Georgian salad is the best appetizer of colorful Caucasian cuisine!

Recipe: Georgian salad - in layers

Hello everybody.
I suggest making a spicy salad for dinner today. The salad is very easy to prepare; you don’t need to have super cooking skills to prepare it; in addition, the salad uses simple ingredients that you don’t need to run around looking for in stores, just look in your home refrigerator. Georgian salad is prepared in various ways, some mix all the ingredients, others lay them out in layers. Some people add garlic on every layer, others only on a certain one. I offer you my cooking principle, in which all the ingredients will be laid out in layers. So, let's start cooking.

To begin, take the smoked sausage in your hands. Any boiled smoked sausage is suitable for preparing the salad, it all depends on your personal preferences.

First cut the sausage into slices (as a classic slice is cut), and then into thin strips.

Place the chopped strips on the bottom of the dish. I would like to immediately note that since this salad is prepared in layers, you need to immediately take exactly the dish that you will later put on the table.

Lubricate the first layer of sausage with a small amount of mayonnaise. While you have the opportunity, you can thoroughly mix the sausage with mayonnaise so that later it can be soaked.

Then we take tomatoes. For our salad, it is better to take meaty tomatoes. So that they do not give out too much juice and ultimately a large amount of water does not form at the bottom of the dish.

Tomatoes can be cut into either small strips or large cubes. This does not affect the aesthetics of the finished dish, nor the taste as such. We also place the tomatoes in the dish in a layer on top of the sausage.

Just like the sausage, grease the tomatoes with a small amount of mayonnaise.

Since my dish is transparent, my layers are clearly visible. They look like this to me:

Let's move on to the next, final layer. Grate hard cheese. I grated the cheese on a coarse grater, but it's up to you to grate it, or you can grate it on a fine grater. Next, grate the garlic. I used young garlic, so I rubbed off two heads, they are not that big, and we really like it spicy in our house.

Mix garlic and cheese in a separate bowl and immediately add mayonnaise. So that you get a good mixture so that the cheese does not fall apart into separate pieces. Place the prepared mass of cheese and garlic on top of the tomato. Level the cheese with a spoon so that you get an even layer. Sprinkle the salad with herbs on top (onion, parsley, dill to taste.

As for salt, I didn’t add salt to this salad, because the cheese is salty and the mayonnaise and garlic add saltiness to the final dish. If you want, you can, of course, add salt to the salad.

After the salad is ready, you can set it aside for about 20 minutes so that it has time to soak.

Georgian salad recipe with sausage and tomatoes

A light, gourmet treat perfect for when uninvited guests are on the doorstep. The essence of the recipe is to prepare a simple dish from ingredients that are in almost every refrigerator. It only takes 15 minutes, or even less, to prepare the snack.

You can also lay out the salad in layers, generously soaking each layer with mayonnaise. Before you start adding the ingredients, you need to chill them in the refrigerator for a while. This way the snack will spoil more slowly.

Georgian bean salad

Among the many dishes in which beans are involved, this one is worth noting. An unforgettable, bright and rich, surprisingly tasty and nutritious “Georgian” salad, in which pomegranate occupies a special place among the ingredients. Thanks to the small red grains, the snack turns out simply extraordinary. This is not a simple salad, but a real ceremonial dish that will amaze everyone around you not only with its amazing visual design, but also with its taste.

You will need:

  • 400 gr. raw beans;
  • 30 gr. oils;
  • 1 onion;
  • 50 gr. nuts;
  • 3 cloves garlic;
  • 40 gr. cilantro;
  • 2 grenades;
  • 1/4 tsp. coriander;
  • 1/2 tsp. khmeli-suneli.

Georgian bean salad:

  1. The beans are soaked in water overnight or at least for six hours. After this, the beans are boiled until they become soft. At the end of cooking, add a little salt to the water.
  2. Peel the onion, finely chop it and place it in a frying pan, add oil and fry well.
  3. Nuts are crushed in any convenient way. The main thing is that the kernels are not crushed into powder. You should get small pieces.
  4. The cilantro is washed and finely chopped.

  11. Just before serving, the salad is decorated with nuts.

Important! During the cooking process, cilantro leaves are used, which give the dish a special tenderness and unforgettable aroma.

A distinctive feature of Georgian salads is their ease of preparation and composition of ingredients. They simply need a large amount of all kinds of spices. Moreover, specific seasonings are not always used; the opportunity is always given to make your own adjustments and create a new dish. The main condition is that the dish must be spicy and contain greens. Important components of bean salads are nuts and garlic. Without these components, the snack simply cannot be so aromatic and truly piquant.

