  • Milk – 500 ml

  • Dry yeast - 1 tsp.
  • Salt - 1/3 tsp.

If you want to get tall and airy crumpets, here are some recommendations:

  1. There is no need to stir the dough before frying; use a spoon to take out as much edge as you need for one serving.
  2. Fry them over medium heat with the lid on. As soon as they are covered with holes, turn them over to the other side and reduce the heat.
  3. It is better to cook in a cast iron or thick-bottomed frying pan.
  4. If you want to make it with fruit, add a little. And if the fruit is juicy, the juice must be squeezed out first.

In the lean version, do not add an egg to the dough, but use warm water instead of milk, increasing its quantity by 50 ml.

Ingredients

  • Milk – 500 ml
  • Egg - 1 pc.
  • Flour - 3.5 cups (250 ml each)

  • Vegetable oil - 2-3 tbsp.
  • Sugar - 2 tsp.
  • Salt - 1/3 tsp.

1. Sift the flour into a bowl. Add yeast, sugar and salt, beat in the egg.

2. Heat the milk until warm and pour it into the dry ingredients. Mix with a spoon into a thick, fluffy dough. Cover it with a towel and place in a warm place for 1 hour. It should become airy, porous and rise 2 times.

3. Heat a frying pan over medium heat and pour in a little vegetable oil. Use a spoon to scoop out a small amount of dough (without stirring it so it doesn't settle) and place it in the pan, forming pancakes.

4. When they are fried on one side, turn them over to the other, reduce the heat, cover and cook for another 1-2 minutes. This way they will have time to bake inside and won’t end up soggy.

500 ml warm milk, 500 g wheat flour, 3.5 tsp. dry yeast, 2 eggs, room temperature, 2 tbsp. sugar, 2 tbsp. vegetable oil, 1 tsp. vanilla essence, 0.5 tsp. salt, 2 apples.

What could be better for a weekend breakfast than light, flavorful, hot and very fluffy pancakes topped with maple syrup or your favorite jam! The delicious aroma of these pancakes takes me back to deep childhood, when, waking up early in the morning on Sunday, I smell this smell, the smell of yeast coming from the kitchen, and I know exactly what my mother is preparing for breakfast!

Ingredients:

1. So, let's make a dough. Add yeast and flour to very warm milk (about 40 degrees). Stir everything until smooth. It is very important to have fresh yeast. I use Fleishmann's Active Dry Yeast because Dominican yeast doesn't work at all. To check the freshness of the yeast, you need to dilute 1 tsp. yeast in a small amount of warm liquid, plus a little sugar. After a few minutes, the yeast will begin vigorous activity; if not, then the yeast is not fresh.

2. Cover with a linen towel and place the dough in a warm place for 30 minutes. We need the dough to rise well.

3. After 30 minutes we see that the dough has risen well.

4. Add eggs, sugar, butter, vanilla essence, salt.

5. Mix well until smooth. And again cover with a towel and place in a warm place for 30 minutes.

6. Cut the apples into small cubes, you can grate them, but I like it when the apple is crunchy.

7. The dough rose well, almost tripling in volume. Add apples to it and mix well again. Place again in a warm place for 20 minutes.

8. And this is the dough with apples, it also rose very well. This time we do not mix the dough.

9. Heat the frying pan, pour in vegetable oil. Place a glass of water next to it. Dip a tablespoon into water and place the dough in the pan.

10. Bake on both sides until golden brown. In a hot frying pan, pancakes rise instantly, it is important not to yawn and turn over in time so as not to get burnt pancakes.

11. That's it! The pancakes are ready. From this amount of ingredients you get such a pile of delicious pancakes.

12. The pancakes turned out to be quite fluffy, soft, tasty and very homemade. Of course, serve immediately while they are hot, although they are no less tasty when cooled.

13. I topped it with my favorite maple syrup, but you can top it with whatever you like, sour cream, jam, jam, honey, yogurt, berry sauce, and so on.

A great alternative to pies, only simpler. This way you can add any soft fruit (if it’s too juicy, squeeze it a little) or berries - bananas, cranberries, and blueberries are perfect. I also made it with sweet pumpkin, just grated it on a coarse grater and squeezed out the juice. It also turned out very tasty.

Components

  • Flour - 225 g
  • Dry yeast - 6 g
  • Egg - 1 pc.
  • Milk – 225 g
  • Sugar - 9 g
  • Powdered sugar - 50 g

1. In a deep plate, mix yeast with sugar and pour in warm milk. Stir the mixture with a spoon.

2. Sift the flour into a bowl, add salt and milk mixture. Beat in the egg and stir with a spatula. The dough should be thick and viscous, but not dry. Cover with a towel and leave for 1 hour to rise.

    While the dough is rising, you can prepare the apples. We thoroughly clean them, remove the peel, remove the core and finely chop. For convenience and saving time, you can use a large grater. After the specified time has passed, add apples to the dough, mix and let rise for another 20 minutes.

  • Grease the frying pan with a drop of oil (vegetable).
  • We begin to fry the pancakes, both surfaces should form a crust.

There must be at least small “joys”. I want to offer you a recipe for pancakes with apples. In every family they are prepared differently. But I have my old book in my hands and in it the recipe is exactly like this (recipe from the book “Gift for Young Housewives” by E. Molokhovets). To prepare, prepare: 0.5 kilograms of flour 400 ml of fresh milk 2 fresh chicken eggs 2 large sweet apples 2 tablespoons of margarine or butter 20-25 grams of yeast a little salt 1.5 tablespoons of sugar Making pancakes is very simple. Components

  • Milk – 100 ml
  • Pumpkin – 800 g
  • Pressed yeast - 25 g
  • Sugar - 3-4 tbsp.
  • Flour - 470 g
  • Water – 30-50 ml
  • Vegetable oil
  • A pinch of salt

1. Peel the pumpkin and remove seeds. Cut into small pieces and place in a saucepan. The smaller the pieces, the faster it will cook. Pour in 50 ml of water, cover with a lid and cook over low heat.

2. After 15-20 minutes, taste - if it is soft, remove from heat.

3. Use a blender to puree it and leave it for a while to cool slightly.

4. Place a piece of pressed yeast in a separate container and fill it with warm milk. Add sugar and a pinch of salt and whisk until all ingredients are dissolved.

5. Pour the cooled pumpkin puree into the resulting mixture.

6. Now add the sifted flour. The density of the dough should be similar to very thick homemade sour cream. If it is runny, add more flour.

7. Place the bowl of dough in a warm place to allow the yeast to react. When you see that it has become airy and porous, and its volume has doubled, it is ready. Using a spatula, scrape it off the sides of the container and stir gently so that it settles a little.

8. Place dough balls in a hot frying pan with vegetable oil, forming a round shape.

9. As soon as they are browned on the bottom, pry them with a fork and turn them over to the other side. Place the finished fluffy pancakes on a dish and pour over the jam. To remove excess oil, place them on a paper napkin, it will absorb excess fat.
