes from the oven and run a round-bladed knife along the sides of the pan (to make it easier to remove the cakes later). Let the biscuits cool, then shake them out onto a hard surface.

You can use any cream as a filling. This dough recipe can be modified at your discretion. For example, you can make a dessert completely vegan by substituting some ingredients. Instead of butter, use the same amount of vegetable oil. To make a kefir sponge cake in the oven without eggs, replace them with mashed banana.

The waffle recipe shown in the photo is quite simple. To prepare five dozen waffles you will need:

It is advisable to start preparing dough with condensed milk with butter or margarine. The specified amount is melted in a selected container on the stove, in a microwave oven or in a water bath.

Condensed milk, sugar, salt and soda slaked with lemon juice are added to the bowl. These ingredients must be turned into a homogeneous mass. You can use a mixer or a hand whisk.

Close the electric waffle iron by lightly pressing the handles of its upper and lower parts. For high-quality baking of waffles in an electric waffle iron, 30-40 seconds are enough, although everyone can adjust the color and degree of frying of the finished waffle to their own taste.

Round-shaped waffles baked in this way are removed from the surface of the electric waffle iron and rolled into tubes.

If desired, the tubes can be filled with filling, which is usually boiled condensed milk mixed in equal proportions with softened butter, protein or custard cream.

Helpful advice

It is better to remove the oil from the refrigerator in advance. You can add nuts, candied fruits or dried fruits to the dough before baking.

How to cook?

Preheat the oven to 150 degrees. Beat kefir and butter. Add the yolks one at a time, beating well before adding each. Add the flour and corn flour to the mixture and stir until the dough is smooth and free of lumps. Add lemon zest and vanilla extract and stir until combined.

In a plastic or metal bowl (clean and dry), add the egg whites and beat lightly. Add a third of the sugar and beat until soft peaks form. Slowly add the remaining sugar a little at a time, whisking continuously. Continue until fairly stiff peaks form and the mixture is thick and dense.

Fold the egg whites into the batter in three stages. Use a plastic or wooden spatula and stir gently so as not to displace all the air from the mixture. Transfer the dough to a tin tin lined with greaseproof baking paper. Place the pan in a deep baking tray filled with hot water, level almost to the top edges (leave a 2.5cm edge). Bake on the bottom rack of the oven for 1 hour.

After this, remove the pie from the oven and with a sharp movement, place the pan from a height of about 20 cm onto a hard surface. This will stop the cake from sinking and prevent it from shrinking too much as it cools. Remove it from the pan immediately and let cool.

After cooling, this kefir sponge cake, baked in the oven, should sit for 2-3 hours (or overnight) before serving.
