Features of cooking

There is only one aspect to consider. Unlike cooking other parts of chicken, some care must be taken when it comes to preparing the liver. The problem is that the offal has a “metallic” taste, which some people feel very strongly. To avoid this problem, the liver is soaked in milk before cooking. However, soaking for too long makes the product too soft and watery, so it is not recommended to overuse it.

To achieve the best flavor of the liver, you should first rinse it with cold water and dry it with a kitchen towel. It is also necessary to remove any visible pieces of fat and green membranes from the surface of the offal. After this, you can start preparing any dishes.

Classic recipe

Chicken liver casserole in the oven is a dish that is easy to prepare and difficult to spoil. In the classic version, few ingredients are used along with the offal. If desired, the recipe can be supplemented with any vegetables and spices.

What ingredients will you need?

  • 0.25 tbsp. unsalted butter;
  • 1 tbsp. rice;
  • 2 tbsp. sour cream;
  • 1 tsp. dried dill;
  • a little salt and freshly ground pepper.

Step-by-step cooking process

  1. It is necessary to cut the livers in half and lightly fry in oil until the bloody tint disappears from the cut pieces, season with salt.
  2. Separately, cook the rice until almost fully cooked (al dente);

  3. In another bowl, season the sour cream with salt, pepper and dill.
  4. Next, you need to grease a deep dish with oil and place a layer of rice in it, then put a layer of chicken liver and grease it with seasoned sour cream.
  5. The previous step should be repeated again, laying out the components of the dish in layers, and finishing with the top layer of rice.

The filled form must be covered with a lid and baked in an oven preheated to 180°C for 30 minutes.

What ingredients will you need?

  • 0.5 kg rice;
  • 1 kg chicken liver;
  • 1 small lemon;
  • 4 medium onions;
  • 2 carrots;
  • 100 g heavy cream;

  5. Next, you need to take a refractory mold and tightly put half of the rice and carrots into it in an even layer.
  6. Then you need to beat the eggs with cream, pepper and salt, and evenly pour half of the resulting dressing onto the rice layer.
  7. On top of the added ingredients you need to evenly spread the liver mixed with fried onions.
  8. The third layer should be placed with rice and carrots, and then pour the remaining egg-cream dressing over everything.
  9. The dish must be baked in an oven preheated to 200°C for 20-25 minutes.

  • Vitamin A
    is responsible for normal development, reproductive function, skin and eye health, and maintaining immunity.
  • B-carotene
    is provitamin A and has antioxidant properties. 6 mcg of beta carotene is equivalent to 1 mcg of vitamin A.

    is part of the most important enzymes of carbohydrate and energy metabolism, providing the body with energy and plastic substances, as well as the metabolism of branched amino acids. A lack of this vitamin leads to serious disorders of the nervous, digestive and cardiovascular systems.
  • Vitamin B2
    is involved in redox reactions, helps to increase the color sensitivity of the visual analyzer and dark adaptation. Insufficient intake of vitamin B2 is accompanied by impaired condition of the skin, mucous membranes, and impaired light and twilight vision.
  • Choline
    is part of lecithin, plays a role in the synthesis and metabolism of phospholipids in the liver, is a source of free methyl groups, and acts as a lipotropic factor.
  • Vitamin B5
    is involved in protein, fat, carbohydrate metabolism, cholesterol metabolism, the synthesis of a number of hormones, hemoglobin, promotes the absorption of amino acids and sugars in the intestines, and supports the function of the adrenal cortex. A lack of pantothenic acid can lead to damage to the skin and mucous membranes.
  • Vitamin B6
    is involved in maintaining the immune response, processes of inhibition and excitation in the central nervous system, in the transformation of amino acids, the metabolism of tryptophan, lipids and nucleic acids, promotes the normal formation of red blood cells, and maintaining normal levels of homocysteine in the blood. Insufficient intake of vitamin B6 is accompanied by decreased appetite, impaired skin condition, and the development of homocysteinemia and anemia.

    as a coenzyme is involved in the metabolism of nucleic acids and amino acids. Folate deficiency leads to disruption of the synthesis of nucleic acids and proteins, resulting in inhibition of cell growth and division, especially in rapidly proliferating tissues: bone marrow, intestinal epithelium, etc. Insufficient folate intake during pregnancy is one of the causes of prematurity, malnutrition, and congenital deformities and child development disorders. A strong relationship has been shown between folate and homocysteine levels and the risk of cardiovascular disease.
  • Vitamin B12
    plays an important role in the metabolism and transformation of amino acids. Folate and vitamin B12 are interconnected vitamins that are involved in hematopoiesis. A lack of vitamin B12 leads to the development of partial or secondary folate deficiency, as well as anemia, leukopenia, and thrombocytopenia.
  • Vitamin C
    is involved in redox reactions, the functioning of the immune system, and promotes the absorption of iron. Deficiency leads to loose and bleeding gums, nosebleeds due to increased permeability and fragility of blood capillaries.
  • Vitamin D
    maintains calcium and phosphorus homeostasis and carries out the processes of bone tissue mineralization. A lack of vitamin D leads to impaired metabolism of calcium and phosphorus in the bones, increased demineralization of bone tissue, which leads to an increased risk of developing osteoporosis.
  • Vitamin H
    is involved in the synthesis of fats, glycogen, and amino acid metabolism. Insufficient consumption of this vitamin can lead to disruption of the normal condition of the skin.

Insufficient consumption leads to hypochromic anemia, myoglobin deficiency atony of skeletal muscles, increased fatigue, myocardiopathy, and atrophic gastritis.
  • Cobalt
    is part of vitamin B12. Activates enzymes of fatty acid metabolism and folic acid metabolism.
  • Manganese
    is involved in the formation of bone and connective tissue, and is part of enzymes involved in the metabolism of amino acids, carbohydrates, and catecholamines; necessary for the synthesis of cholesterol and nucleotides. Insufficient consumption is accompanied by slower growth, disturbances in the reproductive system, increased fragility of bone tissue, and disturbances in carbohydrate and lipid metabolism.
  • Copper
    is part of enzymes that have redox activity and are involved in the metabolism of iron, stimulates the absorption of proteins and carbohydrates. Participates in the processes of providing oxygen to the tissues of the human body. Deficiency is manifested by disturbances in the formation of the cardiovascular system and skeleton, and the development of connective tissue dysplasia.
