Let's prepare the ingredients

  1. Peel two onions, wash and cut into small thin slices.

  3. Wash two sprigs of parsley and finely chop them with a knife.

  4. Cut smoked sausage in the amount of 250-270 g into thin strips, no more than 2.5-3 cm long.

  5. Grind 60-70 g of hard cheese into a separate bowl using a grater with large teeth.

Let's prepare the base

  1. Break 6 chicken eggs into a high-sided bowl and whisk them thoroughly with a whisk until a homogeneous liquid consistency is obtained. Add 150-160 ml of milk to the egg mixture and stir the mixture thoroughly again.

  2. Add a pinch of soda to a homogeneous liquid mass, then pepper and salt depending on personal taste preferences. Then stir the omelette mixture thoroughly again.

Frying an omelette

  1. Pour 15-20 ml of sunflower oil into a frying pan with high sides and heat it properly.

  2. Pour the chopped onion into hot oil and cook until golden brown.

  3. Place chopped sausage on top of the onion and squeeze 6 cloves of garlic through a special press.

  4. Fry the ingredients for about a minute, while stirring them constantly. Add chopped tomato slices there, and pour 10-15 ml of soy sauce on top.

  5. Simmer the resulting mixture until the tomato becomes soft and releases all its juice.
  6. Pour the liquidy fry evenly with the egg-milk mixture and cover with a lid.

  7. As soon as we notice that the egg mass has “set”, sprinkle the omelette with grated cheese, pepper to taste and add chopped herbs.

  3. Grate 40-50 g of hard cheese into a separate bowl using a grater with large teeth. Pour 30 g of chopped cheese into a bowl with the egg mixture for the omelette, stir a little.

  4. Place the frying pan on medium heat and heat it up very high. Pour 20-30 ml of melted butter into a hot frying pan.

  5. When the oil is hot enough, pour the egg mixture over it.

  6. Fry the omelette for literally half a minute, then remove from the heat. Immediately place the omelette in an oven preheated to 190 degrees for 4-6 minutes.