Preparing the salad

Georgian salad with sausage and tomatoes is served as a hearty appetizer at the beginning of the feast. This salad can be placed on the table as a main dish by heating it a little in a saucepan.

  • raw smoked sausage - 150 g;
  • tomatoes - 200 g;
  • hard cheese - 130 g;
  • garlic - 2 cloves;
  • dill;
  • salt, black pepper to taste;
  • mayonnaise to taste (small amount).

First, the tomatoes and herbs are thoroughly washed; it is better to do this in running water. Place the washed vegetables on a napkin and dry.

Remove the skin from the sausage and cut into thin strips. Smoked sausage is suitable, any variety from semi-smoked to raw smoked; it is better not to use boiled sausage. To make the sausage slices beautiful, pre-cool the sausage in the freezer. This method produces even thin strips of sausage that look beautiful in a salad bowl. Grate the cheese on a coarse grater. Add to vegetables.

For piquancy, add a little garlic to the salad. It will add flavor to the salad and fill it with aroma. Finely chop two cloves or squeeze them through a hand press.

Tip: to fully reveal the taste, first crush the clove with the flat side of a knife, then finely chop.

Add garlic and cheese to the contents of the salad bowl.

Let's add a little salt to all this beauty and season with black pepper. Season with salad dressing or mayonnaise and mix carefully. Decorate with chopped herbs. Let the salad sit for a bit.

The taste of the salad depends on the composition of the ingredients, the type of sausage, the quality of the products, the beauty of the cutting, and the presentation. Salad with sausage and tomatoes according to this recipe can simply be put in a salad bowl, as shown in the photo, mixed with mayonnaise, and decorated.

Step-by-step recipe with photos

I have come across several options for serving Georgian salad with sausage and tomatoes: some lay it out in layers, some serve it on a large flat dish, and it looks like sliced vegetables and sausage. But I settled on this option, which I want to share with you. This salad is ideal to serve with any alcoholic drinks; it is filling, but does not fill your stomach.

Advice! If you love greens, do not regret it, add as much of it as possible, it is very appropriate in this dish. And under no circumstances use the “plastic” tomatoes that supermarket shelves are filled with. Buy seasonal, fleshy tomatoes; if you don’t have those, then take cherry tomatoes.

So, let's prepare all the necessary products for the Georgian salad with sausage and tomatoes.

First, wash and finely chop the greens. I use parsley, celery and dill, sometimes I add cilantro, it is very appropriate there.

Cut the sausage into strips.

Grate the cheese on a coarse grater. In this recipe I use goat cheese, but you can use any you like.

Wash the cherry tomatoes and cut into 4 parts. If you have a large, fleshy tomato, remove the seeds from it and cut the pulp into small pieces, preferably like sausage - into strips.

Season with mayonnaise, add chopped garlic and salt. Stir if necessary.

Georgian salad with sausage and tomatoes is ready.

Preparation

Pay great attention to choosing tasty, meaty tomatoes. Better yet, use homemade tomatoes. They have a bright and rich taste and aroma, which cannot be said about store-bought tomatoes. Rinse the vegetables thoroughly in running water and dry with a kitchen towel. Cut into two parts. Remove the seed from each half. Cut the remaining meaty halves into thin strips.

For the salad, smoked, semi-smoked and dry-cured sausage made from pork or beef is suitable, and it must be of good quality. You can have the sausage with pieces of lard. Remove the shell and cut into strips. Add aromatic sausage to chopped tomatoes.

Take the quality hard cheese that appeals to you the most. There is no need to take expensive cheeses, just take regular classic cheese. Grate on a coarse grater.

Garlic plays an important role in this salad. Use garlic cloves with a bright aroma and rich taste. It is advisable to use a domestic product, preferably home-made. Peel and chop with a sharp knife into small cubes. In this salad, use your favorite greens of your choice: cilantro, basil, dill, parsley or celery. Rinse the greens well and dry with a napkin, chop finely. Add garlic and dill to salad bowl.

All that remains is to season with ground black pepper, salt and mayonnaise, preferably homemade. Mix all the ingredients and let it brew for a while. Place in salad bowls and serve. This salad can be placed in layers on a flat dish using a forming ring. Tomato, garlic, sausage, hard cheese. Lightly season each layer with mayonnaise, add salt and pepper if necessary.
